Abstract

Shell of blue swimming crabs is an potential source of glucosamine as their producttion is abundant and not yet economically utilized. In tis study glucosamin was extracted from chitin and chitosan of blue swimming crabs shells by HCl of various concentrations (33%, 35%, 37%), and the products obtained were evaluated for rendement, quality characteristics. The results indicated that the highest glucosamine rendement was obtained from chitin extracted with 33% HCl, but the best purity, Lod and melting point was produced from chitosan extracted by 35% HCl. Compared to standar, glucosamin purity, Lod and melting point extracted from t kitosan was slightly lower. The purity, moisture, Lod and melting point of glucosamin extracted from chitosan of blue swimming crabs shell as well as standart was 65,543%; 5,208%, 0,856%; 186°C; and 95%; 5,194%; 0,767; 190°C respectively.

Abstract

This study aimed to utilize the fishbone waste from different types of fish, Pangasius sp., Clarias sp., Paraplotosus sp. as high calcium of bone flour and determine the quality characteristics of fishbone flour which was produced. The method used was a non-factorial Completely Randomized Design (CRD), with different types of fish bones as treatments which consisting of 3 levels: Pangasius sp. bone (Tp), Clarias sp. bone (Tl), and Paraplotosus sp. bone (Ts) with 3 replications and 9 units of experimental units. The parameters tested were organoleptic, proximate analysis, calcium, phosphorus, and whiteness degrees. The results showed that the Pangasius sp. bone flour (Tp) was the best treatment with characteristics of brilliant appearance, the distinctive aroma of fish was still felt, smooth and dry texture, as well as whiteness degrees that the best treatment in walking catfish bone flour with value 81.30%, referred to whiteness degrees of flour, it is below the range of 80-90%. Meanwhile, the best proximate value was obtained in Paraplotosus sp. bone treatment (Ts) with moisture, ash, fat, protein, carbohydrate, calcium and phosphorus content was 5.71%, 54.60%, 2.57%, 25.21%, 10.83%, 38.4%, and 33.9%.

Abstract

Asam lemak mata ikan tuna (Thunnus sp.) merupakan hasil ekstraksi dan hidrolisis dari lemak mata ikan tuna. Penelitian ini bertujuan untuk mengetahui karakteristik asam lemak mata ikan tuna dengan menggunakan pelarut yang berbeda. Hasil penelitian menunjukkan bahwa komposisi proksimat mata ikan tuna segar antara lain kadar air (69,98%bb), kadar abu (3,26%bk), kadar protein (33,81%bk), kadar lemak (60,86%bk), dan kadar karbohidrat by difference (2,07%bk). Hasil rendemen tertinggi terdapat pada asam lemak dengan pelarut N-heksana (10,18%), berbeda nyata terhadap pelarut eter (7,26%), berbeda nyata terhadap pelarut kloroform (7,67%), dan berbeda nyata terhadap pelarut etanol (2,77%). Selanjutnya hasil identifikasi kandungan asam lemak omega 3, 6, dan 9 menunjukkan bahwa asam lemak mata ikan tuna merupakan salah satu sumber asam lemak omega 3, 6, dan 9 yang dapat dikembangkan untuk meningkatkan nilai ekonomi hasil samping industri pengolahan ikan tuna.

Abstract

This study aims to investigate the inhibition zones of the chitosan against Pseudomonas aeruginosa. Carapace from T. anomala is used as raw material of chitosan. There were 5 treatments used, namely positive control (K0+), negative control (K0-), 5% chitosan (K1), 7% chitosan (K2) and 9% (K3) chitosan. The carapace was taken and then washed, dried, refined, demineralization, de-preoteinated, deasitelation and was tested using double layer method, discs and well diffusion. The proximate carapace test results were as follows, water content was 68.18 % gross wight (gw), moisture content 11.77 % dry wight (dw) protein content, 2.35 %dw fat content, 84.43 %dw ash content and carbohydrate content was 1.45 %dw. The chitosan of T. anomala characteristics were yellowish white flakes, odorless and tasteless with yield value, moisture content, ash content, mineral content (Ca, Fe, K, Na, P) and the degree of deacetylation 27.51 %; 7.31 %gw; 3.40 %dw; 12.17 mg/L; 4.90 mg/L; 3.40 mg/L; 5.49 mg/L; 0.27 mg/L; and 73.43 % respectively , Results on antimicrobial sensivity tests using double layer, disk blank and well diffusion. Shown clear zone, 13.87 mm, 11.34 mm and 14.62 mm. these values indicate that the antimicrobial effect of the chitosan is strong.

Abstract

Senyawa karaginan hasil ekstraksi dari rumput laut jenis Eucheuma adalah suatu fikokoloid yang merupakan senyawa polisakarida serat makanan. Penelitian ini bertujuan untuk mengetahui potensi kemampuan kappa karaginan dari rumput laut merah (Eucheuma cottonii) sebagai antioksidan dan inhibitor enzim α-glukosidase menggunakan metode FRAP dan secara in vitro. Hasil penelitian menunjukkan bahwa komposisi kimia E. cottonii kering adalah kadar air (14,23%), kadar abu (38,63%), kadar protein (5,12%), kadar lemak (0,81%), kadar serat kasar (22,18%), dan kadar karbohidrat (32,47%) sedangkan untuk hasil penelitian E. cottonii yang diekstraksi dengan larutan Kalium hidroksida (KOH) 8% menjadi kappa karaginan meliputi karakterisktik kimia adalah kadar air (8,97%), kadar abu (24,76%), kadar abu tidak larut asam (0,93%) dan kadar sulfat (24,50%), karakteristik fisik meliputi rendemen (52,00%) dan viskositas (52,53 cP). Hasil kappa karaginan E. cottonii dibagi menjadi 3 (tiga) kosentrasi yakni (3%, 5% dan 10%). Aktivitas antioksidan paling tinggi penelitian ini terdapat pada kosentrasi 10 g (0,0643 mg TE/g) dengan persen inhibishi enzim α-glukosidase (58,5085 mg/mL) dibandingkan dengan kappa karaginan E. cottonii pada kosentrasi 3 g dan 5 g (0,0200 mg TE/g dan 0,0515 mg TE/g) dengan persen inhibshi α-glukosidase (38,6386 mg/mL dan 474474 mg/mL). Berdasarkan nilai IC50 kosentrasi 5,46 g/mL kappa karaginan E. cottonii telah memiliki potensi kemampuan sebagai inhibitor enzim α-glukosidase. Penelitian ini menunjukkan bahwa kappa karaginan E. cottonii memiliki potensi kemampuan sebagai antioksidan dan inhibitor enzim α-glukosidase.

Abstract

The objective of this research was to investigated the effect of soaking the fish in different water temperature on quality of surimi produced. Farm raised catfish weighing 300-400 g each, was filled, washed, ground and soaked into different chilled water temperature (5°C, 10°C, 15°C and 20°C) for 10 minutes, and made for surimi. The surimi were evaluated for gel strenght (fold and bite test), pH,  protein and ash. The Research was designed using a completely randomized design (CRD), and the difference between treatments were tested by Duncan test. The result indicated that the surimi prepared by soaking the fish in chilled water (15°C) was the best quality of surimi (fold value : 4,6 and bite value : 7,5). The composition of protein, fat and ash of surimi soaked in the chilled water (15°C) was 15.1 % , 0.4 % and 6.3% respectively.

Abstract

Penelitian ini bertujuan untuk mengetahui komposisi kimia pasta mata ikan tuna (Thunnus sp.). Metode penelitian terdiri dari dua tahap yaitu 1) preparasi mata tuna dan 2) analisis kimia pasta mata tuna. Parameter yang diamati pada tahap 1 adalah proporsi mata tuna dan pada tahap 2 dilakukan analisis kimia pasta mata tuna yaitu kadar air, abu, protein, lemak dan karbohidrat. Hasil penelitian menunjukkan bahwa pasta mata tuna memiliki nilai proporsi pada bagian mata tuna sebagai berikut: 91% daging dan cairan, 6% tulang keras, dan 2% lensa mata tuna. Rendemen pasta mata tuna adalah 94%. Komposisi kimiawi yang terkandung dalam pasta mata ikan tuna adalah sebagai berikut: kadar air 64,84% (bb), kadar protein 20,83% (bk), kadar abu 2,99% (bk), kadar lemak 73,89% (bk) dan kadar karbohidrat 2,33% ( bk).

Abstract

ABSTRACTThis research was conducted from May to June 2014 in asam strait. Mekarsari Village Merbau sub district Meranti Islands regency. This research aimed to analyze the quality ofthe waters around the disposal of liquid waste of sago processing plantin waters of asam Strait and obtained the economic view of traditional fishermen in Mekarsari village that fishing in the waters of the asam Strait. The method used in this research is a survey method, while to know the economic of fishermen in Mekarsari Village who fishing in the asam Strait, conducted interviews to all of the fishermen that there are 27 people, based on a list of questions that have been made. The result of the study show that some of water quality parameters in the asam Strait of Mekarsari village has exceeded the quality standard based on the Ministry of environmental No.51 of 2004 such as TSS, turbidity, nitrate, ammonia and BOD5. Based on the observations of the macrozoobenthos were found during research in asam Strait of Mekarsari Villages hows that, over all asam strait were moderately polluted with macrozoobenthos diversity index < 3, while the third stations showed heavily polluted conditions with the discovery of macrozoobenthos Capitella sp. Fishermen economic based on the data of fishing income during the study showed greatly a decrease from year to year.

Abstract

This research was conducted from March to June 2018 in the waters of Batang Kuantan river subdistrict Gunung Toar. This study aims to analyze the consentration of Hg, Cr, Cu and Zn in water, sediment and scallop (Pilsbryoconcha exilis) and analyze the correlation of consentration Hg, Cr, Cu and Znbetween stasion to water, sediment and scallop in Batang Kuantan River, analyze the pollutan of status heavy metal and to calculate the safety limit in consuming the scallop from the river and effect social economy of society in subdistrict Gunung Toar. Sampling was done at four stasions and analyize of heavy metals concentration was performed by CV-AAS. The result of the study showed that the consentration heavy metals between stasions varied of the river was not significantly different (p>0.05). The average consentration of Hg, Cr, Cu and Zn in water were 0,0904; 0,5910; 0,1342; 1,0210 mg/L and in sediment 0,0380; 0,1525; 0,0090; 0,0409 πg/g, while in scallop 0,0001; 0,0107; 0,0022; 0,1012 πg/g. Havy metals consentration in water, sedimen and scallop shows positive correlations, except Cr. The MPI velue of Batang Kuantan river water was 0,0040 witch was still relatively very low. The heavy metals concentration in water has exceeded the quality standard while in sediment value of (ERL/ ERM) showed logam Hg, Cr, Cu and Zn is still below the value of ERL/ERM. Based on metal in the value of the Geoaccumulation Index (Igeo) logam Hg showed the light contaminated category while Cr, Cu and Zn not yet pollutan category. Based on the calculation of PTWI, it is recommended to consume the scallop from Batang Kuantan river not more than 4480,00 kg/week (Hg), 601,869 kg/week (Cr), 435555,6 kg/week (Cu) and Zn 19358,02 kg/week (Zn). Effect social economi of society to be activity of PETI showed Indexs Participant Respondent (IPR) to environment that is 64,76, economy that is 58,68 and society that is 43,72.

Abstract

Environmental, behavioral, health service, genetic and demographic determinants of health that can affect people’s health. The environmental change triggered by global warming and greenhouse effect is happening can include icreased temperature, rainfall and humidity. Dengue Hemorrhagic Fever (DHF) is a vector disease related to climate change and population density. The high population density could transmitting the virus from one person to other person in the vicinity. The purpose of this research is to describe of the DHF with a spatial analysis in Pekanbaru city. The design of this research is an ecological study to describe of temperature, rainfall and humidity to the incidence of DHF and population density using spatial analysis. The results showed the existence of spatial analysis indicate areas with high population density were not found in high cases of DHF. Other risk factors statistically not associated with DHF are temperature (p=0.54, r=0.105), rainfall (p=0.63, r=0.083) and humadity (p=0.41, r=0.083).
