Abstract

Carp as food is processed into various products, including pepes, bekasam, fried carp, as well as new products such as fried carp made from juvenile fish. The purpose of this study was to determine the proximate, the type and amount of fatty acids juvenile carp at harvest age 3, 5, and 7 weeks. Protein and ash content increased from harvest age 3 weeks to 5 and 7 weeks while the fat content decreased. Fatty acid profile consisting of 5 types of SAFA, 1 type of MUFA, and 3 type of PUFA 3. Oleic fatty acid is a predominant fatty acid. The content of SAFA decreased with increasing age of harvest, i.e from 36.36% (3 weeks) to 30.78% (5 weeks) and 10.04% (7 weeks). Instead PUFA content increased from 17.93% (3 weeks) to 20.09% (5 weeks) and 44.25% (7 weeks).

Abstract

Sumber daya perairan yaitu lintah laut (Discodoris sp.) dapat dibuat menjadi minuman fungsional. Lintah laut telah dilaporkan memiliki sifat antioksidan dan mengandung taurin. Tujuan dari penelitian ini adalah untuk mengetahui penerimaan konsumen pada minuman serbuk fungsional lintah laut. Tiga formula terbaik yang diterima secara organoleptik yaitu Formula T1 (Discodoris sp. 20%, jahe 40%, 20% curcuma, lemon 20%.), T2 Formula (Discodoris sp. 25%, jahe 40%, 15% curcuma, lemon 20%) dan T3 Formula (Discodoris sp. 30%,. jahe 40%, 10% curcuma, lemon 20%).

Abstract

Seaweed was a source of vitamin C and E. They were an antioxidant contained in seaweed. The objective of this study was to determine of vitamins (C and E) in the seaweed porridge of E. cottonii and T. conoides were thought to have potential as raw material for making sunscreen cream. The methods were included total microbial analysis, vitamin C and E analysis on seaweed porridge. The results of a total microbial assay on E. cottonii was 8,7x103 colony/g while on T. conoides was 3,5x104 colony/g. They were the safe category of microbial test. The content of vitamin C on E. cottonii and T. conoides (1: 1) on seaweed porridge was 0,07 mg/100 gram, while vitamin E content obtained is 10 mg/100 gram.

Abstract

The Arrhenius model ASLT method is widely used to estimate the shelf life of food products that are easily damaged by the effects of chemical reactions, including fat oxidation, Maillard reactions, protein denaturation and so on. The aim of this study was to determine the best shelf life through stability testing. Testing shelf life was done by acceleration time or acceleration model using Arrhenius method. During the storage period, the product was stored in three different temperature conditions, ie, 30 ° C, 35 ° C and 45 ° C. Stability test performed on every 7 days observation of water content test (aw). Estimation of shelf life based on the critical parameter that is water activity value (aw) hence can be known save age of functional beverage powders sea slug of T2 have a longer shelf life when compared with  T1.

Abstract

Rumput laut saat ini menjadi komoditas prima yang menjadi nilai ekonomis penting bagi bangsa Indonesia. Nawa Cita Presiden Jokowi yang mengutamakan pentingnya daya saing produk menjadikan rumput laut menjadi komoditas utama untuk dijadikan produk yang mempunyai nilai saing dan dapat dikembangkan oleh pelaku usaha industry menengah ke bawah atau yang sering disebut UMKM. Salah satunya produk kosmetik. peneltian ini bertujuan menentukan desain prototype teknologi tepat guna dan formulasi produk kosmetik (tabir surya).  metode yang digunakan yaitu dengan pengujian standar alat, dan formulasi produk dengan metode trial dan eror. hasil penelitian ini menunjukkan bahwa  rumput laut yang cocok digunakan dalam pembuatan krim tabir surya adalah rumput laut merah dan coklat.Hasil aktivitas antioksidan pada rumput laut merah yaitu  120 ppm dan rumput laut coklat 150 ppm. untuk aktivitas antioksidan  bubur rumput laut merah dan coklat masing-masing yaitu 120 ppm dan 125 ppm. krim tabir surya yang dihasilkan bebas dari mikroba sesuai dengan standar SNI.
