Abstract

‘Pasayu’ adalah produk pangan baru pasta fettuccine yang menggunakan  tepung komposit yang terdiri dari tepung limbah ubi kayu, tepung jagung dan tepung kacang hijau. Tujuan dari penelitian adalah untuk memperoleh formula yang tepat, antara tepung limbah ubi kayu, tepung jagung dan tepung kacang hijau untuk meningkatkan kandungan protein dan serat. Metode eksperimen terdiri dari analisis cluster pada data yang diperoleh dari metode survei, menghasilkan varietas Karikil dengan 0,023 persen kandungan HCN, 11,9 persen pati, serat 7,2 persen serat dan rendemen 16,6 persen, dan Metoda Rancangan Acak Kelompok (RAK) dengan 6 perlakuan dan 4 pengulangan. Hasilnya memperlihatkan bahwa Perlakuan B (20 : 80) pada ‘Pasayu’ jagung adalah perlakuan terbaik dengan karakteristik sebagai berikut : 9,2 persen protein, 9,5 persen kandungan uap air, 3,57 persen serat, 62,39 persen pati, 6,84 persen kandungan lemak, 72,8 persen karbonhidrat, 1,6 persen kandungan abu, kekerasan 208,7429 gF dan daya rehidrasi 73,385 gF. Perlakuan terbaik pada ‘Pasayu’ kacang hijau adalah 70 : 30 dengan karakteristik: kandungan protein 12,23 persen, kandungan uap air 8,97 persen, serat 5,23 persen, pati 33,2 persen, lemak 5,03 persen, karbohidrat 69,32 persen dan  kandungan abu 4,45 persen, kekerasan 1543.524 dan daya rehidrasi 149.23 gF.High nutrient’s Pasayu is a new fettucine-type pasta food product with composite flour as the basic material that consisting of cassava waste flour, mixed with corn flour and mungbean flour. The study was aimed to obtain the proper formulation of the ratio of cassava waste flour to corn flour and cassava waste flour to mungbean flour, to increase protein content and Pasayu fiber that exceed commercial pasta products. Experiment method consisted of cluster analysis on the data previously obtained from survey method, giving a Karikil variety with 0.023persen HCN content, 11,9 percent starch, 7,2 percent fiber and 16,6 percent rendemen and a Randomized Block Design (RBD) with 6 treatments and 4 repetitions. Results show that B treatment (20 : 80) of corn Pasayu is the best treatment with the characteristics of: 9,2 percent protein, 9.5 percent water content, 3,57 percent, fiber,  62,39 percent starch, 6,84 percent fat content, 72.8 percent carbohydrates, 1,6 percent ash content, hardness  208,7429 gF and 73,385 of rehydration power. The best treatment of mungbean Pasayu is 70 : 30 with the characteristic: 12.23 percent protein content, 8,97 percent water content, 5,23 percent fiber content, 33,2 percent starch content, 5,03 percent fat, 69,32 percent carbohydrates  and 4,45 percent ash content, hardness is 1543.524 149,23 gF and rehydration power.

Abstract

Sektor pertanian, kehutanan, dan perikanan serta sektor industri pengolahan di Kabupaten Sumedang memberikan kontribusi nilai PDRB paling tinggi pada tahun 2014-2018, sehingga Kabupaten Sumedang memiliki potensi pada sektor agroindustri. Penelitian ini bertujuan untuk menentukan prioritas produk agroindustri unggulan dan penilaian masyarakat terhadap produk agroindustri unggulan yang telah ditentukan di Kabupaten Sumedang. Penelitian ini menggunakan Metode Perbandingan Eksponensial (MPE) dan analisis ANOVA. Alat analisis data yang digunakan adalah Microsoft Excel dan Software IBM SPSS Statistics 24. Hasil analisis MPE menunjukkan bahwa prioritas produk agroindustri unggulan di Kabupaten Sumedang adalah kopi bubuk, kopi sangrai, ubi cilembu bakar, keripik ubi cilembu, tembakau mole merah, opak ketan, tembakau mole putih, tahu sumedang, keripik tempe, dan oncom pasireungit. Analisis ANOVA menunjukkan adanya perbedaan penilaian urutan produk agroindustri unggulan, yaitu tahu sumedang, ubi cilembu bakar, oncom pasireungit, tembakau mole putih, keripik ubi cilembu, keripik tempe, kopi sangrai, kopi bubuk, tembakau mole merah, dan opak ketan.

Abstract

Banana is one of the commodities that have nutritional value and high economic value. In order to produce a nice fruit and a high economic value, these plants must grow well. The Factors that can cause the plant to grow well, one of them is water. Water is used by plants, to grow root, stem, leaves and also maturation the fruit. When the plant doesn’t have water, growth will be stunted even death. In addition to deficiencies, excess water on the plant can also cause spoilage. Therefore, needed a tool which can watering plants, especially banana plant. The tool can be made using Arduino. Arduino is brand platform microcontroller that can control various sensors from soil moisture sensor, humidity sensor even it can apply the concept of the Internet of Things. The purpose of this research is to create a prototype automatic watering tool uses concept of the Internet of Things (IoT) to find out the condition of banana plant in real-time. The results obtained, the automatic watering tool successfully built and functional according the design, starting from the arduino that can control the soil moisture sensor to read current soil moisture, insert the data into the database, and the pump doesn’t on, because the moisture didn’t under 41% or in dry condition during the research. Abstract

Small Medium Enterprises (SME) in food was contributed 13,15% on Gross Domestic Product (GDP) 2013. However, SMEs in food had the problems in the management organization that could affect the product competitiveness. The local SMEs in food is less competitive compared with the similar foreign overseas product. In order to anticipate the negative impact of the broader market, the competitiveness measurement was needed to be conducted on understanding the strength of SMEs in food. Competitive measurement can be done by creating web application to reduce measuring process. This research using Designing methods (system engineering) using diamond porter model as competitiveness measurement method of SME in foods. Web application functioned as SME in foods grading, competitiveness weighing, SME in foods index measurements and City SMEs index measurements. Index value that were yielded grouped into three categories which were high, medium, and low. There was a color indicator on index value display that functioned to classifying competitiveness index value. ID was needed to access this web application, those things intended to guard the safety of data contained in this web application.

Abstract

In order to evaluation the food security development in Bandung,   researcher has been conducted in the form of software design to measure the performance of food security development from the aspect of food availability, food accessibility and the utilization and quality of food. The software is created in Microsoft Excel base as an analytics tool. The data used as the material of analysis was taken from the report of the institutions related to the food security development. Data here, is a source for scoring and weghting of the  3 food security  dimensions which is  filled in the software. List of contents for the analysis of food availability, food access and utilization and quality of food aspect are consist of 27 criteria, 12 criteria and 12 criteria respectively. The evaluation is done based on the calculation of the total value of weight multiplication with the score of each criteria, where the maximum total value is 5000 and minimum 1000. Justification of performance condition of food security performance described in the software is based on 5 categories class, that is from 1000 to 1800 total value performance for “unsafe conditions”, then 1800 to 2600 for “unsafe conditions”, 2600 to 3400 for “fairly safe conditions”, 3400 to 4200 for “safe conditions” and 4200 to 5000 for “very safe conditions”. The result of evaluation by using data in Bandung City of year 2012 and year 2015 indicate that condition of Bandung food security in terms of availability is “fairly safe”, food access is “safe” and the utilization and quality of food is in “fairly safe” condition.

Abstract

Information and communication technology (ICT) can improve productivity and reduce costs / expenses in the agricultural sector and rural development. Jatinangor is one of sub-district on Sumedang with the highest economic growth, where the agricultural sector ranks third in contributing the economy. The use of ICT for farmers in Jatinangor it was not known the degree to which capable of being applied, then need to know the level of use of ICT by Jatinangor farmers. Method used in this research was descriptive method that described the data to determine size of the ICT usage level. Data is formulated into index numbers of ICT usage level or Information and Communication Technology Usage Level Quotient Index which was obtained by formulating an operational definition of variable using analysis of UNDP index calculation and Location Quotient analysis. The results of the study showed that the measurement of the ICT usage level covering by 4 indicators: farmers characteristic, farmers environment, ICT characteristic, and farmers behavior. Farmers group has the highest of the ICT use in Jatinangor is Harapan I, in Bina Karya Mandiri, Cileles Village with an index of 1,1380, and ICT absorption level of 50 %. Farmers group has the lowest of the ICT use is Jeruk Mipis, in Mulya Jaya, Cipacing Village with an index of 0,9156, and ICT absorption level of 36 %.

Abstract

Indonesia masih belum bisa memenuhi permintaan kopi nasional maupun internasional. Total produksi kopi Indonesia pada tahun 2017 sebesar 717.961 ton yang lebih rendah dari kebutuhan kopi Indonesia untuk pasar nasional dan internasional yang mencapai 747.790 ton. Penelitian ini berujuan untuk memperbaiki layout yang ada di PT Sinar Mayang Lestari agar dapat meningkatkan kuantitas dan kualitas produksi kopi PT Sinar Mayang Lestari demi menciptakan produksi yang optimal dan berupaya membantu memenuhi kebutuhan kopi Indonesia. PT Sinar Mayang Lestari merupakan perusahaan penanaman dan pengolahan kopi yang berlokasi di Pangalengan, Kabupaten Bandung. Perancangan ulang tata letak fasilitas produksi PT Sinar Mayang Lestari dilakukan dengan metode Systematic Layout Planning (SLP) dan software Blocplan. Dihasilkan 20 layout alternatif yang dapat dibuat yang kemudian diseleksi untuk menentukan satu layout alternatif yang paling efisien berdasarkan ongkos material handling terkecil. Hasil penelitian menunjukkan layout alternatif hasil metode SLP dengan minimalisasi jarak antar departemen sekitar 33,65% dan pengurangan ongkos material handling sekitar 62,94% dari layout aktual. Perancangan ulang tata letak fasilitas produksi PT. Sinar Mayang Lestari dinilai lebih efektif menggunakan metode SLP dibanding Blocplan karena metode SLP memperhitungkan lebih banyak faktor pendukung daripada metode Blocplan.

Abstract

Pengendalian mutu merupakan hal dasar yang perlu diterapkan oleh sebuah organisasi, instansi, maupun perusahaan untuk mengahasilkan jasa ataupun produk yang dapat memenuhi kebutuhan konsumen. Kecacatan yang mungkin terjadi dalam suatu produksi dapat menyebabkan kerugian secara bertahap bagi perusahaan. Fruit strips Frutivez secara keseluruhan dapat memenuhi standar fruit strips yang diminati oleh konsumen, namun sering produk yang diterima oleh konsumen dalam keadaan yang patah. Tujuan penelitian ini adalah untuk menganalisis mutu produk Frutivez berdasarkan standar fruit strips yang diminati oleh konsumen menggunakan analisis statistical process control. Kecacatan disebabkan oleh karena faktor tenaga kerja (karyawan dan kurir), kejenuhan karyawan, dan peralatan yang sudah usang. Solusi yang diberikan adalah perbaikan metode pengemasan, mengadakan rekreasi bersama, serta penggantian dan pemeliharaan peralatan. Tingkat presentase akhir penerimaan solusi tersebut oleh pihak perusahaan sebesar 78% yang berarti kemungkinan besar solusi yang diberikan dapat diimplementasikan.

Abstract

Manggis merupakan tanaman buah yang termasuk ke dalam pangan fungsional karena memiliki banyak manfaat bagi kesehatan. Sebagian besar buah manggis dijual dalam bentuk buah segar, padahal buah manggis dapat diolah menjadi beberapa produk sehingga dapat meningkatkan nilai tambah buah manggis. Penelitian ini bertujuan menentukan lokasi potensial, prioritas dan arah pengembangan agroindustri manggis di Kabupaten Tasikmalaya. Penentuan lokasi potensial dilakukan menggunakan metode Location Quotient (LQ) and Differential Shift (DS), penentuan prioritas produk agroindustri manggis dilakukan menggunakan metode perbandingan ekponensial, strategi pengembangan agroindustri manggis dilakukan menggunakan analisis SWOT (Strengths, Weaknesses, Opportunities, and Threats) dan pemilihan prioritas strategi pengembangan agroindustri manggis dilakukan menggunakan Analytical Network Process (ANP). Hasil analisis LQ dan DS menunjukkan bahwa lokasi potensial pengembangan agroindustri manggis terdapat pada empat Kecamatan di Kabupaten Tasikmalaya yaitu Kecamatan Sodonghilir, Tanjungjaya, Sukaraja, dan Kecamatan Jatiwaras. Prioritas pengembangan produk agroindustri manggis berdasarkan analisis metode perbandingan ekponensial secara berurutan adalah ekstrak kulit manggis (9,63), sari buah/ jus manggis (9,56), sirup buah manggis (9,53), buah kaleng manggis (9,51), puree manggis (9,50), es krim kulis manggis (9,48), dodol biji manggis (9,47), dan tepung kulit manggis (9,45). Berdasarkan analisis SWOT dan ANP diperoleh prioritas strategi pengembangan agroindustri manggis bagi petani, yakni : 1) branding dan promosi produk, 2) Peningkatan kualitas produk melalui penerapan Good Manufacturing Practice (GMP) dan Cleaner Production, 3) Pengembangan dan inovasi produk, 4) Peningkatan kualitas sumber daya manusia, 5) Peningkatan kesejahteraan petani, 6) Bibit unggul yang mampu adaptif terhadap lingkungan, 7) Peningkatan harga jual buah manggis.
