Abstract

Cabai rawit (Capsicum frutescens L.) merupakan salah satu rempah yang sangat penting untuk makanan, industry, dan obat. Oleh karena itu, eksplorasi cabai rawit sebagai antioksidan alami sangat dibutuhkan. Penelitian ini bertujuan untuk menentukan aktivitas antioksidan cabai rawit merah dari daerah Kawangkoan, Tomohon, dan Remboken menggunakan pengujian DPPH. Cabai rawit diekstraksi menggunakan teknik maserasi menggunakan etanol 70% sebagai pelarut dan pengujian antioksidan menggunakan spektrofotometer UV-Vis pada Panjang gelombang 517 nm. Aktivitas antioksidan ekstrak cabai rawit dari Kawangkoan, Tomohon, dan Remboken secara berturut-turut adalah 80,215 ± 2,486; 100,1 ± 0,140; and 97,136 ± 0,026 µg/mL. Berdasarkan analisis data statistic, terdapat perbedaan bermakna dari ketiga sampel ekstrak cabai rawit (P>0,05), yaitu ekstrak cabai rawit dari Kawangkoan berbeda dengan ekstrak cabai rawit dari Tomohon dan Remboken (P>0,05). Namun, aktivitas antioksidan dari ketiga sampel masih dalamkategori aktivitas antioksidan kuat (IC50 50-100 µg/mL), sehingga ektrak cabai rawit memili potensi sebagai antioksidan pada makanan dan industry farmasi.

Abstract

Pala (Myristica fragrans) tergolong rempah-rempah sebagai sumber antioksidan yang dapat mencegah radikal bebas yang dapat merusak sel tubuh. Penelitian ini bertujuan untuk menganalisis aktivitas antioksidan dari bagian biji dan daging buah pala (Myristica fragrans) yang di peroleh dari desa Ratatotok, Sulawesi Utara. Penelitian ini di lakukan dengan metode maserasi dengan etanol dilanjutkan pengujian menggunakan metode DPPH (1,1-difenil-2-pikrilhidrazi) pada konsentrasi 2, 4, 6, 8, 10 mg/L untuk menganalisa aktivitas antioksidan dengan spektrofotometer UV-Vis. Hasil dari penelitian ini memperlihatkan kadar antioksidan pada bagian biji dan daging buah pala aktivitas antioksidannya meningkat dan semakin tinggi konsentrasi senyawa maka semakin tinggi pula kadar antioksidan yang dihasilkan. Pada penelitian ini Nilai IC50 ekstrak etanol biji pala adalah 0,48128 µg/ml dan daging buah pala berturut-turut adalah: 0,48128 µg/ml dan 1,016082 µg/ml. Nilai IC50 yang lebih kecil mengindikasikan aktivitas antioksidan yang kuat dalam sampel ekstrak etanol biji lebih kuat dibandingkan ekstrak etanol dari daging buah pala.

Abstract

Pepper Elder (Peperomia pellucida L. Kunth) is one of the herbal plants that has the potential as an anticancer. Pepper Elder is a weed plant that grows wild in wet and humid environments but is rarely cultivated. Research on the Pepper Elder plant aims to determine the metabolite compounds contained in the plant, its potential as an anticancer, and the LC50 value. The research was conducted using an experimental method with the Brine Shrimp Lethality Test (BSLT) method. Extraction was carried out by maceration method to extract secondary metabolites. Through screening tests it is known that Pepper Elder contains alkaloids, flavonoids, tannins, saponins, and steroids. Tests were carried out with Artemia saline L. larvae at concentrations of 1000 µg/mL, 100 µg/mL, 10 µg/mL, 1 µg/mL with the potency obtained at the toxic level and LC50 value is 40.947 µg/mL.

Abstract

The nutmeg (Myristica fragrans) flesh extract has a strong antioxidant activity. Therefore, M. fragrans flesh can be developed for functional drinks which are sources rich in antioxidants good for the prevention and treatment of diseases such as cancer and cardiovascular diseases. However, the tannins' content can cause a bitter and sour taste. Therefore, the tannins content should be reduced by the addition of egg white. The purpose of this study is to find out the comparison of antioxidant activity between a combination of M. fragrans flesh extract with various concentrations of egg white and to correlate its antioxidant activities with tannin, total flavonoid, and total phenolic contents. The antioxidant activities were conducted on M. fragrans flesh extract by using DPPH and ABTS radicals. Tannin, total flavonoid, and total phenolic contents from M. fragrans flesh extract were also tested. The M. fragrans flesh extracts without addition egg white have a strong antioxidant in scavenging the stable free radical ABTS (89.980±0.480 µg/mL) and intermediate antioxidant in scavenging the stable free radical DPPH (105.669±0.102 µg/mL). It is followed accordingly by tannin, total flavonoid, and total phenolic contents, namely 14.034±0.100 %w/w TAE, 26.929±0.129 %w/w QE, and 53.164±0.129 %w/w GAE, respectively. Correlation of tannin, total flavonoid, and total phenolic contents, which inhibited DPPH and ABTS radicals had R2 values of about 89.23-97.63%. It showed that antioxidant activity is strongly influenced by the tannin, total flavonoid, and total phenolic contents. Therefore, precipitation from the tannin-protein bond caused antioxidant activities were decreased.
