Abstract

Snake-head fish (Channa striata) skin categorized a byproduct contains a higher concentration of collagen. The collagen can be extracted by using protease, which is known as Papain Soluble Collagen (PaSC). This study aimed to isolate the collagen from the snake-head fish skin using papain. The yield percentage and moisture content of PaSC in the skin was determined. Measurements using SDS-polyacrylamide gel electrophoresis (SDS-PAGE) and Fourier transform infrared spectroscopy (FTIR) were performed to characterize the PaSC and its functional groups. The results showed that the yields and moisture content of PaSC were 8.9% and 6.07%, respectively. The PaSC characterized by two α-chains appeared as collagen type I. Fourier transform infrared (FTIR) spectra of PaSC confirmed a triple-helical structure of collagen. The results indicated that snake-head fish skin could be used as potential resources of collagen and papain can be used as an alternative affordable enzyme.

Abstract

Kasus stunting sudah menjadi permasalahan nasional, hampir seluruh wilayah Indonesia mengalami permasalahan yang sama, tak terkecuali di kabupaten Pinrang. Prevalensi kasus stunting di Kabupaten Pinrang menyentuh angka 27,60%. Kondisi ini menjadi perhatian khusus pemerintah Kabupaten Pinrang untuk menekan kasus gizi buruk (stunting). Salah satu potensi sumberdaya perikanan yang dimiliki Kabupaten Pinrang adalah ikan gabus. Potensi sumber daya ikan gabus hanya di pasarkan dalam bentuk segar sehingga perlu adanya pemanfaaatan sumber potensi lokal di wilayah Kabupaten Pinrang.Tujuan dari kegiatan ini adalah untuk mendiseminasikan hasil penelitian produk berupa surabi ikan gabus yang memiliki kandungan nutrisi tinggi untuk mengatasi kasus stunting di Kabupaten Pinrang. Kegiatan ini meliputi kordinasi dengan mitra, persiapan teknologi dan produk yang akan didifusikan, pembuatan prototipe produk surabi, pembuatan leaflet produksi surabi, sosialisai dan demonstrasi pelatihan pembuatan surabi. Melalui kegiatan ini, diharapkan permasalahan stunting di Kabupaten Pinrang dapat teratasi serta masyarakat mampu secara mandiri memproduksi dan memasarkan produk Surabi ikan gabus. Selain itu, kegiatan diharapkan mampu membuka lapangan pekerjaan, meningkatkan pendapatan masyarakat, serta mendukung ketersediaan pangan sumber protein yang murah bagi masyarakat. Hasil pengabdian dikatakan berhasil yang ditandai dengan adanya peningkatan pengetahuan berdasarkan nilai pre-post test dan produk yang dihasikan pada saat pelatihan pembuatan produk menjadi kategori sangat baik. Kata kunci: Ikan gabus, pinrang, stunting, surabi.   ABSTRACT Stunting cases have become a national problem; almost all parts of Indonesia experience the same problem, not least in Pinrang District. The prevalence of stunting cases in Pinrang District touched 27.60%. This condition is a special concern for the Pinrang District government to suppress cases of malnutrition (stunting). One of the potential fisheries resources owned by Pinrang District is snakehead fish. The potential of snakehead fish resources is only marketed in fresh form, so it is necessary to utilize potential local sources in the Pinrang District area. These activities include coordination with partners, preparation of technology and products to be diffused, making prototype s of Surabi products, making Surabi production leaflets, socialization, and demonstrations of Surabi making training. Through this activity, it is hoped that the stunting problem in Pinrang district can be resolved and the community is able to independently produce and market snakehead fish Surabi products. In addition, the activity is expected to be able to create jobs, increase people's income, and support the availability of cheap protein sources for the community. The results of the service are said to be successful, which is marked by an increase in knowledge based on the pre-post test scores and the products produced during the training of making products are categorized as very good.
