Abstract

Durian seeds can be utilized as a producer of Water Soluble Polysaccharide (WSP) that can be applied to food products because crude extract of WSP is hydrocolloid. WSP interacts with other components, directly and indirectly affect processing applications, food quality, and acceptance.Water binding, solubility, viscosity and surface activity are important properties, determining usefulness and final product quality in a food system. The absence of extraction conditions that support so that the need for improved methods to variations in temperature and long extraction. This study aim to determine the effect of temperature and long extraction that produces the highest yield value and to determine the functional properties of the WSP.  The results of this study are the highest yield values in the 50 oC temperature extraction ang long extraction 2 hours amounted to 2,26%, solubility in water of 51,61%; lightness 34,14; water holding capacity (WHC) 2339,35%;  oil holding capacity (OHC) 425,36%; emulsion power 55,77m2/g; emulsion stability 585,50 minutes, foaming power 157,39 ml/g; foaming stability 25,43%. Long extraction increase the value of WHC and OHC but discrease the value of water solubility, foaming power and lightness. Abstract

Abstrak Rumah tinggal merupakan bangunan yang dijadikan tempat tinggal selama jangkawaktu tertentu, biasanya disesuaikan dengan suatu konsep tertentu agar mendapatkan kesan berbeda pada hasil yang ditampilkannya. salah satu konsep yang dapat diterapkan adalah konsep material ekspos. material ekspos merupakan desain pada bangunan yang dipandang sebagai bagian dari pekerjaan bangunan yang belum selesai atau tanpa proses finishing. kajian ini bertujuan untuk memahami penerapan konsep ekspos pada rumah tinggal agar memiliki nilai estetika yang baik. rumah tinggal setraduta k8/8 dipilih sebagai bahan studi kasus karena mengaplikasikan banyak variasi material pada konsep eksposnya. kajian material dibatasi pada material yang terdapat pada studi kasus saja karena material tersebut umum digunakan sebagai material ekspos. kajian estetika pun dibatasi dari segi warna dan tekstur saja karena merupakan pembeda antara bangunan ekspos dengan bangunan biasa. kajian ini diharapkan dapat menjadi bahan rujukan untuk mendesain bangunan rumah tinggal dengan konsep material ekspos agar memiliki nilai estetika yang baik. metoda penelitian yang digunakan adalah metoda analisis kualitatif yang terdiri dari proses pengamatan, pengumpulan data, penyaringan data, dan pengembangan teori tentang konsep material ekspos, jenis material ekspos, dan estetika. Kata Kunci: material ekspos, estetika tekstur dan warna, rumah tinggal. Abstract Residential building used as a residence for a certain period, usually tailored to a particular concept in order to get a different impression of the results of the display. One of the concepts that can be applied is the concept of material exposed. Exposed material is the design of the building is seen as part of an unfinished building work or without a finishing process. This study aims to understand the application of the concept of exposure in residences that have good aesthetic value. Setraduta residential k8 / 8 is selected as a case study for applying the many variations on the exposed material concept. The study material is limited to the material contained in the case studies just because the material is commonly used as a exposed material. Aesthetic study is limited in terms of color and texture only because it is the difference between building exposure to regular building. This study is expected to be a reference material for designing residential buildings with exposed material concepts that have good aesthetic value. The method used in this study is a qualitative analysis method which consists of a process of observation, data collection, data filtering, and material development of the theory of the concept of exposure, type of material exposure, and aesthetics.
