Abstract

The aim of study to test the inhibitory solution of lidah merua (Sansevieria trifasciata) on amount of bacteri, protein content, and organoleptic characteristics (color, aroma, and, mucus) of broiler chickens meat (Gallus domesticus). Study was conducted in a completely randomized experimental design with 5 level solution of S. Trifasciata (0, 15, 30, 45, and 60 g/100 ml), each of treatment was 4 replication. Application have done by soaking 100 g broiler chickens meat in solution of S. Trifasciata for 30 minutes. The result of this study shown soaking broiler chickens meat in solution of S. Trifasciata significant (P<0,05) influence amount of bacteri, but not significant (P> 0.05) influence protein content, and organoleptic characteristics (color, aroma, and mucus). solution of S. Trifasciata concentrations 15 g/100 ml can be durable chicken brioler meat and not change protein content. But organoleptic characteristics color and aroma of broiler chickens meat which like panelists are the concentration 15 g/100 ml and mucus of broiler chickens meat which like panelists are the concentration 45 g/100 ml. Study conclude that soaking broiler chickens meat in solution of S. Trifasciata can be hamper amount of bacteri but not change protein content and organoleptic characteristics (color, aroma, and mucus) of broiler chickens meat. Abstract

Minyak jelantah dapat berakibat buruk pada sistem organ. Penelitian ini bertujuan untuk mengetahui pengaruh pemberian minyak jelantah terhadap gambaran histopatologi arteri koronaria, miokardium, dan hepar. Penelitian ini merupakan studi eksperimental dengan rancangan acak terkontrol dengan pola post test only control group design. Sebanyak 25 ekor tikus putih jantan Sprague dawley, dibagi dalam 5 kelompok perlakuan secara acak. Kelompok K (Kontrol) dan kelompok P1, P2, P3, dan P4 yang masing-masing diberikan minyak 1x, 4x, 8x, dan 12x penggorengan dengan dosis 1,5 mL/hari. Hasil penelitian didapatkan rerata diameter lumen arteri koronaria, K:147,02; P1:134,17; P2:126,16; P3:117,19 dan P4:98,28. Rerata skor kerusakan miokardium, K:0,16; P1:0,48; P2:0,96; P3:1,6; P4:1,84. Rerata skor kerusakan hepar, K:0; P1:0,2; P2:1,76; P3:2,88; P4:3,88. Hasil uji One Way Anova terhadap rerata diameter lumen arteri koronaria didapatkan p=0,001. Hasil uji Kruskal Wallis terhadap rerata kerusakan miokardium didapatkan p=0,003 dan rerata kerusakan hepar didapatkan p=0,001. Simpulan pemberian minyak goreng bekas berpengaruh buruk terhadap arteri koronaria, miokardium dan hepar. Kata kunci: arteri koronaria, hepar, minyak goreng bekas, miokardium
