Abstract

Nutrient recommendation in school meals should meet about (80-120)% out of a third of the requirement daily adolescent intake. School canteen should provide healthy and nutritious balanced meals. This study was conducted in one school canteen in Jakarta to (1) determine nutritional quality of school meals, (2) assess adequency level of nutrient, (3) comparing adequency level of nutrient in group of Indonesian menus and international. Conversion of food weight or its composition into nutritional value was used for determining nutritional quality, using references from Tabel Komposisi Pangan Indonesia 2009, Informasi Kandungan Gizi Pangan Jajanan Anak Sekolah BPOM 2013, and ASEAN Food Compo-sition Database 2014. Adequency level was assesed by comparing nutrient value with students needs. The school meals had average for carbohydrate content (57.0±20.4 g), protein (16.6±5.7 g), fat (16.9±9.1 g), energy (454±147 kcal), vitamin A (134±111 mcg) and iron (3.0±1.7 g). More than 56% of school meals were did not meet the standard. Indonesian and international menus had average for carbohydrate content (53.2±17.9 g; 58.7±21.2 g), protein (17.9±6.0 g; 16.1±5.7 g), fat (15.3±7.7 g; 17.7±9.8 g), energy (427±142 kcal; 466±146 kcal), vitamin A (139±130 mcg; 131±103 mcg) and iron (4.5±2.1 mg; 2.3±1.3 mg).

Abstract

. The purpose of Feeding Program for Pregnant Mother are for adding nutritious value in food for pregnant mothers group in order to increase nutritional status and quality of newborn child. The program were conducted by fortifying nutritious substances for examples, vitamin A, folic acid, vitamin C, Ferrum (Fe), Zinc (Zn), and iodium in instant beehoon product. Proximate analysis and analysis of fortified substances are conducted in this experiment. Organoleptic test was done for determining whether there are any differences between unfortified beehoon and fertified beehoon from organoleptic side of view. Result of analysis shown that fortification could improve nutritious value in instant beehoon. Processing step of instant beehoon has decreased several fortificants, as vitamin A, folic acid, and vitamin C were decreased. However, processing also improved FE, Zn and Iodium content in instant beehoon. Result shown in differentiate test between NF beehoon and F was significantly different in 95% of confidence interval. Shelf-life of NF and F beehoon stored in room temperature (25oC) acording to organoleptic test result were 9.94 and 8.07 months. Meanwhile, shelf-life of NF and F beehoon in room temperature (25oC) according to chromameter were 10.74 and 11.68 months.

Abstract

During pregnancy, nutritional deficiencies often occur due to an increase in nutrition needs. As the deficiencies happens, the mother is at risk of giving birth to a baby with Low Birth Weight (LBW), neural tube defects, and disability. One way of prevention is to implement the Feeding program for pregnant women. In the Feeding program of South East Asian Food and Agricultual Science and Technology (SEAFAST) Center, arrowroot (garut) cookies are fortified with iron (Fe), zinc (Zn), iodine (I), vitamin A, vitamin C, and folic acid. Research carried out included evaluating functional characteristics (nutrient content), organoleptics, and shelf life of Non Fortified Cookies (CNF) and Fortified Cookies (CF). Some levels of nutrients do not fully meet the quality requirements of the Indonesian National Standard (SNI) for biscuits. Consumption ± 56 g of cookies per day is not enough for additional nutritional needs for pregnant women. Some deficiencies can be fulfilled and even exceeded by consuming milk, but lack of folic acid is still very large. The amount and type of fortification did not cause CF sensory deviations. Fortification of vitamins and minerals does not provide much difference between the shelf life of CNF and CF as determined by the critical moisture content approach.

Abstract

In Indonesia, the growth of food processing industry and ready to eat food/dishes follow the growth of fast-food outlets, fast-food chains, and restaurants. The changes of food consumption pattern in Indonesian consumers is shown by the increase in consumption of processed and fast foods rich in energy, high in sugar, salt, and fat, but low in fiber. Combined with the lack of physical activities or exercise, there may be an increase in non-communicable diseases (NCD) risks. The role of all stakeholders is needed to protect consumers from NCD risks, particularly hypertension, stroke and coronary heart disease, which are partly due to excessive intake of sugar, salt, and fat. In response to this problem, the Ministry of Health has issued a regulation on the Inclusion of Information on Sugar, Salt, and Fats (SSF) Contents (# 30/2013), as well as Health Messages for Processed and Ready to Eat Food. The government has also launched the 2014 Nutrition Balance Guideline. To support its implementation, the business sector can play a significant role in the form of food product reformulation/development, consumer education about the importance of food labeling reading and understanding, as well as providing a clear nutritional information in a more appealing way as it may help consumer decision making when buying processed food products. Educational institutions in all levels can play an active role through its education program, such as course content enrichment. The synergic role between the government, businesses, and educational institutions in educating consumer effectively is essential to minimize NCD risks.

Abstract

Indonesia suffered from several nutrition problems, one of them is vitamin A deficiency. On the other hand, people are concerned about the excess level of syntetic food colorant consumption. Red palm oil (RPO) is one of the solutions of the problem, because its high carotene content can act as pro- vitamin A and yellowish food colorant. Microencapsulation of RPO is one way to protect carotene content during process. The aim of this research is to obtain informations about application of micro-encapsulated RPO (MRPO) in instant noodle. Wall materials used for RPO microencapsulation were maltodextrin and sodium caseinate. MRPO had 1.15% moisture content, 123.42 μg carotene/g powder, and 91.96% water solubility. MRPO then applied in instant noodle as much as 6.5% and 13% of wheat our to ful ll 20% (120 RE/person/day) of Nutrients Labelling Value (NLV) for adults (Kemenkes 2013). Instant noodle with 6.5% MRPO contained 127.89 RE. It also had 10.53% solid loss during cooking and 146.99% elongation. Addition of 6.5% MRPO in instant noodle had similar aroma and taste with commercial one, though it had softer texture and more yellowish color. MRPO process succeeded to keep 61.89 – 79.53% of carotene content during the microencapsulation and noodle making process.

Abstract

This moment, it has not been known the role of nutrition and health claims as purchasing decision determination. Objective of the research is to study the role of nutrition and health claims on the labels of growing up milk as purchasing decision and to analyze corellation of respondent's characteristics which have influence. Study was conducted by survey, data were analyzed descriptively and statistically. Label of growing up milk for children 1-3 years old read by 70% respondent and 30% occasionally, and 23% of respondents do not read nutrition and health claims. Nutritional and health claims have a role as a determinant of purchasing decisions for consumers of 24%. As for the 76% purchase decision is influenced by other factors such as suitable with a child, nutrient content, good taste or price. The role of nutritional and health claims as a determinant of purchase decisions are influenced by factors of education, family expenses per month and expenditure for milk per month. As for the other factors that include age, occupation, number of children, place of purchase, and frequency of purchases did not affect the role of nutrition and health claims as a determinant of purchase.

Abstract

Type 2 diabetes is a metabolic disease associated with lifestyle, including consumption behaviors. This study was conducted to examine the relationship between behaviors of consumption and lifestyle on prevalence of type 2 diabetes in Indonesia. The risk factor determined by univariate analysis. Relation between diabetes prevalence risk factors analyzed using bivariate methods. To determine main risk factors of diabetes used multivariate analysis. Scoring models developing to predict type 2 diabetes risk based on sensitivity and specificity test from major risk factors, to obtain cut off point score for respondents who predicted have diabetes risk. Analysis showed that factor of sweet beverages consumption has OR value (odds ratio) 1.25. This value means that respondents who frequently consume sweetened foods and drinks will be at diabetes risk 1.25 times, compared from not consume. Risk value of consumption food made from flour is 1.22. Diabetes risk for respondents who have moderate physical activity is 1.15 times and strenuous physical activity is 1.26 times. Diabetes risk for not consume fruits and vegetables is 1.12 times and 1.2 times from respondents who consumed. Calculations models predicted risk of type 2 diabetes determined based on the value of the score (cut-off point) ≥20.

Abstract

Limiting consumption of drinks containing high sugar can prevent diabetes especially type 2. Diabetes is one of non-communicable diseases that the number of sufferers is increasing every year. This opportunity is utilized by food industry to produce less sugar beverages. This study was aimed to analyze influence of demographic and respondent’s sugar consumption level on consumer’s perceptions, its influence on purchasing decisions and to analyze less sugar beverage product market opportunities compared with similar beverages without that claim among consumers and next generation. A survey was conducted on 150 respondents living in Jabodetabek, 20-54 years old, not a diabetic, and reading the food labels. There were 77.3% of total respondents had correct perception of less sugar correlated with sex, education, respondent's reducing sugar consumption effort and purchasing decision. People who were trying to reduce sugar had 3 times more likely to have correct perception than people who did not. People had more correct perception of less sugar (according to regulation), they increasingly choce less sugar products. The result of this survey showed that encouraging children to consume less sugar drinks was more prioritized manner to limit children’s sugar level consumption rather than replaced with sweetener.

Abstract

Consumption of processed meat is associated to cancer risk increasing. This study used secondary data from RISKESDAS 2013 with a case-control study design, is aimed to analyze the cancer prevelance in Indonesia based on food consumption patterns and lifestyles. The case population is 90 people suffering from cancer and 90 people with no cancer randomly selected as control. Respondent profiles were analyzed by univariate analysis. The relationship of cancer risk factors were analyzed by bivariate analysis and determination of risk factors using multivariate analysis. Sensitivity and specificity analyses showed the cancer vulnerable age is ≥46 years. Processed meat consumption is associated significantly (p=0.000; OR=1.25) in the cancer prevelance. Respondents frequently eat processed meat risk is predicted 1.25 times compared to those not taking. Vegetable consumption (p=0.046; OR=0.509) and fruit consumption (p=0.022; OR=0.365) related significantly to cancer. Vegetables consumption reduce the risk by 0509 times, and fruit consumption reduce the risk by 0365 times. Lifestyle risk factors (physical activity and smoking) significant (p=0.000) to cancer. Multivariate analysis results showed the age, gen- der and processed meat consumption is associated significantly (p=0.000) to cancer.

Abstract

One of the methods that can be used to determine Under Five Years Old Children’s (UFYOC) diet is 24 hours dietary recall, which furtherly processed using Nutrisurvei program to obtain the values of energy, protein, fat, carbohydrate, iron, calcium, phosphorous, also vitamin A, C, and D. Nutrition value will be compared with 2013 recommended dietary allowance and be used to determine nutritional status for each age group. Nutritional status was measured by referring to weight for age (BB/U) and upper arm circumference (LILA/U). 70 UFYOC respondents from two Posyandus in North Jakarta were involved. Selected Posyandu represented two social demography conditions. Data analysis were obtained using Chi-square correlation. The confidence level used was 95%. Regression analysis used was logistic regression. Weight for Age (BB/U) was a dependent variable, while independent variable consisted of maternal nutritional knowledge, food expenses, nutrition (energy, protein, fat, carbohydrate, iron, calcium, phosphorous, also vitamin A, C, and D), maternal education level and occupation. Finally, there was a significant relationship among nutritional status of UFYOC with maternal nutritional knowledge, food expenses, iron intake, and vitamin D intake and maternal education level. Therefore, the equation model obtained was R2 19.5%.
