Sample taking was picked up by purposive sampling which 2 sample were taken from each 5 traditional market in Padang, consist of Bandar Buat market, Gaung market, Lubuk Buaya market, Simpang Haru market, and Siteba market.Bacteriological testing is then performed with the steps :1.estimation test ( presumtive test ),2 . confirmation test ( confirmed test ) and 3 . completion test (completed test ) using the MPN method (Most Probable Number) by using a combination of 5:1:1. From the research, results obtained that minced red chili sample contain bacteria with the range number 43 x        cell/ml - 157 x         cell/ml. Minced red chili sample from five traditional market in Padang city have coliform bacteria MPN values range from 12.0 to 240.0 ml sample, and E. Coli bacteria from 7.5 to 240.0 cells / 100 ml sample. Concluded that minced red chili that sold in some traditional market in Padang city is generally not suitable for consumption because it contains E. coli > 3 colonies / g and coliform bacteria > 100 colonies / g.

Contamination by bacteria in the food can still occur, most potential contamination is suspected bacterium Escherichia coli. The study was descriptive, with no way of seeing whether or not the bacteria Escherichia coli and coliform in the samples milled ginger. The method used to determine the bacteriological quality of minced ginger is the MPN method consists of three stages the estimation test, test and test assertion perfection. This research was conducted in the Laboratory of Microbiology Department of Biology, State University of Andalas Padang. From the test results on the prediction turns out almost all positive samples as well as the confirmation test and the test of perfection, to obtain MPN Index 0-240 cells / ml. It is proved that ginger rollers are sold in Pasar Raya Padang poor quality and not qualified to be consumed.

Abstract

ABSTRACK Lemang beras hitam (Oryza sativa Siarang) of Kenagarian Talang Babungo is one of money distinctive Minangkabau foods. Lemang moldy left to get a different taste from the usual lemang. This fungus occurs on chemical procces aided by the amylase enzyme that  functions  to  decompose starch  into  to  units  of simple sugars. Research  has  been performed to determine the activities of fungal amylase enzyme which is isolated from black rice lemang. Researcher was performed in microbiology laboratory of match and science faculty of Andalas Univercity Padang from March from to April in 2013. The researcher used descriptive metode by growing the fungal isolates on rice flour medium (ATB) that aims to identify fungal amylase enzyme which is characterized by the formation of clears areas surrounding the fungal colony. From this research has been successful to rejuvenert the five isolates of the fungus. Amylolitik index is the highest is Penicillium expansum (1,5) and amylolitik index is lowest is Mucor racemosus (0,5).

Results obtained from this study tumeric samples containing bacteria with a total range of 23 x 105  cells / ml - 155 x 105  cells / ml. Highest total bacteria recovered in tumeric sold at Gaung market in sample 1 while the lowest total bacteria recovered in tumeric Siteba sold in markets in the sample 1. Tumeric samples from five traditional market in Padang city has coliform bacteria MPN value range from 2.0 to 240.0 ml sel/100 and bacteria E. coli from 4.0 to 240.0 ml sel/100. This proves that tumeric being sold from a number of traditional markets in the city of Padanggenerally not eligible consumed because they contain bacteria E. coli > 3 colonies / g and coliform bacteria >100 colonies / g.

Abstract

Abstract Tomato (Lycopersicum esculentum Mill) is one of the horticultural plants was found around Peru, Ecuador, Bolivia and quickly spread in to all of world. Tomatoes consist of several nutrients such as vitamins A and C. Tomatoes havealso high content of water and soft texture, therefore tomatoes can not be saved for a long time, they are easy to be damage after harvesting caused by handling and transporting. They are also easy to be contaminated by microorganism such as fungus and bacteria. It will make the tomato decomposed and decayed. The purpose of this research is to inventarisation of fungus found on tomatoes were sold in some markets in Padang.  This  research  has  done  in  laboratory  of Microbiology of the Department  o f Biology,  faculty of Mathematics and Natural Sciences Faculty, Andalas University since February until March 2014. The research used descriptive survey method, and the samples were collected by purposive sampling. The fungi isolated in medium PDA and  characterised  macros- and  microscopicaly for the identification. The result  found three species of fungus, they are Aspergillus niger, Aspergillus parasiticus, Penicillium italicum and Mucor spÂ
