Abstract

This study aims to determine the effect of different proportion of peel and flesh red dragon fruit of the jam to organoleptic test, to obtain the results of analysis of chemical properties and physical properties of jam, and also the selected formula. This research used experimental method by using Randomized Design. The organoleptic test was then analyzed using Kruskal Wallis and Mann-Whitney method. The result showed that proportion of peel and flesh of red dragon fruit has significant test (p<0,005) on hedonic quality test of color, texture, taste, aftertaste and hedonic test of flavor and taste. Based on the hedonic test, water content, carbohydrate content, antioxidant capacity, total flavonoid, and viscosity of the selected formula were  F3 (peel (70 g) and flesh (30g)), with water content (30,95%), ash content (0,27%), protein content (0,65%), fat content (0,20%), carbohydrate content (67,93%), antioxidant capacity (164,79 mg AEAC), total flavonoid (0,430 mg/g), viscosity (1333,67 cP) and polish (15,5 cm).

Abstract

This study aims to analyze the relation between fiber intake, cholesterol, nutritional status, and physical activity with blood cholesterol level on adult women. The study design was a cross sectional study. The study involved 60 adult women (aged 40-64 y.o) in the Sanggar Senam Bugar Sehat Bogor as respondent. The analysis used was Chi-square test to assess the relation between variables. The result showed a signinificant relation of physical activity (p value=0,027, OR=0,098 ; 95% CI=0,012-0,809), fiber intake (p value=0,046, OR=7,724 ; 95% CI=0,918-64,260), and cholesterol intake (p value=0,000, OR=16,00 ; 95% CI=3,398-75,345) with blood cholesterol level. It is concluded that blood cholesterol levels are influenced by eating pattern, physical activities, and routine medical check up.

Abstract

There are about 32.9% Indonesian women susceptive to obesity and free radical exposure. Free radicals are resistible to Zn-cofactors and a-tocopherols. The aims of this study was to make flakes formulations with zinc fortification, then analyze the physical and chemical character of flakes (hardness and color degree), and analyze carbohydrate, protein, fat, zinc, and α-tocopherol. The experimental design used for this study was a complete randomized design. The results showed the best formulas that substitution by bran was 25 % and fortified seng was 118,9 mg. The chemical properties of the best formulas should has increased the levels of protein, fat, and Zinc. One serving (55g) of flakes has 208,4 Kal; 3,38 g protein; 0,27 g fat; 48,12 g carbohydrate ; 1,89 mg seng; and 3,53mg α-tocopherol.

Abstract

The purpose of this research was to analyze the difference of formulation with the substitution of bit flour and the addition of Fe to the organoleptic properties, chemical properties and physical properties in the manufacture of cookies as alternative food for the prevention of female anemia. This research was conducted by experimental method with Completely Randomized Design. The results of this study showed that the first organoleptic test of cookies with 15% beet meal substitution and 30% fortified cookies was the selected formula. Selected formula cookies have higher water content, ash content, protein content, carbohydrate levels and higher Fe content compared to control cookies, whereas the selected fatty acid formula content is smaller. The Fe content in selected cookies belongs to the food of the Fe source snack. Selected formula cookies are redder and darker than the control formula cookies. The contribution of iron to nutrition label reference in cookies is 26%.

Abstract

Malondialdehyde Concentration in Diabetic Rats Given Feed Made from Sagu (Metroxylon sagu) and Moringa oleifera ABSTRACTHyperglycemia in type 2 diabetes mellitus (DMT2) can cause oxidative stress characterized by increased malondialdehyde (MDA) production. Flavonoids have antioxidant activity that can suppress the production of free radicals that cause oxidative stress. Flavonoids are found in Cersa mori (CM), a food product made from sagu (Metroxylon sagu) and Moringa oleifera. This study aims to analyze the effect of CM administration on MDA levels in alloxan-induced diabetic rats. Antioxidant activity and total CM flavonoids were analyzed using DPPH reduction and colorimetry methods. Thirty-two Wistar rats were divided into 4 groups: negative control (K1), positive control 1 (K2), positive control 2 (K3) and treatment of feeding 5 g CM/200 g BW per day (K4). The intervention was carried out for 30 days. MDA levels were examined before and after the intervention by spectrophotometry. The results showed a significant decrease in MDA levels in K2, K3, and K4 by -11.5 ± 3.39 μM, -10.5 ± 4.32 μM, and -14.9 ± 2.85 μM, respectively. Flavonoid memiliki aktivitas antioksidan yang mampu menekan produksi radikal bebas penyebab stres oksidatif. Flavonoid terdapat di dalam produk pangan Cersa mori (CM) yang terbuat dari sagu (Metroxylon sagu) dan kelor (Moringa oleifera). Penelitian ini bertujuan menganalisis pengaruh pemberian CM terhadap kadar MDA tikus diabetes yang diinduksi aloksan. Aktivitas antioksidan dan total flavonoid CM masing-masing dianalisis menggunakan metode reduksi DPPH dan kolorimetri.Tiga puluh dua ekor tikus Wistar dibagi menjadi 4 kelompok: kontrol negatif (K1), kontrol positif 1 (K2), kontrol positif 2 (K3), dan perlakuan yang diberikan 5 g CM/200 g BB per hari (K4). Intervensi dilaksanakan selama 30 hari. Kadar MDA diperiksa sebelum dan setelah intervensi secara spektrofotometri. Hasil menunjukkan adanya penurunan signifikan kadar MDA pada K2, K3 dan K4 yaitu secara berturut-turut sebesar -11,5 ± 3,39 µM; -10,5 ± 4,32 µM; dan -14,9 ± 2,85 µM. Penurunan kadar MDA terendah terdapat pada K4 yang diberikan CM (p < 0,05).

Abstract

Periode 1000 HPK terdiri dari 270 hari selama kehamilannya dan 730 hari pada kehidupan pertama bayi yang dilahirkannya, dimana ini merupakan periode masa keemasan awal kehidupan dan penting untuk mencukupi asupan zat gizi mikro pada ibu hamil. Tujuan kegiatan pengabdian masyakarat ini adalah untuk memberikan pengetahuan tentang pentingnya 1000 Hari Pertama Kehidupan (HPK) dan suplementasi Fe, Ca dan Asam Folat pada ibu hamil. Pelaksanaan kegiatan pengabdian masyarakat ini menggunakan quasy experimental dengan rancangan pre dan post test. Subjek kegiatan pengabdian masyarakat diambil secara random sebanyak 40 orang ibu hamil berada di sekita Puskesmas Sukmajaya Depok. Hasil dari kegiatan penyuluhan ini menunjukkan bahwa Sebagian besar responden memiliki usia pada rentang 19-29 tahun (55%), memiliki tingkat pendidikan SMA (42,5%) dan sebagian besar responden tidak bekerja atau sebagai ibu rumah tangga (82,5%). Rata-rata nilai pre test adalah sebesar 62,9 dengan  skor minimal 9 dan maksimal 90, sedangkan post test setelah intervensi penyuluhan adalah sebesar 78,9 dengan  skor minimal 54 dan maksimal 100. Peningkatan pengetahuan tentang 1000 HPK dan suplementasi Ca, Fe dan asam folat adalah sebesar 16%. Berdasarkan uji statistik terdapat perbedaan pengetahuan yang signifikan antara sebelum dan sesudah penyuluhan (p<0,05). Kata kunci: asam folat; Fe; Ca; ibu hamil; penyuluhan gizi

Abstract

Abstract Health service at Posyandu includes growth and development monitoring by anthropometric measurement and nutrition counseling by cadres. Cadres of Posyandu were expected to have capability in knowledge and practice about nutrition and health to do their role. The purpose of cadre class about growth monitoring and local-based complementary food making was to gain cadre’s knowledge and skill in anthropometric measurement and complementary food making. Method of this community service program was refreshment and assistance about anthropometric measurements and practice of complementary food making using local food. The program was held in September 2019, 14 cadres from 7 Posyandu in Beji, Depok, were involved. Cadre’s characteristic, knowledge and skill of anthropometric measurement and complementary food, were obtained by questionnaire with pre-test and post-test. Cadre’s skill in complementary food making , were observed by the result of complementary food making. The result of this program showed that 57,1% of cadre were high school or university graduate, average age of the cadre was 48 years. There were increase in average score of anthropometry knowledge and skill (pre = 13,57+0.535; post = 14,14+ 0.640 ; p=0.157), anthropometry skill (pre = 13.43+3.505; post = 18.43+ 2.070 ; p=0.027) and complementary food knowledge (pre = 11.71+1.113; post = 12.57+ 0.787 ; p=0.131). Based on the result of complementary food practice, it was showed that all of the cadres have known the complete composition of complementary food . All of cadres have made complementary food with complete food groups in the right texture for each age group. Keywords: Cadre Class, Growth Monitoring, Complementary Food, Local Food Abstrak Pelayanan kesehatan di Posyandu antara lain pemantauan tumbuh kembang balita dengan pengukuran antropometri dan konseling gizi yang dilakukan oleh kader posyandu. Kader posyandu diharapkan memiliki pengetahuan dan keterampilan di bidang gizi dan kesehatan agar dapat melaksanakan perannya.  Tujuan kegiatan pembinaan kelas kader untuk pemantauan pertumbuhan dan pembuatan MPASI berbahan pangan lokal adalah untuk meningkatkan pengetahuan dan keterampilan kader dalam pengukuran antropometri serta dalam pembuatan MPASI. Metode kegiatan ini adalah pengabdian kepada masyarakat dengan penyegaran dan pendampingan mengenai pengukuran antropometri dan MPASI serta praktik pembuatan MPASI berbahan pangan lokal yang sesuai dengan kebutuhan gizi anak. Kegiatan ini dilaksanakan pada bulan September 2019 dan diikuti 14 kader dari 7 Posyandu yang ada di Kecamatan Beji, Depok. Data karakteristik kader, pengetahuan  dan keterampilan antropometri  serta MPASI didapatkan dengan instrumen kuesioner pre-test dan post-test. Data keterampilan kader dalam mengolah MPASI menggunakan bahan pangan lokal didapatkan dengan observasi hasil praktik. Hasil kegiatan ini menunjukkan bahwa 57,1% kader memiliki Pendidikan terakhir adalah SMA atau universitas, rata -rata umur kader adalah 48 tahun.Terdapat peningkatan rata-rata  pengetahuan antropometri (pre = 13,57+0.535; post = 14,14+ 0.640 ; p=0.157), keterampilan antropometri (pre = 13.43+3.505; post = 18.43+ 2.070 ; p=0.027) dan pengetahuan MPASI (pre = 11.71+1.113; post = 12.57+ 0.787 ; p=0.131)  dengan perbedaan bermakna yaitu pada variable keterampilan antropometri (p = 0.027). Hasil observasi saat praktik pembuatan MPASI menunjukkan, seluruh kader membuat MPASI dengan bahan yang lengkap dan tekstur sesuai umur anak.  Dapat disimpulkan bahwa kegiatan ini berlangsung dengan baik dan dapat meningkatkan pengetahuan dan keterampilan kader. Abstract

The objective of this study was to analyze relationship between food consumption and physical activity with incidence of osteoporosis in elderly at nursing home in Bogor. The design of this study was cross sectional. Subjects were taken purposively with certain criteria and the number of subjects obtained were 37 elderly. Results showed that the adequacy level of energy and protein were normal, phosphor was in adequate category and calcium was in deficient category. There was no significant relationship between nutritional status, the adequacy level of energy, protein and phosphor with risk of osteoporosis (p>0.05). However, there was a significant relationship between the adequacy level of calcium and physical activity level with risk of osteoporosis (p<0.05). The deficit adequacy level of calcium and physical activity was a risk factor for the risk of osteoporosis.

Abstract

The objective of this study was to develop a bagelen cookies with Red Palm Oil (RPO) substitution as an alternative of functional food high in beta carotene. Complete randomize design with level of RPO as a treatment was applied in this study to produce three substitution formulas and one basic formula. The selected bagelen was determined by sensory evaluation by considering the highest average value and level of RPO substitution. Bagelen with 42% Red Palm Oil (F3) was preferred by 70% panelist. This formula contained 3.11% water, 0.94% ash, 26.72% fat, 41.95% saturated fatty acids and 35.07% unsaturated fatty acids, 8.53% protein, 60.70% carbohydrate, 18.29 ppm (mg/kg) β-carotene, antioxidant activity 75.11% with AEAC value was 43.44 mg/100 g. With its high beta carotene as natural antioxidants, this product may be classified as functional food that are beneficial to health for preventing atherosclerosis.
