Abstract

Formalin berfungsi sebagai bahan pengawet yang dilarang penggunaannya pada makanan, tetapi kenyataannya formalin masih banyak ditemukan dalam berbagai produk makanan.Salah satunya pada buah Kiwi (Actinidia deliciosa) yang berasal dari luarnegara.Buah kiwi(Actinidiadeliciosa) merupakan tanaman yang banyak mengandung senyawa fitokimia seperti flavonoid, triterpenoid, dan quinone.Penelitian ini bertujuan untuk menentukan kadar formalin pada buah kiwi yang dijual di supermarket Kota Pekanbaru. Penetapan kadar formalin pada penelitian ini menggunakan metode spektrofotometri UV-Vis. Sebelum dilakukan penetapan kadar formalin pada sampel buah kiwi maka dilakukan uji kualitatif dengan pereaksi Schiff. Penelitian ini dilakukan di Laboratorium Makanan dan Minuman Universitas Abdurrab Pekanbaru pada bulan Februari – Maret tahun 2016. Hasil penelitian menujukan rata-rata kadar formalin yang diperoleh dari buah kiwi dari IT, NZ, dan CH, yaitu 39,5462 ppm, 29,0176 ppm, 29,8693 ppm.

Abstract

In this paper we studied the bioactive compounds of Flavonol-D-alanil D-alanin dekarboksipeptidase receptor interactions In silico. First, prepared three dimensional structure of D-alanil D-alanin dekarboksipeptidase as receptor. Preparation of fourth bioactive compounds of flavonol which will be as ligands, klokasilin and D-alanil D-alanin as a comparison. The fourth bioactive compounds of flavonol, klokasilin and D-alanil D-alanin were docked with D-alanil D-alanin dekarboksipeptidase until energy values were obtained. The fourth bioactive compounds of flavonol had lesser binding energy values than D-alanil D-alanin, Quercitrine and rutin also predicted to have greater binding energy and binding affinity than klokasilin (antibiotic) and D-alanil D-alanin (nature ligand).

Abstract

Papaya (Carica papaya L) is a very popular and important fruit in the tropical part where as a nutritious plant that can cure diseases. every part of papaya plants can be utilized start, roots, stems, leaves, fruit and even seeds of fruit. Traditionally papaya seeds can be used as a roundworm drug indigestion, diarrhea, skin diseases, colds, and as a source to get oil with fatty acid content. This research uses extract and steep seeds on papaya fruit with Escherichia coli test bacteria, Salmonella typhi, and Staphlycoccus aureus. From this research we get the result of inhibitory power : Escherichia coli at concentrations of 20%, 40%, 60% 80% and 100% were 8.72 mm; 9.53 mm; 10.61 mm; 10.99 mm; and 12.19 mm. Salmonella thypi at concentrations of 20%, 40%, 60% 80% and 100% were 7.07 mm; 8.63 mm; 9.54 mm; 9.78 mm; and 10.16 mm. Staphylococcus aureus at concentrations of 20%, 40%, 60% 80% and 100% was 6.4 mm; 6.8 mm; 7.8 mm; 7.9 mm; and 10.1 mm.

Abstract

Traditionally, ketapang plants are widely used by people to treat diseases of the skin such as scabies, ringworm, and other skin diseases caused by bacteria and fungi. Phytochemical screening on ethanol extract and ketapang leaf extract that grows in Pekanbaru City has never been done. The purpose of this study was to identify active compounds in ethanol extract and extract fraction of ketapang leaves that grew in Pekanbaru City. Based on phytochemical screening results, it is known that ethanol extract of ketapang leaves contains alkaloids and flavonoids, in the hexane fraction contains steroids and ethyl acetate fractions contain flavonoids.

Abstract

Bee pollen memiliki kandungan bahan kimia yang kompleks dan beragam membuat bee pollen mempunyai khasiat yang bermacam-macam, salah satunya adalah sebagai antioksidan. Bee pollen merupakan salah satu bahan yang mengandung antioksidan alami berupa flavonoid, polifenol dan karotenoid. Kandungan Antioksidan berfungsi sebagai menetralisasi radikal bebas, sehingga tubuh terlindungi dari berbagai macam penyakit degeneratif dan kanker. Adapun tujuan dari penelitian ini adalah untuk mengetahui aktivitas antioksidan (AA) ekstrak etanol bee pollen lebah trigona (Trigona itama) menggunakan metode β-karoten bleaching secara spektrofotometri Uv-Vis. Hasil penelitian menunjukkan bahwa ektrak etanol bee pollen lebah trigona (Trigona itama) memiliki nilai aktivitas antioksidan (AA) sebesar 66,2% (intermediate) sedangkan asam askorbat sebagai kontrol positif sebesar 97,7% (antioksidan kuat). Dari hasil penelitian dapat disimpulkan bahwa ektrak etanol bee pollen lebah trigona (Trigona itama) memiliki khasiat sebagai antioksidan dengan golongan aktivitas antioksidan (AA) intermediet (sedang).

Abstract

Bahan pangan  rentan untuk ditambahkan zat kimia berbahaya seperti formalin, apalagi pada bahan pangan yang kemungkinan banyak mengandung kadar air sehingga mudah busuk dan tidak tahan lama terhadap penyimpanan. Pemeriksaan formalin dalam bahan pangan dapat dilakukan dengan cara analisis kualitatif yang tidak memerlukan waktu lama dan lebih praktis tetapi jenis pereaksi yang dapat digunakan sangat banyak. Sehingga dibutuhkan pereaksi yang lebih selektif dan sensitif terhadap bahan pangan. Tujuan penelitian ini adalah untuk mengetahui selektifitas dan sensitifitas pereaksi pada bahan pangan. Penelitian ini dilakukan secara analisis deskriptif kualitatif dengan menggunakan pereaksi formalin (Schiff, Scryver, KMnO4, Fehling, dan Nash)  terhadap sampel bahan pangan yaitu daging ayam, tahu, ikan asin, dan mie basah yang telah diberi formalin dengan variasi konsentrasi 0,01; 0,1; 1,0; 10; 100; dan 1000 ppm. Dari hasil penelitian analisis kualitatif terhadap formalin menunjukan pereaksi yang selektif untuk identifikasi formalin pada keempat bahan pangan adalah pereaksi Schiff, KMnO4, Scryver, Nash. Pereaksi yang sensitif terhadap formalin pada keempat bahan pangan hingga 0,01 ppm adalah Schiff dan KMnO4.Sedangkan pereaksi Scryver dan Nash hanya mampu mendeteksi formalin hingga konsentrasi 100 ppm.

Abstract

Usaha Mikro Kecil dan Menengah (UMKM) has recently become a trend in the field of entrepreneurship. It becomes a business choice for beginners.  The variety of product types in UMKM increases the competition. Minimum stock and medium facilities become the obstacles in developing their business. Social media such as Instagram (IG) can be used as alternative media promotion due to their accessibility and low cost. This community services activity aims to educate the UMKMs in the village of Kubang Jaya about the use of social media Instagram as promotion product media. In addition, this activity also conducts training in taking product photos to increase the selling price. This activity uses a contextual approach method such as; a theoretical class and workshop. The participants can directly update their photo products on their own Instagram. The results of this activity were their understanding the Instagram as a marketing media.

Abstract

Trigona bee is an original animal of Asia and produces propolis. Propolis is used to cover hexagonal space cells in honeycomb, the main components of propolis are resins (flavonoids, phenolic acids and esters) or plant sap collected by bees. Propolis is useful as an antioxidant, antimicrobial, anti-inflammatory, anti-bleeding, anti-tumor, antihistamine, antifungal, strengthens blood vessels, and antiviral. This study aims to determine the inhibitory power of ethanol extract propolis from Trigona itama against Salmonella typhi, was conducted by diffusion method of disc diffusion in MHA media with chloramphenicol as a positive control and DMSO as a negative control. Extraction was carried out by maceration method using 96% ethanol. The extract obtained was diluted to 80%, 60%, and 40% using DMSO with multilevel dilution. The results showed the inhibition zone of the ethanol extract propolis Trigona itama against Salmonella typhi with concentrations of 80%, 60%, and 40% with an average of 14.44 mm, 12.28 mm, and 10.83 mm, and cloramphenocol of 24.31
