Abstract

The objective of this study was to characterize modified Ihur sago starch as affected by treatment of acid hydrolysis. A completely randomized experimental non-factorial design was used in this research with four levels of treatments, i.e. native ihur sago starch, HCl concentrations of 1.1 N, 2.2 N, or 3.3 N, subsequently. Physical properties such as color, swelling power, solubility, and paste clarity were measured in this research. Moisture, ash, and amylose content were determined as chemical properties, while the resistant starch (RS) content was determined for its functional properties. Results showed that starch treated with acid hydrolysis caused changes to physical properties in comparison with native starch. These included higher (80.93–81.89) degree of whiteness (L*) than native starch (80.29), lower redness (a*) and yellowness (b*) than native (8.26 and 18.24) having the value of 5.13–6.34, and 13.21–15.39, respectively. Acid hydrolysis not only caused a decrease in swelling power (43.88–50.56%), but also an increase in solubility (8.92–12.34%) and paste clarity (74.70–77.73% T) compared to native starch. Higher moisture and ash content having the value of 8.72–15.01% and 0.22–0.37%, correspondingly but lower amylose (18.29–27.22%) and RS content were obtained by acid hydrolysis starch in contrast to native starch. The modified starch has improved heat stability with smaller breakdown viscosity, and setback viscosity less than native starch, and is easily to gelatinize. ABSTRAKPenelitian ini bertujuan untuk mengkarakteristik pati sagu ihur alami (PSIA) yang dimodifikasi dengan perlakuan hidrolisis asam. Rancangan yang digunakan yaitu rancangan acak lengkap non-faktorial dengan empat taraf perlakuan yaitu PSIA, hidrolisis asam (PSIHA) menggunakan HCl 1,1 N, 2,2 N, atau 3,3 N. Parameter yang diukur meliputi karakteristik fisik antara lain warna, kemampuan menggelembung, daya larut, kejernihan pasta, dan sifat amilografi. Karakteristik kimia meliputi kadar air, kadar abu, dan amilosa sedangkan karakteristik fungsional yaitu kadar pati resistan (RS). Hasil penelitian menunjukan bahwa perlakuan hidrolisis asam menyebabkan perubahan terhadap sifat fisik warna pati dimana nilai kecerahan (L*) pati hidrolisis asam (80,93–81,89) lebih tinggi dibandingkan PSIA (80,29). Sebaliknya nilai kemerahan (a*) dan kekuningan (b*) PSIHA (5,13–6,34 dan 13,21–15,39) lebih rendah dibandingkan PSIA (8,62 dan 18,24). Perlakuan asam juga menyebabkan kemampuan menggelembung PSIHA (43,88–50,65%) mengalami penurunan dibandingkan PSIA, tetapi meningkatkan daya larut (8,92–12,34%) dan kejernihan pasta (74,70–77,73% T). Untuk sifat kimia, kadar air pati sagu hidrolisis asam (8,72–15,01%) dan kadar abu (0,22–0,37%) relatif lebih tinggi dibandingkan pati alaminya, namun perlakuan asam menurunkan kadar amilosa (18,29–27,22%) dan kadar RS (0,06–0,37%). PSIHA memiliki kestabilan yang lebih baik selama pemanasan dengan breakdown viscosity yang lebih kecil dibandingkan dengan PSIA, serta kecenderungan teretrogradasi lebih rendah, yaitu ditunjukkan nilai setback viscosity yang rendah, dan lebih mudah mengalami gelatinisasi.

Abstract

Pisang tongka langit (Musa troglodytarum) mempunyai manfaat kesehatan serta kandungan gizi yang tinggi. Buah pisang tongka langit dapat dijadikan bahan setengah jadi berupa tepung yang dapat disubtitusi dengan tepung beras menjadi bubur instan. Bubur instan merupakan makanan berbasis sereal yang dapat dikombinasikan dengan buah agar memiliki nilai gizi yang lebih baik. Bubur instan dengan kualitas yang baik harus memiliki nilai gizi yang tinggi, bermanfaat bagi kesehatan, dan dapat diterima secara sensorik. Penelitian ini bertujuan untuk mendapatkan produk bubur instan dengan mutu organoleptik yang dapat diterima oleh masyarakat. Rancangan yang digunakan yaitu rancangan acak lengkap dengan empat taraf perlakuan perbandingan subtitusi tepung pisang tongka langit dan tepung beras yaitu 20%:80%, 40%:60%, 60%:40%, 80%:20%. Berdasarkan hasil penelitian bubur instan tersubtitusi pisang tongka langit 60%:40% menunjukkan rasa, warna, aroma, tekstur dan tingkat penerimaan secara keseluruhan yang disukai panelis.

Abstract

Instant porridge is sereal-based food that can be combined with fruits so it will contain better nutrition. To improve the nutrition value of instant porridge then substitute of one kind of banana originally from Maluku is Tongka langit banana. A good quality of instant porridge has a high nutrition and a best physical property. This research aims to characterize of the physical properties instant porridge that are substituted by Tongka langit banana flour and the rice flour. The design that is applied is completely randomized design with four levels of treatment in comparing the substitution between Tongka langit banana flour and the rice flour as follow 20%, 40%, 60% and 80%. According to the result of this research, the physical characteristic of instant porridge that are substituted by Tongka langit banana flour are bulk density (0.84-0.89 g/mL), water absorption index (3.49-4.05%), and water solubility index (0.02-0.04%).

Abstract

Tongka Langit banana (Musa troglodytarum) is one of the banana cultivar which is useful for health and has high nutrient content. It can be eaten raw and can be processed into various products. This research was aimed to study effect of tongka langit banana processing on its tannin content and other physicochemical changes result from those processes. A completely randomized design was used with five levels of treatment, i.e.: no processing, roasted tongka langit banana, fried tongka langit banana, boiled tongka langit banana, steamed tongka langit banana. Results showed that roasted tongka langit banana can reduce tannin content to the lowest of 0.155% and risen respectively by fried of 0.166%, boiled of 0.170%, and steamed banana of 0.171 %. Besides that, roasted tongka langit banana had sugar content of 9.49%, vitamin C of 2.76 mg, moisture content of 76.9%, ash content of 1.58% and pH value 5.2. Among all processing methods applied, roasted tongka langit banana resulted in better physichochemical properties.

Abstract

Tongka langit banana is one of the particular indigenous fruits in Maluku. Tongka langit banana contain high nutrients including pro vitamin A and has a lot of health benefits. However, it is also a perishable product, and would deteriorate if not processed or not completely consumed. Therefore, this banana should be processed into diverse products. It can be processed into intermediate product such as flour, which can be further applied in crackers making. Variables observed on crackers including taste, aroma, colour, texture and overall likeness. Results showed that crackers made from 40% banana flour and 60% wheat flour were mostly liked by panelists in terms of taste, colour, aroma, texture and overall likeness.

Abstract

However, it is also a perishable product, and would deteriorate if not processed or not completely consumed. Therefore, this banana should be processed into diverse products. It can be processed into intermediate product such as flour, which can be further applied in crackers making. This research was conducted in two stages. First stage was the making of tongka langit banana flour and the second was crackers making. The crackers were made from tongka langit banana flour and wheat flour having different ratios, i.e. 20 %: 80 %; 40 %: 60 %; 60 %: 40 %; 80 %: 20 %. Variables observed on crackers including moisture, ash, protein, fat, dietary fiber and carbohydrate contents, as well as organoleptic properties of taste, aroma, colour, texture and overall likeness. Results showed that ratio of banana flour to wheat flour of 40%:60% produced crackers with moisture, ash, protein, fat, fiber, and carbohydrate contents of 4.60%, 4.46%, 6.64%, 17.54%, 1.18% and 4.60%, respectively. In addition, organoleptic test revealed that crackers made from 40% banana flour and 60% wheat flour were mostly liked by panelists in terms of taste, colour, aroma, texture and overall likeness. Keywords: crackers, tongka langit banana ABSTRAK Pisang tongka langit kaya akan kandungan gizi antara lain mengandung provitamin A dan total karotenoid yang sangat tinggi. Namun pisang tongka langit mudah mengalami kerusakan jika tertunda pengolahannya atau tidak habis dikonsumsi, oleh karena itu perlu dilakukan upaya diversifikasi terhadap pisang tongka langit. Pisang tongka langit dapat diolah menjadi bahan setengah jadi berupa tepung yang dapat diaplikasikan menjadi produk crackers. Penelitian ini dilakukan dalam dua tahap, tahap I adalah pembuatan tepung pisang tongka langit dan tahap II adalah pembuatan crackers dari tepung pisang tongka langit dan tepung terigu dengan empat taraf perlakuan perbandingan subtitusi tepung pisang tongka langit dan tepung terigu yaitu masing-masing 20 %: 80 %; 40 %: 60 %; 60 %: 40 %; 80 %: 20 %. Pengamatan yang dilakukan pada crackers yaitu analisa kadar air, abu, protein, lemak, serat pangan, karbohidrat dan uji organoleptik yang meliputi rasa, aroma, warna, tekstur dan tingkat kesukaan secara keseluruhan. Hasil penelitian menunjukkan bahwa formula crackers tepung pisang tongka langit 40% : 60% memiliki nilai kadar air berkisar antara 4,60%, kadar abu 4,46%, protein 6,64%, lemak 17,54%, serat 1,18% dan karbohidrat 4,60%. Sedangkan uji organoleptik menunjukkan bahwa crackers tepung pisang tongka langit 40% : tepung terigu 60% memiliki rasa, warna, aroma, tekstur dan tingkat penerimaan secara keseluruhan yang disukai panelis. Abstract

Flakes made from tongka langit banana flour and corn flour are one of value-added diversified product of banana and corn. The aim of this research was to produce flakes made from tongka langit banana and corn flour with the exact formulation. A completely randomized experimental design with formulation of both flour was applied and was replicated twice. Results showed that the best treatment was found to be 20% banana flour and 80% corn flour. Flakes with this formulation were mostly accepted by panelists and had the moisture, ash, protein, fat, and carbohydrate contents of 5.12%, 3.65%, 3.37%, 1.78%, and 47.86%, respectively. Keywords: corn flour, flakes, tongka langit banana flour ABSTRAK Flakes berbahan dasar tepung pisang tongka langit dan tepung jagung merupakan salah satu produk diversifikasi dari buah pisang dan jagung untuk meningkatkan nilai tambah kedua komuditi tersebut. Tujuan penelitian ini untuk menghasilkan produk flakes dengan formulasi tepung pisang tongka langit dan tepung jagung yang tepat. Penelitian ini didesain menggunakan Rancangan Acak Lengkap Faktor Tunggal yaitu formulasi tepung pisang tongka langit dan tepung jagung dan diulang sebanyak dua kali. Hasil penelitian menunjukan bahwa perlakuan terbaik terdapat pada formulasi tepung pisang tongka langit 20% dan tepung jagung 80% yang dapat diterima oleh panelis dengan komposisi kimia sebagai berikut kadar air : 5,12%, kadar abu : 3,65%, kadar protein : 3,37%, kadar lemak : 1,78% dan kadar karbohidrat : 47,86%. Abstract

Tongka langit banana is one of the local fruits in Maluku which have a good potency for healthy however short shelf life. Fruit damaged is mainly caused by process of respiration and transpiration. One of the manipulations of this factors can be done by coating technique. The aim of the research was to find out the best coating on tongka langit banana used different gliserol concentration and observed the changes of physical and chemical on banana tongka langit during storage. This study used completely randomized design with one factor (RAL) is the glycerol concentration (1%, 3%, 5%). Data analyzed by analysis of variance and tested signification by Tukey. The observed parameter during the storage such as hardness, weight loss, and total soluble solids content. The result showed the concentration of glycerol significantly on hardness, weight loss, and total soluble solid. The best treatment in this research is gliserol concentration 3% be able to inhibit decrease of hardness, increase of weight loss and total soluble solid. Key words: tongka langit banana, cassava starch, edible coating ABSTRAK Buah Pisang Tongka Langit adalah salah satu jenis buah lokal di Maluku yang memiliki potensi yang baik untuk kesehatan namun mudah rusak sehingga umur simpannya pendek. Kerusakan buah terutama disebabkan oleh proses respirasi dan transpirasi salah satu cara untuk menekan transpirasi yaitu dengan aplikasi edible coating. Penelitian ini bertujuan untuk mengetahui konsentrasi gliserol yang terbaik dalam pelapisan buah pisang tongka langit, dan mengamati perubahan fisik dan kimia selama penyimpanan. Penelitian ini menggunakan Rancangan Acak Lengkap yang terdiri dari satu faktor yaitu faktor konsentrasi gliserol (1%, 3%, dan 5%). Data dianalisis dengan analisis ragam dan diuji lanjut dengan uji beda nyata jujur. Parameter yang diamati yaitu kekerasan, susut bobot, dan total padatan terlarut. Hasil penelitian menunjukkan bahwa konsentrasi pati ubi kayu berpengaruh terhadap kekerasan, susut bobot, total padatan terlarut. Pada penelitian ini, konsentrasi gliserol 3% yang terbaik karena mampu menghambat penurunan nilai kekerasan, kenaikan nilai susut bobot dan total padatan terlarut, sehingga dapat memperpanjang umur simpan buah pisang tongka langit. Abstract

Cassava peel has high nutrient content and has the opportunity to be processed into chips. Processing of cassava peel chips requires soaking treatment to produce a crisper texture. The purpose of this study was determining the right type of soaking solution to produce the best cassava peel chips. The result showed that the immersion treatment with CaCO3 solution produced chips with the best physical properties having the hygroscopic value, absorption capacity, expansion volume of 0.105g, 12.95%, and 10,05%, respectively. Organoleptically the chips were liked for its task (2.30), somewhat like for its colour (2.47) texture were liked (2.53) and overall the chips were liked (2.50) by panelist. The chips were also having a brown colour (3.03) and a crispy texture (3.13). Keywords: cassava peel, chips, soaking solution ABSTRAK Kulit ubi kayu memiliki kandungan gizi yang tinggi dan berpeluang untuk diolah menjadi keripik. Pengolahan keripik kulit ubi kayu memerlukan perlakuan perendaman agar menghasilkan tekstur yang lebih renyah. Tujuan penelitian ini untuk menentukan jenis larutan perendaman yang tepat untuk menghasilkan keripik kulit ubi kayu terbaik. Hasil penelitian menunjukkan bahwa perlakuan perendaman dengan larutan CaCO3 menghasilkan sifat fisik keripik terbaik dengan nilai higroskopis 0,105g, daya serap 12,95%, volume pengembangan 10,05 % dan berdasarkan uji hedonik menunjukkan rasa suka (2,50), warna agak suka (2,47), tekstur suka (2,53) dan overall suka (2,50) sedangkan untuk uji mutu hedonik menunjukkan warna coklat (3,03) dan tekstur renyah (3,13). Abstract

Tongka langit banana is one of specific local fruits in Maluku Province, and is potential to be developed due to its good nutritional contents. The purpose of this research was to determine the exact blanching time on the acceptance of tongka langit banana juice drink. An experimental research with different blanching time, i.e 5, 10, 15, and 20 minutes replicated twicw was applied in this study. Results showed that tongka langit banana juice drink treated with 5-minute blanching time had the best acceptance level sensorically, that is yellow in colour (3.23), had banana like taste (3.14), no off flavour aroma (1.46), had aroma almost like banana (2.86) and a little bit cloudy (2.17). Keywords: acceptance, blanching, fruit juice, tongka langit banana ABSTRAK Pisang tongka langit merupakan salah satu jenis buah lokal yang khas di Provinsi Maluku, dan berpotensi dikembangkan karena memiliki nilai nutrisi yang baik. Tujuan penelitian ini untuk menentukan lama blansing yang tepat terhadap daya terima minuman sari buah pisang tongka langit. Penelitian ini merupakan penelitian eksperimental dengan perlakuan lama blansing 5, 10, 15, dan 20 menit, yang diulang sebanyak dua kali. Hasil penelitian menunjukkan bahwa Minuman sari buah pisang tongka langit dengan perlakuan lama blansing 5 menit memiliki tingkat penerimaan terbaik secara organoleptik, yaitu warna kuning (3,23), berasa pisang (3,14), tidak beraroma langu (1,46), mendekati beraroma pisang (2,86), dan agak keruh (2.17).
