Abstract

Pesisir cattle, an original local cattle of West Sumatera, have good genetic potential because they adapt very well to both the low-quality feed, and changes in ambient temperature. This research was conducted to determine body weight, feed consumption and conversion, daily gain and meat quality (tenderness, water holding capacity, cooking loss and pH) of Pesisir cattle in different ration composition and feedlot period. This experiment was done based on Randomized Block Design in 2 x 2 factors with 3 groups. The first factor (factor A) was two kinds of diet i.e. A1 = 50% concentrate + 50% ammoniated rice straw and A2 = 75% concentrate + 25% ammoniated rice straw. The second factor (factor B) was duration of fattening (B1) i.e. 3 months and (B2) 4 months. There was no interaction between the level of the diet with duration of fattening on body weight, daily gain, tenderness, water holding capacity and cooking loss on meat of Pesisir cattle (P> 0.05). Body weight in A2 group was significantly higher than A1 beginning from second month of treatment. Factor A had significant effect on daily gain. The pH value of meat of cattle that received 75% concentrate was lower than that received 50% concentrate. The higher the percentage of concentrate in diet caused better body weight, daily gain, consumption, feed conversion and tenderness. Duration of fattening did not resulted in significant effect on all of parameters except final weight. Key Words: Pesisir Cattle, Feedlot, Ammoniated Rice Straw, Physical Meat Quality

Abstract

This research was aimed at studying the in vitro ruminal biohydrogenation (BH) of C18 fatty acids (FA) in mixtures of Indigofera zollingeriana and Brachiaria decumbens. Four combinations of experimental rations of I. zollingeriana : B. decumbens were tested i.e., IZ 1 (45%:45%), IZ 2 (60%:30%), IZ 3 (75%:15%), and IZ 4 (90%:0%). The remaining 10% in in each ration was rice bran. The experimental design was based on a completely randomized design with five replicates. Results revealed that there was a statistically significant difference (P<0.01) in the composition of C18 unsaturated FA (UFA) and saturated FA (SFA) for each in vitro incubation period of 1, 2, 4, 8 and 24 h. The highest accumulation of C18 UFA at 24 h was observed in the incubation of IZ 4 (19.87%). The BH of C18:3, C18:2, and C18:1 showed no differences (P>0.05). Composition of C18:0 after incubation showed a significant difference (P<0.01) with the lowest composition was observed in IZ 2 (22%). In conclusion, combination of I. zollingeriana and B. decumbens at different ratio has minor inhibition effect on BH of C18 UFA.

Abstract

Penelitian ini bertujuan untuk melihat pengaruh umur sapih terhadap performans babi Duroc jantan. Ternak yang digunakan dalam penelitian ini adalah 18 ekor babi Duroc jantan lepas sapih dengan bobot lahir antara 900 gram - 1300 gram yang berasal dari 3 induk babi yang berbeda dengan litter size 10 ekor. Penelitian ini berupa eksperimen menggunakan Rancangan Acak Lengkap (RAL) dengan 3 perlakuan dan 6 ulangan selama 26 minggu. Perlakuan yang digunakan dalam penelitian ini adalah umur sapih pada babi yaitu 2 minggu (A), 3 minggu (B), dan 4 minggu (C). Peubah yang diamati adalah bobot sapih, bobot hidup, dan berat karkas. Penelitian diawali dengan sanitasi lalu penimbangan bobot awal, kemudian dilakukan pengacakan tempat ternak. Tiap kandang dikelompokkan sesuai umur. Pemberian pakan dilakukan dua kali sehari. Penimbangan sisa pakan dilakukan setiap pagi. Ternak babi dimandikan dua kali sehari dan penimbangan bobot badan dilakukan setiap 2 minggu sekali sampai 5 bulan 2 minggu. Hasil penelitian menunjukkan, umur sapih berpengaruh terhadap performans babi Duroc Jantan. Umur sapih berpengaruh nyata (P<0,05) terhadap bobot sapih dan bobot hidup, namun tidak berpengaruh terhadap bobot karkas (P>0,05). Umur sapih 4 minggu memberikan performans yang terbaik dibandingkan umur sapih lainnya.

Abstract

The present research was studied the effect of feeding level od fattening period on the carcass characteristics (percentage of carcass, back fat thickness and loin eye area) of Pesisir cattle. Treatments of feeding included: Al = 50 % concentrate + 50 % ammoniated rice straw, A2 = 75 % concentrate + 25 % ammoniated rice straw. The feed were offered in two fattening periods of B1 = 3 months and B2 = 4 months. Data were statistically analized in randomized block design with three blocks. Results showed that there was no interaction effect between the levels of feeding and fattening periods to the percentage of carcass, the back fat thickness and the loin eye area of the Pesisir cattle (P> 0,05). The higher of concentrate percentage used in the feed and the longer the fattening period were followed by the thicker the back fat and the wider the loin eye area (P<0.05).

Abstract

The research observed the activities of Bandar Buat Slaughter house that used a survey method.  There were primary data and secondary data. In general, the result of the research showed that it did not run yet as like as standard of slaughter house refer to Peraturan Mentri Pertanian Nomor 13/Permentan/OT.140/1/2010. Furthermore, there were 147 slaughters for one month surveyed. Buffalo slauhgters were the highest proportion about 48.97%. The most percentage of slaughting was the cattle from Solok around 55.72%.  The percentage of female cattles slaughting were 52,38% and the male cattles slaughting were 47,61%.

Abstract

The research was carried out to study the effects of age to cholesterol content, trigliserida and cooking loss of meat pesisir cattle. Twelve cattle were allotted to a 4 x 3 randomized block design (RBD). The treatments are 4 levels of age, they are I1 (1.5-2.0 years), I2 (2.5-3.0 years), I3 (3.5-4.0 years) and I4 (>4.5 years). The results showed that cholesterol content of meat pesisir cattle ranged from 37.24 - 38.29 mg/100 gram, trigliserida 12.25 - 13.62 mg/100 gram of meat and cooking loss ranged from 28.10 - 32.36 %. The age of cattle didn't influence significantly (P > 0.05) to cholesterol content and trigliserida content of meat, but cooking loss persentage decreased significantly (P<0.05) by increasing the age of cattle.

Abstract

Dadih is a traditional fermented milk of Minangkabau ethnic which has been part of the richness of Indonesian food. Its existence has united with society life in West Sumatra, especially for community who resides in buffalo utilization areas. Here, some of buffalo milk productions are taken for dadih manufacturing. However, the production of dadih is still limited and does not show any immense progress so far. This review explains some aspects related to basic understanding about dadih, real condition of dadih production, the limitation of dadih’s production development and its consumption level, and completing with some dadih-related-researches and other potential attempts which are used as temporary answers to overcome low level of those conditions. Application of various researches on market scale is hoping to be the real response to force modern commercialization of dadih production and as a final point to enhance the level of dadih consumption.

Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh penambahan mineral Ca dan Mn dalam proses biodelignifikasi pelepah sawit menggunakan kapang Phanerochaete chrysosporium terhadap kandungan fraksi serat. Penelitian menggunakan Rancangan Acak Lengkap (RAL) pola Faktorial 3 x 3 dengan dua ulangan : Faktor A adalah dosis mineral Ca (1.000; 2.000 dan 3.000 ppm). Faktor B adalah dosis mineral Mn (50, 100 dan 150 ppm). Fermentasi berlangsung selama 10 hari.  Peubah yang diukur adalah kandungan NDF, ADF, hemiselulosa, selulosa dan lignin. Hasil penelitian menunjukkan interaksi antara mineral Ca dan Mn mempengaruhi kandungan NDF, selulosa dan lignin. Penambahan 2.000 ppm Ca dan 150 ppm Mn pada biodelignifikasi pelepah sawit menggunakan kapang Phanerochaete chrysosporium  memberikan hasil terbaik karena menghasilkan kandungan lignin terendah yaitu 22,4%.

Abstract

The Pesisir cattle are indigenous West Sumatera cattle. Their quality needs to be improved since they can live in local environment with sufficiently available feed resources. A research has been done to study the effects of feeding level and fattening period to the growth and the carcass characteristics of the Pesisir cattle. This research was designed by using block design with three blocks. The first factor was two levels of feeding, i.e: A1 = 50 % concentrate + 50 % ammoniated rice straw, A2 = 75 % concentrate + 25 % ammoniated rice straw. The second was time period of fattening, i.e: B1 = 3 months and B2 = 4 months. The results showed that there was no interaction between the level of feeding and fattening period to the growth, percentage of carcass, the back fat thickness and the rib eye area of the Pesisir cattle (P> 0.05). The higher of concentrate percentage, the higher the growth of the cattle, the thicker the back fat and the wider the rib eye area will be (P<0.05). Similarly, the longer the fattening, the higher the percentage of carcass, the thicker the back fat and the wider rib eye area will be.
