Abstract

Sirup zink ekstrak ikan bilih dibuat dari formulasi sirup dengan bahan dasar ikan bilih (mystacoleucus padangensis) yang mempunyai kandungan zink 27,8 mg/100 gram, lebih tinggi dibandingkan bahan pangan lain. Pemanfaatan ekstrak ikan bilih sebagai alternatif suplementasi zink organik untuk mengatasi defisiensi zink perlu diteliti dalam upaya percepatan penanggulangan masalah anak pendek (stunted) pada anak umur 12-36 bulan. Tujuan penelitian ini adalah mengembangkan formula sirup zink dari ekstrak ikan bilih (mystacoleuseus padangensis) sebagai alternatif suplementasi zink organik pada anak pendek (stunted). Penelitian eksperimental laboratorium ini dimulai dari ekstraksi ikan bilih dengan metode yang standar dilakukan di laboratorium Biologi dan Sediaan Cair Fakultas Farmasi Universitas Gadjah Mada Yogyakarta. Ekstrak ikan bilih mengandung kadar zink yang sangat tinggi (161,97 mg/100 gram), di formulasi menjadi formula sirup suspensi, dengan sediaan utama estrak Zink Citrat, Vitamin A dan protein, ditambah sirup simplek (64%), CMC-Na, Asam Citrat, perasa buah dan pewarna. Formula sirup suplementasi zink ini memenuhi syarat International Zinc Nutrition Consultative Group (IZiNCG), dengan 3 formulasi terbaik berdasarkan uji organoleptik, yaitu formula F 4.1, F 2.2 dan F 2.3. Formula sirup zink dari ektrak ikan bilih dapat dijadikan sebagai alternatif suplementasi zink organik untuk menanggulangi defisiensi zink pada anak pendek (stunted).ABSTRACT THE DEVELOPMENT OF ZINC SYRUP FORMULA FROM BILIH FISH EXTRACT (Mystacoleucus-padangensis) AS AN ALTERNATIVE FOR ZINC ORGANIC SUPPLEMENTATION IN STUNTED CHILDREN AGED 12-36 MONTH The extract of bilih fish (mystaleuseuspadangensis) zinc syrup is made from basic ingredient of bilih fish which contains 27,8 mg zinc/100 gram syrup. It is much higher than other food zinc source. The use of the extract of bilih fish as an alternative of organic zinc supplementation can be used for those who have zinc deficiency. Therefore, it is essential to be studied as an alternative intervention program for stunting in children aged 12-36 months. This objective of this study is to develop zinc formula syrup from the extract of bilih fish (mystaleuseuspadangensis) as an organic zinc supplementation for stunted children. This laboratory experimental research is begun by extracting the fish bilih using a standard method. The extract of bilih fish is formulated in the form of suspension syrup, at the laboratory of Biology and Liquid Preparation in the Faculty of Pharmacy, Gajah Mada University in Yogyakarta. The extract of bilih fish is very high in zinc content (161, 97 mg/100 gram), with main preparation of Zinc Citrate, Vitamin A and protein, added with simplex syrup (64%), CMC-Na, Citric Acid, fruit flavor and food color subtances. This supplement syrup formula is based on International Zinc Nutrition Consultative Group (IZiNCG), with 3 best formulas based on organoleptic test, formula F 4.1, F 2.2 and F 2.3. The zinc syrup formula from extract of bilih fish could be an alternative of organic zinc supplementation to address zinc deficiency in stunted children.Keywords: extract bilih, zinc supplementation, stunting

Abstract

Latar Belakang: Hiperglikemia dapat meningkatkan senyawa oksigen reaktif, yang memicu terjadinya komplikasi penyakit mikrovaskular dan makrovaskular. Salah satu strategi yang efektif untuk manajemen pengobatan komplementer dan perencanaan diet DMT2 adalah penggunaan bahan pangan fungsional dan senyawa bioaktifnya  Bengkuang merupakan bahan pangan fungsional lokal dengan komponen bioaktif Inulin,  sebagai prebiotik dengan kemampuan menurunkan kadar glukosa darah dan memperbaiki mikrobiota usus. Antioksidan merupakan agen protektif yang ikut berperan menonaktifkan reactive oxygen species (ROS), diantaranya adalah Ciplukan karena adanya fisalin. Fisalin sudah diketahui memiliki mekanisme kerja seperti hormon estrogen yang memiliki kemampuan dalam meningkatkan reseptor insulin sehingga tersedia jumlah insulin yang cukup untuk mengendalikan kadar glukosa darah. Gabungan  prebiotik (inulin dari Bengkuang) dan probiotik (kultur starter L. Casei) disebut sinbiotik, akan diperkaya Fisalin sebagai antioksidan. Tujuan: Mendapatkan minuman fungsional sinbiotik dalam bentuk yogurt instan dengan nama Yogurt Inulin Fisalin (“YIS”). Metode Penelitian: Penelitian eksperimen laboratorium untuk mengembangkan produk minuman fungsional “YIS” dari sari Bengkuang dan Ciplukan berupa yogurt instan, melakukan uji sensoris (organoleptik),  uji mikrobiologi dan keamanan pangan, dan  analisis  komposisi kimia. Hasil: Berdasarkan hasil penelitian kadar asam laktat hasil penelitian sesuai dengan SNI. Rata-rata penerimaan dari panelis terhadap rasa, warna, bau dan tekstur adalah baik.Kata Kunci: Yoghurt, Inulin, Fisalin, Diabetes Mellitus

Abstract

Achievement of athlete in PPLP has not given good results, and even tends to decline. Physical fitness is an important factor in achievement. Among the factors that affect fitness are somatotype and nutrient intake. Suitable somatotype and balanced nutritional intake will support good performance. The purpose of this study was to study the relationship of somatotype and physical and macro nutrition intake in athletes. This study uses a cross-sectional design with a total sample of 37 people taken in total sampling. Somatotype were taken using the Heart Carter method, intake data with a 3x24 hour food recall method, and fitness data used the bleep test. Data were processed using SPSS to see the relationship of somatotype with fitness were analyzed by Chi-square statistical tests and correlation pearson test to see the relationship of macro nutrient intake with fitness. The results showed that most of them had ectomorph somatotype balance, the average nutrient intake was in the good category except that air was lacking (51,4%.%). Most athletes are in the fitter category with an average fitness of 52,12 mL/ kg /minute. Bivariate results showed that there was no relationship between somatotype and fitness but there was a relationship between macro-nutrient intake and fitness.

Abstract

Physical fitness is factor to achieve achievement. Based on data of PPLP West Sumatra in 2018 is 30.6% of athletes included in the category less. Some factors that affect fitness are somatotype and nutritional intake. Somatotypes and balanced nutritional intake will support better sports performance This research aims to determine the correlation between somatotype and macronutrient intake with physical fitness.This research was conducted using a cross sectional design. The sampling method using total sampling method with a sample of 37 people. The intake data collection method uses 3x24 hour food recall, the somatotype is determined by the Heart Carter method and the fitness uses a bleep test. The data were analyzed using Chi-square statisticaltests to see the correlation of somatotype with fitness and correlation pearson tests to see the correlation of macro nutrition intake with fitness. The results showed that the average fitness of athletes was 52.12 mL / kg / min. The results showed an average fitness value of 52.12 mL / kg / min and most were fit.. The average value of energy intake is 3471.71 kcal, protein intake of 88.50gr, fat intake is 97.02 gr, carbohydrate intake of 550.1 gr) water intake was 3253.54 ml and most of the intake is good except water. Bivariate results showed that there was no significant relationship between somatotype and fitness but there was a significant relationship between macro nutrient intake and fitness. Further research is needed to find out other factors that affectfitness.Keywords: Fitness; Somatotype; Macronutrient Intake

Abstract

Prevalensi diabetes melitus (DM) di Sumatera Barat berdasarkan Data Riskesdas 2018 meningkat 1,6% dari tahun 2013. Terapi komplimenter sebagai alternatif penatalaksanaan Diabetes Melitus dengan pemberian pangan fungsional berupa yoghurt kacang merah yang mengandung arginin, bakteri Lactobacillus achidophillus dan Bifidobacterium lactis dapat menurunkan kadar glukosa darah. Tujuan penelitian ini untuk mengetahui efektivitas pemberian yoghurt kacang merah terhadap kadar glukosa darah penderita diabetes melitus tipe II di wilayah kerja Puskesmas Nanggalo Padang. Penelitian quasi eksperimen dengan desain pretest- postest with control group dilakukan pada sebanyak 30 orang sampel penderita DM yang sudah didiagnosis dokter, yang dipilih dengan cara purposive sampling. Sampel dibagi menjadi kelompok perlakuan diberikan yoghurt kacang merah dan kelompok kontrol diberikan probiotik yoghurt masing-masing sebanyak 225 mL selama 7 hari. Data yang diperoleh dianalisis dengan uji t beda dua rata-rata dependen dan uji t independen. Hasil penelitian menunjukkan adanya penurunan kadar glukosa darah sewaktu responden. Rata – rata perbedaan penurunan kadar glukosa darah sewaktu responden yang diberikan yoghurt kacang merah yaitu 57,26 mg/dL, sedangkan responden yang diberikan probiotik yoghurt yaitu 25,8 mg/dL. Hasil uji statistik menunjukkan terdapat perbedaan yang bermakna antara rata-rata penurunan kadar glukosa darah responden yang diberikan yoghurt kacang merah dengan responden yang diberikan probiotik yoghurt (p = 0.035).
