Abstract

Snack is popular for children and adult. It could be made by extrusion process. Snack is low in protein content because it is made up of cereal such as rice and corn. On the basis of nutritional and functional properties, egg was used in food industries. The objectives of the research were to analyze the nutrient content and in vitro digestibility of extruded snack from corn grits which was supplemented by egg white powder as a protein source. Randomized complete block design was used in this experiment with production periods as block. Water content was not significantly different between treatments. Supplementation with 10% egg white powder significantly increased the fat content of extrusion snack. Protein content and digestible protein increased significantly as increasing of egg white powder added. Protein digestibility of products with 10%, 15%, and 20% of egg white addition was significantly lower than those added with 0% and 5% egg white. Protein, fat, and carbohydrate linkage had formed porous product. This linkage affects product nutritive content and digestibility. Key words: egg, corn, extrusion, snack, digestibility

Abstract

The objective of the study was to determine the effect of nitrogen fertilization and water stress on the stomatal aperture, chlorophyll and proline accumulation of Napier grass (Pennisetum purpureum Schum.) The effect of water stress and nitrogen fertilizer levels were evaluated within an arrangement of Completely Randomized Design with factorial pattern (2x3). The variables observed were stomatal aperture, total chlorophyll and proline content. The results showed interaction between water stress and the level of fertilization. Interaction between water stress with nitrogen fertilization showed that the stomatal openings were more narrow (P<0.05) in water stressed plants compared to plants with excess water and that decreased stomatal aperture was not significant (P>0.05) with increasing levels of nitrogen fertilization either with sufficient water or with water stress. The exception is treatment of enough water and fertilizer 250 kg N/ha (P<0.05) where stomatal aperture decreased compared with no fertilizer. The total chlorophyll content of both the sufficiently watered and the water stressed Napier grass on nitrogen fertilizer rose with increasing doses of nitrogen fertilizer. The conditioning of water stress with  fertilizer dose of 0 kg N/ha and 150 kg N/ha did not increase the total chlorophyll, however a dose of  250 kg N/ha resulted in an increase of total chlorophyll (P<0.05). Interaction between water stress and nitrogen fertilizer levels showed that the content of proline rose (P<0.05) with increasing levels of nitrogen fertilization, as well as with water stress treatment (P<0.05). It is concluded that water stress on Napier grass plants lowers stomatal aperture width, but increases proline accumulation and nitrogen fertilizer increases total chlorophyll and proline accumulation. There was an interaction between nitrogen fertilizer with water stress.

Abstract

Salah satu upaya pemerintah untuk mengentaskan kemiskinan adalah melalui pemberdayaan masyarakat untuk mengelola sumber daya di pedesaan. Namun demikian, tingkat keterampilan dan pengetahuan masyarakat sangat berpengaruh pada pelaksanaan dan keberhasilan pemberdayaan ini. Upaya pemberdayaan masyarakat seyogyanya melibatkan usaha-usaha untuk meningkatkan pengetahuan dan keterampilan masyarakat sehingga dapat memotivasi partisipasi masyarakat dalam mengelola dua leading sector yang merupakan unggulan di pedesaan, pertanian, dan peternakan. Beberapa program dalam pelaksanaan KKN PPM UH Pemberdayaan Petani, dan Peternak ini adalah perbaikan teknologi pengelolaan lahan sawah tadah hujan, pengembangan sistem budidaya vertikultur, intensifikasi ternak itik dan pengembangan olahan produk lokal berbahan dasar ternak unggas. KKN PPMUH dilaksanakan di Desa Bila Kecamatan Dua Pitue Kabupaten Sidenreng Rappang dan diikuti oleh 14 orang mahasiswa dari Fakultas Pertanian dan Fakultas Peternakan. Pelaksanaan diawali dengan sosialisasi program kerja kepada masyarakat dan kelompok tani dan peternak di lokasi mitra yang dilanjutkan dengan seminar program kerja. Beberapa program yang telah dilaksanakan yakni penyuluhan dan pelatihan serta pembuatan demplot pertanian organik padi pada lahan sawah tadah hujan, vertikultur sayur-sayuran dan budidaya ternak itik. Program KKN PPM UH disambut baik oleh warga di lokasi yang terlibat langsung dalam pelaksanaan pelatihan dan demplot. Dengan demikian dapat disimpulkan bahwa dampak dari kegiatan ini adalah terjadinya peningkatan pengetahuan dan keterampilan masyarakat kelompok tani dan peternak terkait beberapa hal yakni: pengelolaan budidaya padi secara organik, pembuatan POC dan Pestisida nabati serta intensifikasi budidaya ternak itik dan kewirausahaan telur asin.  Kata kunci: Pemberdayaan masyarakat, sumberdaya lokal, peningkatan produksi pertanian, peternakan dan perikanan.
