Abstract

Coffee is a plantation that produces waste in its processing such as coffee seed waste. Farmers do not know the nutritional content of coffee seed waste is the cause of the waste not being used as animal feed. Coffee bean waste has high water content and caffeine which reduces the cattle's palpability. The solution is to use coffee seed waste silage technology. The method used in community service programs is by approaching, interviewing, exploring problems, and finding solutions to problems. Learning methods using books on how to make silage, providing brochures, banners, and shows that interest farmers. Outputs of this community service program; 1) Increasing the community who use plantation waste as animal feed to reduce feed costs 2) Development of integrated business concepts between livestock and logging. 3) Increased knowledge and skills of farmers 4) Utilization of coffee bean skin waste can reduce environmental pollution. The results that have been obtained are based on observations of the indicators, namely an increase in the number of farmers utilizing coffee fruit husk waste as animal feed, increased knowledge of farmers, increased integrated business cooperation between livestock and plantations, and decreased pollution of environmental waste.

Abstract

The Sweembath Bahapal baths were built in 1930 by the Dutch government by employing plantation workers. This bathhouse was used as a place of entertainment by the Dutch. Currently, the management of the Sweembath tourism area has been handed over to the local community as the manager of village tourism. The preliminary survey shows the need for further development so that it is expected to improve the welfare of rural communities. Some of the problems that arise are related to the availability of infrastructure and facilities, as well as lack of promotion, which are inhibiting factors for the development of this tourism potential. The objective of the development of the Naga Sopa "Sweembath" Tourism Village, Bandar Huluan District, Simalungun Regency is to create community welfare. These are: Repairing road structuring facilities in the sweembath tourist area to increase the number of tourism visits that can improve the welfare of the community. The results of the activities carried out by USU's LPPM were road arrangement (paving blocks) and construction of a canopy.

Abstract

Pangium edule or keluwak is a local spice that can extend the shelf life of livestock products because it contains antimicrobial compounds. This study aimed to determine the effect of marination using Pangium edule on the microbiological and organoleptic quality of lamb. This study used a factorial completely randomized design to treat Pangium edule concentration and shelf life of 3 replications each. Lamb meat was marinated using Pangium edule extract 0%, 3%, 6%, and 9%, then stored at 12 hours, 24 hours, and 36 hours at room temperature. The results showed that the longer the meat's shelf life, the microbial growth also increased, but marination using Pangium edule resulted in lower microbial growth than without treatment. The treatment of lamb marination with 3% and 6% Pangium edule extract showed the lowest microbes and was very significantly different from lamb without treatment for 36 hours. Its means that the antibacterial compound in Pangium edule can inhibit microbial growth and is still by the standards set by SNI compared to the control. Marination using Pangium edule extract during the shelf life also significantly affected the panelists' acceptance level, namely aroma, taste, tenderness, and color. Organoleptic scores, namely smell, taste, tenderness, and color at 6% to 9% with a shelf life of 36 hours, are still in a fairly good range. Marination using Pangium edule 6% can maintain the microbiological and organoleptic lamb quality for 36 hours.

Abstract

A method to improve the physical quality of culled chicken meat is required due to the tough texture and faint color of culled chicken meat. High protein content in culled chicken meat makes it easy to experience quality degradation. One of the methods to maintain the quality of post-harvest chicken meat is using spices. Gelugur acid (Garnicia atroviridis) is a spice for cooking spice, sweets, herbs, deodorizing fresh fish, and even cleansing fish before it proceeds into the processing stage. This study aimed to determine the concentration of Garcinia atroviridis which is effective to improve the physical quality of culled chicken meat. This study used a randomized design with 4 treatments and 5 replications. The treatments consisted of T0: without marination using Garcinia atroviridis (as control), T1: marination in 50 g of Garcinia atroviridis + 1000 mL aquadest, T2: marination in 50 g of Garcinia atroviridis + 750 mL aquadest, T3: marination in 50 g of Garcinia atroviridis + 500 mL aquadest. The parameters were the physical quality of meat consisting of meat pH, water holding capacity, tenderness, cooking loss, drip loss and meat color. Based on the results of the study, Garcinia atroviridis marinade had significant effect (P <0.05) on the pH value of the meat, cooking loss, drip loss, tenderness, water holding capacity, and meat brightness. It was concluded that the marination of meat at concentration of 50 g of Garcinia atroviridis + 1000 mL aquadest (T1) was effective in maintaining the pH value, reducing meat drip loss, increasing water holding capacity, increasing tenderness, brightening the color of the meat and maintaining the freshness of the refined culled chicken meat. Marination of meat in concentration of 50 g Garcinia atroviridis + 750 mL aquadest (T2) was also effective in reducing cooking loss of culled chicken meat.
