Abstract

Interspecies embryo transfer is a seldom-used method to increase the successful conservation of endangered species. The study aimed to determine the potential development of interspecies reconstructed embryos. The present study used two animal models, Campbell hamsters (Phodopus campbelli) and mice (Mus musculus). The isolated inner cell mass (ICM) of hamster embryos were injected into the mice embryos. The embryos were transferred to the pseudopregnant mice using non-surgery embryos transfer methods. The fetuses were collected at day 13.5 of gestation for morphometric measurement and cytochrome b (Cyt b) analysis which used to determine the species of obtained fetuses. The results showed that the viability, pregnancy rate, and embryonic implantation ability of the interpecies reconstructed embryos did not differ significantly (p>0.05) compared to non-reconstructed embryos. Morphometric measurement showed that the crown-rump (CR) and the weight of fetuses in the reconstructed group were significantly higher than non-reconstructed group (p<0.05). According to Cytb analysis, the species of obtained fetuses were mice, while the population of hamster cells were found only in the blighted ovum (resorption). Therefore, it can be concluded that interspecies reconstructed embryos are able to implant. However, the population of mice cells are only found to develop.

Abstract

Berdasarkan survei nasional perilaku konsumsi sayur masyarakat Indonesia masih rendah, baik dari frekuensi maupun jumlah. Rendahnya perilaku konsumsi sayur berpengaruh pada kejadian obesitas. Angka obesitas di Indonesia masih terus meningkat di setiap tahunnya. Salah satu faktor resiko yang dapat diubah untuk mencegah terjadinya obesitas adalah memperbaiki perilaku konsumsi. Perilaku tersebut dipengaruhi oleh pengetahuan tentang sayur, manfaat dan cara pengolahannya yang rendah. Oleh karena itu, tujuan dari kegiatan pengabdian masyarakat ini adalah untuk meningkatkan pengetahuan masyarakat tentang pentingnya konsumsi sayur masyarakat Indonesia. Kegiatan pengabdian masyarakat ini dikemas dalam bentuk suatu webinar yang disiarkan langsung melalui Zoom Cloud Meeting dan livestream YouTube. Kegiatan webinar ini diikuti oleh 85 peserta dari berbagai kalangan profesi serta masyarakat umum. Materi yang diberikan antara lain adalah manfaat konsumsi sayur dan cara mengolah sayur menjadi menu yang enak dengan cara mudah. Berdasarkan hasil kuesioner pre-test dan post-test, sebagian besar peserta memahami materi webinar dan memiliki peningkatan pengetahuan gizi terkait sayur.

Abstract

Konsumsi ikan di Indonesia masih terbilang rendah dibandingkan dengan negara kepulauan lainnya. Salah satu olahan ikan yang dapat dimodifikasi dan dijangkau oleh masyarakat adalah bakso. Penggunaan ikan kembung dan tepung daun kelor dapat meningkatkan nilai kandungan gizi dalam bakso. Tujuan penelitian untuk menganalisis substitusi tepung daun kelor pada bakso ikan kembung terhadap karakteristik organoleptik dan kandungan gizi. Desain penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan tiga perlakuan yang berbeda. Dengan proporsi ikan kembung dan tepung daun kelor perlakuan 711 (95:5), perlakuan 824 (90:10), dan perlakuan 930 (85:15). Analsis uji organoleptik menggunakan uji Kruskal Wallis dan uji lanjutan Mann-Whitney. Hasil analisis menunjukkan bahwa terdapat perbedaan yang nyata pada uji mutu hedonik dan uji hedonik (p<0.05). Perlakuan terbaik yaitu perlakuan 711 dengan proporsi ikan kembung 95 g dan tepung daun kelor 5 g. Substitusi tepung daun kelor secara nyata mempengaruhi karakteristik organoleptik bakso ikan kembung di setiap kategori (p<0.05). Kandungan gizi per 100 g bakso terbaik memiliki kadar air 62,77%, kadar abu 1,56%, kadar protein 11,71%, kadar lemak 0,97%, kadar zat besi 0,0155% (15,5 mg) dan kadar kalsium 0,4809% (480,9 mg). Dapat disimpulkan, proporsi bakso ikan kembung 95 g dan tepung daun kelor 5 g lebih baik dibandingkan dengan proporsi lainnya.

Abstract

Consumption problems in adolescents are usually low-nutrient foods. Fulfillment of nutrients needs to be considered in adolescence, because at the age of adolescence requires balanced nutrition to support growth and development. And to achieve good nutritional status. In addition to changing diet and physical activity during the pandemic, the purpose of this study is to further analyze consumption patterns and physical activity and their relationship to the nutritional status of adolescents at SMK Negeri 1 Cikampek in this pandemic condition. The method used in this study is a quantitative study with a cross sectional approach and the sample was obtained through the use of purposive sampling technique. How to measure the frequency of consumption patterns using FFQ and physical activity using IPAQ-SF. The results obtained are the relationship betweem the frequency of consumption patterns and nutritional status (p>0,05), the relationship between physical activity and nutritional status (p=0.211). The conclusion is that there is no relationship between te frequency of consumption patterns and physical activity with nutritional status. ABSTRAKPermasalahan konsumsi pada remaja biasanya yaitu makanan rendah zat gizi. Pemenuhan zat gizi perlu diperhatikan pada masa remaja, karena pada usia remaja memerlukan zat gizi yang seimbang untuk menunjang pertumbuhan dan perkembangannya. Serta untuk mencapai status gizi yang baik. Tujuan penelitian ini menganalisis lebih lanjut mengenai pola konsumsi dan aktivitas fisik dan hubungannya dengan status gizi remaja di SMK Negeri 1 Cikampek dalam kondisi pandemi ini. Metode yang digunakan dalam penelitian ini merupakan penelitian kuantitatif dengan pendekatan cross sectional dan sampel didapat melalui penggunaan teknik purposive sampling. Cara pengukuran frekuensi pola konsums menggunakan FFQ dan aktivitas fisik menggunakan IPAQ-SF. Hasil yang didapatkan hubungan frekuensi pola konsumsi dengan status gizi (p>0,05),hubungan aktivitas fisik dengan status gizi (p=2,11). Kesimpulan yaitu tidak terdapat hubungan antara frekuensi pola konsumsi dan aktivitas fisik dengan status gizi.

Abstract

The prevalence of nutritional status in children aged 5-12 years in Jepara district, Central Java in 2018 with the underweight category was 6.92%, while children who were overweight or obese were 8.72%. Limited face-to-face learning due to the Covid-19 pandemic is believed to interfere with the quality of sleep, physical activity, and eating patterns so that it can affect the nutritional status of children. Therefore, this study aims to analyze the relationship between sleep quality, physical activity and diet with nutritional status after limited face-to-face learning was applied to elementary school students. This research was conducted using quantitative methods with a cross sectional study design. The study was conducted at SD N 01 Kaligarang and SD N 02 Kaligarang Jepara with a sample of 70 students. The data taken in this study were eating patterns with a 1x24 hour recall, physical activity using the Physical Activity Questionnaire for Children (PAQ-C), and sleep quality using the Pittsburgh Sleep Quality Index (PSQI) questionnaire. The results of the study showed that students' eating patterns were more likely to have less results (83%), but had normal nutritional status (65.7%). Children's sleep quality is generally poor (77.1%) and has low physical activity (94.3%). The relationship between diet, sleep quality, and physical activity with nutritional status has a p-value <0.005. ABSTRAKPrevalensi status gizi pada anak yang berumur 5-12 tahun di kabupaten Jepara Jawa Tengah pada tahun 2018 dengan kategori kurus sebanyak 6,92% sedangkan anak dengan kelebihan berat badan atau obesitas sebanyak 8,72%. Pembelajaran tatap muka terbatas akibat pandemi Covid-19 diyakini dapat mengganggu kualitas tidur, aktivitas fisik, dan pola makan sehingga dapat mempengaruhi status gizi anak. Penelitian ini bertujuan untuk menganalisis hubungan kualitas tidur, aktivitas fisik dan pola makan dengan status gizi setelah diterapkan pembelajaran tatap muka terbatas pada siswa sekolah dasar. Penelitian ini dilakukan dengan metode kuantitatif dengan desain cross sectional study. Penelitian dilakukan di SD N 01 Kaligarang dan SD N 02 Kaligarang Jepara dengan jumlah sampel 70 siswa. Data yang diambil dalam penelitian ini adalah pola makan dengan recall 1x24 jam, aktivitas fisik dengan kuesioner Physical Activity Questionnaire for Children (PAQ-C), dan kualitas tidur dengan kuesioner Pittsburgh Sleep Quality Index (PSQI). Adapun hasil penelitian menunjukkan bahwa pola makan siswa lebih cenderung dengan hasil kurang sebanyak (83%), tetapi memiliki status gizi yang normal sebanyak (65.7%). Kualitas tidur anak umumnya buruk (77,1%) dan memiliki aktivitas fisik rendah (94,3%). Hubungan pola makan, kualitas tidur, dan aktivitas fisik dengan status gizi memiliki p-value <0.005.

Abstract

Karawang Regency has quite high culinary business potential because apart from being an industrial area of ​​Karawang it is also a tourist area. Most Karawang residents have culinary businesses, especially in the form of street vendors, warteg, catfish penyet stalls, to restaurants. However, the products being sold are fresh food products that will quickly deteriorate. This service aims to assist culinary entrepreneurs in producing food products that have a longer shelf life during production and marketing. In addition, it is hoped that it can help culinary entrepreneurs maintain the nutritional value of the products to be sold and can provide added value in sales by utilizing vacuum packaging. Education is carried out for the people of Ciampel, Karawang Regency through demonstrations or demonstrating how to pack food ingredients using the vacuum method. The activities carried out were tested first at the Padjadjaran University Laboratory in Bandung to determine the nutrient content on the first day of packaging, the seventh day and the 14th day of packaging using samples of raw snakehead fish which were packaged using the vacuum method through 2 treatments, namely salted and without being sprinkled with salt. Laboratory results showed that samples with vacuum packaging covered with salt were still suitable for consumption on seven day.

Abstract

Based on a brief survey conducted by the author to 40 lecturers at FIKES UNSIKA (Faculty of Health Sciences, Universitas Singaperbangsa Karawang) on September 5, 2022, it was found that the number of lecturers who had never written scientific publications indexed by Scopus and WoS was 17 lecturers (43.6%). And in an effort to reduce these problems, it is necessary to socialize and educate about research publications in international journals in the form of workshop activities. Evaluation of participants in scientific writing workshop activities for internationally reputable journals was carried out using pre-test and post-test methods. Based on the results of the pre-test and post-test, it is known that the participants' knowledge has increased overall. And overall the evaluation of the workshop participants' assessment related to the evaluation of organizing activities is good and very good. The participants' suggestions for organizing workshop activities in the future so that they can be scheduled regularly, continuously, and continuously and it is hoped that in the future they will hold a journal article clinic with one on one coaching until submitting the manuscript. Abstract

During the COVID-19 pandemic, nutritional problems are observed to be increasing, such as obesity, minimum nutritious food intake, and micronutrient deficiency. The dreadful effects of COVID-19 on the health sectors, combined with the advanced technology development, had prompted the emergence of Nutribid application. Nutribid is an online health service application focusing on nutritional health. This study aimed to investigate the users' satisfaction with the service quality of Nutribid application during the COVID-19 pandemic. This quantitative research approach used the descriptive method. The univariate test was used to analyze the data through mean and frequency distribution. The users' satisfaction was examined from 5 aspects, namely responsiveness, empathy, reliability, tangibles, and assurances. We obtained scores of 86.32, 88.8, 88.84, 87.84, and 88.52 percent for responsiveness, empathy, reliability, tangibles, and assurances, respectively. These scores indicate that the users present great satisfaction with the services from Nutribid. This result is also supported by the average results of the Likert scale of more than 81 percent. Our findings can be used as a reference for user satisfaction with the services of the Nutribid application.

Abstract

The use of squid ink (Loligo sp.) in food can be an innovative opportunity for the culinary community in the manufacture of processed food products and their antioxidant content. This study aims to identify and analyze the organoleptic properties and antioxidant content of squid ink pizza dough (Loligo sp.). Organoleptic testing was carried out on pizza dough with 10, 20, and 30% addition of squid ink involving 30 semi-trained students as the panelists. Further, the samples with the best organoleptic test result were used as squid ink pizza dough samples tested for antioxidant activity analysis using the DPPH method. The antioxidant test involved three treatments, namely pizza dough with squid ink (Loligo sp.) without the baking process, pizza dough without squid ink (Loligo sp.) with the baking process, and pizza dough with squid ink (Loligo sp.) and baking process. The results showed no significant effect on organoleptic properties in hedonic testing, but there was a significant effect from the addition of 10, 20, and 30 percent squid ink (Loligo sp.) on color and taste in hedonic quality testing. Meanwhile, the antioxidant activity on pizza dough with the addition of squid ink (Loligo sp.) has an inactive antioxidant activity value (IC50 more than 200 ppm). The results of this study can be used as a reference for a food product that incorporates squid ink (Loligo sp.).

Abstract

Pandemi COVID-19 menyebabkan perubahan di masyarakat, seperti pembatasan aktivitas, selalu menjaga jarak antar sesama, dan menghindari keramaian. Proses pembelajaran dilakukan secara daring sehingga aktivitas anak terbatas. Hal tersebut meningkatkan peluang untuk memiliki sedentary lifestyle. Penelitian ini bertujuan untuk menganalisis hubungan sedentary lifestyle dengan status gizi remaja pada masa pandemi. Desain penelitian adalah cross-sectional. Penelitian dilaksanakan di SMP Negeri 1 Cibinong. Sampel penelitian adalah 195 siswa kelas 8 dengan pengambilan sampel secara simple random sampling . Kriteria inklusi sampel yaitu remaja awal siswa berusia 13-15 tahun dan bersedia mengikuti penelitian. Timbangan berat badan dan microtoise untuk menilai status gizi remaja. Kuesioner Adolescent Sedentary Activity Questionnaire (ASAQ) digunakan untuk menilai tingkat sedentary lifestyle. Sampel dalam penelitian sebagian besar berjenis kelamin perempuan (63,6%), berusia 14 tahun (60%), dan memiliki ayah dengan pendidikan terakahir SMA (49,2%). Asupan energi subjek tergolong defisit berat (80%), dan memiliki status gizi normal (65,1%). Meskipun demikian, sebanyak 15,4% memiliki status gizi gemuk dan 7,2% obesitas. Akan tetapi, penelitian ini belum dapat menunjukkan adanya hubungan sedentary lifestyle dengan status gizi remaja pada masa pandemi (P-value = 0,899). Diperoleh bahwa tidak ada hubungan yang signifikan antara sedentary lifestyle dengan status gizi remaja pada masa pandemi di SMP Negeri 1 Cibinong.
