Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh jenis dan proporsi tepung jagung terhadap sifat daya ikat air dan organoleptik dari nugget ayam kampung. Penelitian ini menggunakan rancangan acak lengkap faktorial yang terdiri atas 2 faktor. Faktor pertama ialah 5 (lima) jenis tepung jagung, yaitu: jagung kuning (J1); jagung pulen (J2); jagung ungu (J3); jagung Provit A1 (J4); dan jagung provit A2 (J5). Faktor kedua adalah prosentase penggunaan tepung jagung terhadap berat daging ayam yang dipergunakan, yaitu 10% (T1); 20% (T2); 30% (T3) dan 40% (T4). Dari kedua faktor tersebut diperoleh 20 kombinasi perlakuan, dimana setiap kombinasi perlakuan diulang sebanyak 3 kali. Pengaruh perlakuan terhadap sifat daya ikat air dianalisis menggunakan analisis kergaman, dan  dilanjutkan dengan uji beda nyata terkecil (BNT). Data kualitas organoleptik di analisis secara statistik deskriptif.  Variabel yang diukur meliputi analisis sifat fisik daya ikat air, dan organoleptik, meliputi: warna, tekstur dan kekenyalan, cita rasa, dan penerimaan umum. Hasil penelitian menunjukkan, uji daya ikat air dari nugget ayam kampung berada pada kisaran 47,75 – 61,64%, dimana perlakuan J2T3 (jagung pulen taraf penggunaan 30 %) memiliki prosentasi daya ikat air terrendah, sedangkan yang tertinggi pada perlakuan J5T4 (jagung provit A2 taraf penggunaan 40%).  Penggunaan bahan pengisi dari kelima jenis tepung jagung (J1, J2, J3, J4 dan J5) pada taraf 40 g (T1) diperoleh daya ikat air antara 50,02 – 55,36%. Hasil uji organoleptik terhadap nugget ayam kampung, menunjukkan bahwa kombinasi perlakuan J4T1 (jagung Provit A1 dengan taraf 10%) memperoleh nilai tertinggi untuk warna, tekstur, kekenyalan, dan cita rasa, dengan skor masing-masing 6,43, 5,69, 5,83 dan 5,86, sedangkan untuk kategori “penerimaan umum”, nilai tertinggi diperoleh pada perlakuan J5T3 (jagung Provit A2 dengan taraf 30%), dengan skor 6,00. Dari penelitian ini dapat disimpulkan, bahwa penggunaan bahan pengisi tepung jagung Provit A1 dengan taraf 10% (40 g) memberikan hasil nugget ayam kampung dengan karakteristik kualitas nugget ayam kampung yang terbaik.

Abstract

ABSTRACT The research about production of Mozzarella cheese used lime juice as an acidifier was aimed to study its potency on physical quality of Mozzarella cheese. The method used in this research was experiment and designed with completely randomized design. The treatment was repeated 4 times, there were namely: K1 = 1.9 %, K2 = 2.1 %, K3 = 2.3 %, K4 = 2.5 %, K5 = 2.7 %, and K6 = 2.9 % (v/v), respectively. Variables measured were cheese yield, meltability, stretchability, and elasticity. Analysis of variance showed that the treatment didn’t give significantly difference effect (P>0.05) on cheese yield, stretchability, and elasticity. The treatment gave significantly difference effect (P<0.05) on meltability. The everage of cheese yield was 10.73 – 11.72 %, the everage of meltability was 9.18 – 10.90, stretchability 1.77 – 2.18, and elasticity 38.60 – 60.71. According to the results and discussion, the research could be concluded that the best consentration was 1.9 %.   Keywords: physical quality, Mozzarella cheese, lime juice, acidifie

Abstract

            The Objective of this research was to determine the best concentration of addition coffee flower honey to kefir based on total plate count, lactic acid bacteria, acidity, and pH value. The materials used in this research were honey kefir made from cow’s milk, kefir grains, and coffee flowers honey. The method used in this research was experimental with Completely Randomized Design by 4 treatments and 4 replications and continued by using Duncan’s Multiple Range Test. The result showed that the effect of addition coffee flowers honey was not significantly different (P&gt;0.05) on total plate count, lactic acid bacteria, acidity, give highly significant different (P&lt;0.01) on pH value. Addition 20% of  coffee flower honey was the best treatment with quality of total plate count 6.21 ± 0.60 log CFU/mL, total lactic acid bacteria 6.16 ± 0.14 log CFU/mL, acidity 0.76 ± 0.11 % and pH value 3.596 ± 0.021. Further study is needed to figure the storability of honey kefir.

Abstract

Stevia is one of natural sweetener a substitute for sugar low calorie. Stevia start widely used as many consumers want sweetening healthy. Stevia leaf powder was used to develop an kefir as sweetener replacer to sugar. The objective of this research was to determine the best percentage of using stevia leaf flour as substitution ingredient on kefir based on total sugar, acidity, total solids and sineresis kefir. The materials research were fresh milk, kefir grain, and stevia leaf flour. The research method was using experimental design with four treatments and four replications. The treatments were P1 0.5 % stevia leaf flour, P2 0.75% stevia leaf flour P3  1% stevia leaf flour and P4 1.25% stevia leaf flour. The data were analyzed by ANOVA and if there were significant effect then would be continued by Duncan’s Multiple Range Test (DMRT). The result showed that substituting sugar using stevia leaf flour gave highly significant different effect (P&lt;0.01) on total sugar, acidity, total solids and sineresis kefir. It can be concluded that the kefir with the used 1.25% stevia leaf flour gave the best result with the total sugar was 6.82 , acidity was 0.55%, total solids was 11.75%, and sineresis was 23.75%.

Abstract

This study aims to describe and explain the form of language errors in the field of phonology, morphology, and syntax in the exposition essay of the student of X MIPA SMA N 4 Surakarta and describe the causes of language errors and efforts that can be done by teachers and students so that the Indonesian language error in the exposition essay by the students of X MIPA SMA N 4 Surakarta can be minimized. The research uses qualitative method with case study type. Research data in the form of Indonesian language error obtained through the exposition essay by the student of X MIPA and the data source used are documents and informants. Data collection technique conducted through observation, interviews, dan test. Data validity test used is triangulation method, informant review, dan intrarater. The result of this research are description of: (1) forms of language errors in the phonological field include capitalization misuse, misuse of punctuation, particle error, rewrite error, typographic error, and typing error; (2) the form of language error in the morphological field include mistakes of preposition, mistake of word formation, and error of pleonasm; (3) the form of language error in the syntax field include the phrase structure dan sentence structure; and (4) the factors causing the Indonesian language error not only comes from the students but also because of teacher and efforts that can be done to minimize language errors.

Abstract

This is collaborative action research wich carried out toward student of SMP Nergeri 16 Bandar Lampung. The aim of this research was enhancing the self learning motivation by using Problem Based Intruction (PBI) model. The research conducted in 2 cycles, using the criteria of teacher?s performance and student?s ability toward biological learning. The data awas then analized and interpreted to show the improving teacher performance for each cycle. The result showed that the teacher was a good fascilitator (score 2,98 in cycle 1 and 2,93 in cycle), so it?s able to enchace the self learning motivation of student, indicated with the increasing point of the readiness of study, the higly motivated in answer and question interaction, ability in answering the questions, giving opinion, creative, and highly initiative to study. That self learning motivation then gives rise to the average class mark even its equitability thus showed the better teaching and learning processes.   Key Words : Problem Based Intruction (PBI), Self Learning motivation

Abstract

This article will describe about spiritual, cultural and social activity in Masjid Agung Kraton Surakarta Hadiningrat. There are Grebeg Besar, Grebeg Pasa, Grebeg Mulud and Malem Selikuran ceremony. The Javanese community always do religiocity ritual that aim to get peace and harmony. Islam teaching able and Javanese culture value more together. Local identity become tool dakwah Islamiyah. Multiculturalism and tolerance spirit give enlightmen to environment. Traditional wisdom can be seeked in the big mosque of Kraton Surakarta that become central religious activity. Everyone should study traditional wisdom as symbolized in herritage of Masjid Agung Kraton Surakarta. Thereare much teaching that can be used as nation character building in global era.

Abstract

Wangsalan adalah puisi Jawa yang menyampaikan pesan secara simbolik. Wangsalan dapat diklasifikasikan kedalam patriotism, percintaan, kerja sama, dan kerja keras. Nilai nasionalisme menggunakan istilah praja, negara, dan bangsa. Roman percintaan berhubungan dengan perasaan yang dinyatakan dengan tanda kata-kata. Sistem kerja sama dalam budaya Jawa bertujuan untuk mendapatkan harmanisasi social. Dorongan kerja keras dinyatakan dengan wangsalan, agar setiap orang berhasil hidupnya. Kata kunci: wangsalan, tanda, hidup. Abstract Wangsalan is Javanese poetry that have message simbolically. Their classification devided as patriotism, love, joint, and hardwork. Nationalism value use praja, negara, bangsa idiom. The love romance connect with feeling that said by signal words. Abstract

The main safety parameters of Multipurpose Reactor?Gerrit Augustinus Siwabessy (RSG-GAS) have never been evaluated periodically and neutronically require to be evaluated in terms of stuck rod reactivity, shut-down margin and temperature reactivity coefficient are treated by experiment. Meanwhile, power peaking factors and maximum fuel burn up are treated by calculations. The diffusion method did the calculation using the computer code. Safety parameters are very important aspects for the operation and design improvement. The results of the experiment and calculation about the safety parameters of RGS-GAS core are utilized for safety evaluation as part of a research reactor operation Periodic Safety Review (PSR). It presents reactor calculations as a method for their determination assuming use of computer codes such as WIMSD-5B using ENDF.BVII.0 and BATAN-FUEL. According to the experimental data and calculation, neutronic safety parameters have met the safety analysis report such as reactivity coefficient is negative and met the shutdown margin at stuck rod condition nothing has violated the safety margin. The results can be used as the periodic safety review for renewal operation license from Nuclear Energy Regulatory Agency of Indonesia (BAPETEN) as the regulator body. These results also can be used as a reference for new research reactor MTR type advanced design in the future.
