Abstract

Hard candy is a type of candy that has a hard texture, clearlook, shiny, and taste good. Some efforts to enrich the content of candy areby enriching the nutrients and natural coloring. One of the plants that can be used are kumis kucing (Orthosiphon stamineus Benth) and red roses. The objective of the research was to obtain the bestconcentration of kumis kucing extract (Orthosiphon stamineus Benth) and red rose extract (Rosa damascene Mil) for hard candy production and the feasibility of the business. This research used a completely randomized design (CRD) with a single factor.The results showed that the best treatment was the 25% kumis kucing extract (Orthosiphon staminaes Benth) and 75% of red rose extract with 8.90% of reduced sugar content, 0.03% ash content, 4.65% water content, 4.18% flavor, 3,61% aroma and 4.0% ofcolor preference. The capacity of raw material of kumis kucing extract was 2.000 ml / day, red rose extract was 6.00 ml / day, sucrose was 8.000 gram / day, and 4000 gram / day of glucose syrup and they were worth to be developed with HPP IDR. 2.391,72 / pack. The BEP of IDR. 31.217.024,50. The selling price was IDR. 2.750,48 / pack of 60 gr. The net profit in a day was IDR. 43.051,20 and RCR of 1.15. Permen keras (Hard Candy) merupakan jenis permen yang memiliki tekstur keras, tampak bening, mengkilap, dan rasa yang enak. Upaya untuk memperkaya kandungan permen adalah dengan memperkaya nutrisi maupun pewarna alami. Salah satu tanaman yang dapat digunakan adalah tanaman kumis kucing (Orthosiphon stamineus Benth) dan bunga mawar merah.Tujuan penelitian untuk mendapatkan konsentrasi ekstrak daun kumis kucing (Orthosiphon stamineus Benth) dan ekstrak bunga mawar merah (Rosa damascene Mil) yang tepat dalam pembuatan permen keras (Hard Candy),dan mengkaji kelayakan usaha. Penelitian menggunakan metode percobaan rancangan acak lengkap (RAL) dengan faktor tunggal. Hasil penelitian menunjukan perlakuan terbaik yaitu ekstrak daun kumis kucing 25% dan ekstrak bunga mawar merah 75% dengan kadar gula reduksi 8.90%, kadar abu 0.03%, kadar air 4.65%, kesukaan rasa 4.18%, kesukaan aroma 3.61%, kesukaan warna 4.0%. Kapasitas bahan baku ekstrak daun kumis kucing 2.000 ml/hari, ekstrak bunga mawar merah 6.00 ml/hari, sukrosa 8.000 gram/hari, dan sirup glukosa 4.000 gram/hari layak diusahakan dengan HPP sebesar Rp. 2.391,72/kemasan. BEP sebesar Rp. 31.217.024,50 Harga jual yaitu Rp. 2.750,48/kemasan 60 gram, Keuntungan bersih dalam sehari sebesar Rp. 43.051,20 dan RCR sebesar 1,15.
