Abstract

Abstract        This study was aimed to determine the effect of different types of solvent extraction on the characteristics of sea cucumber(Holothuria atra)protein concentrates which includes yield, proximate, and total amino acids, and to determine the optimal type of solvent extraction in manufacture of sea cucumber protein concentrates. This research was carried out in 2 stages, namely 1) making of sea cucumber meat flour, 2) making of protein concentrate of sea cucumber meat. The treatment was different type of solvent extraction(ethanol, acetone and methanol). The results of the analysis indicated that the different type of solvent extraction was affected to the characteristics of  sea cucumber protein concentrate, and ethanol solvent was the best solvent in manufacture of sea cucumber protein concentrate with 9.85% of water content (WW), 27.96% of ash content (DW), 0.50% of fat content (DW), 62.04%  of protein content (DW).  Keywords:protein concentrate, solvent extraction, sea cucumber

Abstract

ABSTRAK This research was aimed to determine the effect of the different concentration of NaOH to the quality of chitosan and antioxidant potential on chitosan of mangrove crab (Scylla serrata) shell. The experimental method was used in this research with Completely Randomized Design (CRD), which consists of three levels of treatment with different NaOH concentrations i.e. KT1 (50%), KT2 (55%) and KT3 (60%). A series of research activities was divided into 3 stages, namely: 1) preparation of the mangrove crab shell flour, 2) extraction of mangrove crab shell chitosan, 3) antioxidant assay on mangrove crab shell chitosan. The result showed that the different concentration of NaOH was significantly affect to the  moisture content of chitosan, and was very significantly affect to the ash content of the mangrove crab shell chitosan, with value of deasetilation degree of KT1, KT2, and KT3 was 53.42%, 62.46%, and 68.21%, respectively. Meanwhile the IC50 value of KT1, KT2, and KT3 was 883.7600 µg/mL, 528.1745 µg/mL and 737.9175 µg/mL, respectively. The IC50 values indicated that the antioxidant activity on chitosan of mangrove crab shell was classified as weak or inactive. Keywords: antioxidants, mangrove crab Shell, extracting, Chitosan.

Abstract

This study was aimed to investigate diversity of sea cucumber. Samples were collected  in  the coastal  waters  of  Natuna,  Riau  Islands  in  June 2009. Samples were taken from 2 locations: Sepempang and Pengadah beach. Sampling was done by using a transect quadrant of 5x5 m. This  sampling and observation on  its  microhabitat  were conducted by snorkeling. Analyses on the sea cucumber community structure were based on its diversity, equitability, density and frequency of occurance. The result showed that at both  locations there  are 16  species from two families: Holothuriidae and  Stichopodidae.  The higher  diversity index  (H) was  3.256  and  equitability  index  (e) was 0.993.  The higher  density  of species were 0.0032 ind/m2. The higher frequency of occurance was 27.71% by H. atra.

Abstract

ABSTRACT This research aims to determine the effect of ethanol solvent with different concentrations on the characteristics of catfish meat protein concentrates which include yield, proximate, and amino acids, to obtain optimal concentration. This research was conducted in 2 stages: first stage,the making of catfish meat flour, 2) making catfish meat protein concentrates using ethanol solvents with different concentrations (65% ethanol, 75% ethanol and 85% ethanol). The analysis showed that the use of ethanol solvent with different concentrations had a significant effect on the characteristics of protein concentrates. Ethanol solvent with a concentration of 85% was the best concentration in the production of protein concentrate with a yield, ash, water, protein, fat, and amino acid content was 80.42%, 19.44%, 6.35%, 68.37%, 0.55%, and50.25%, respectively. Keywords: Protein concentrate, catfish, ethanol

Abstract

ABSTRACT               This study was aimed to determine the characteristics of chitosan from freshwater crayfish carapace (Cherax quadricarinatus), to determine the effect of adding chitosan with different concentrations on the quality of lip balm and to determine the addition of the best chitosan concentration on lip balm. The method used in this research was an experimental method on the effect of adding chitosan from freshwater crayfish (Cherax quadricarinatus) carapace to making lip balm. Tests used in this study were the yield, moisture, ash content, nitrogen content, and the degree of deacetylation in the determination of chitosan quality and pH test, emulsion stability test and humectant test in the determination of lip balm quality. Based on the results showed that the characteristics of chitosan had a yield valueof 20.38%, 7.35% moisture content, 4.34% ash content, 4.54% nitrogen content and 73.74% deacethylation degree.The addition of chitosan with different concentrations in lip balm had a significant effect on pH value, emulsion stability and humectant of lip balm. The best treatment is  A3(the addition of 3% chitosan concentration) based on the pH value of 5.50; 99.46% emulsion stability; and humectant of 95.14%. Keywords:chitosan, freshwater crayfish, lip balm.

Abstract

 ABSTRACTThis study aimed to determine the nutrient content of mudskipper fish flour with different cooking. The method used in this research was a comparative experiment method,with the T-test consistedof  two treatments. There were steaming  (P1) and boiling (P2) with three replications, obtained 6 experimental units. The parameters measured in this research were the yield and the analysis of nutrient content (protein content, moisture content, ash content, and fat content). Based on the results of research obtained the best treatment was steaming with a yield rate of 16.56%, the of protein content 77.96%, moisture content of 5.23%, fat content of1.48% and ash content of 13.67%. The cooking treatment had a significant effect on the protein content and the moisture content of the fish flour from mudskipper (Periopthalmusminutus) produced.Keywords: boiling, fish flour, mudskipper, and steaming

Abstract

ABSTRACT            This research intended to determine changes in organoleptic and TVB values of common crap (Cyprinus carpio) by different mortality processes during storage at room temperature. The treatment given consisted of P1 (died picker inMedullaoblongata) and P2 (death floundered). The analysis parameters observed were organoleptic value (eyes, gills, and odors ) and TVB content.The assessments were conducted every 2 hours for 14 hours of storage. From the research results,the best treatment was P1. Organoleptic in P1  and P2 respectively were eye 4.5, 3.3, gills 4.1, 3.3, odor 4.2, 2.9. Furthermore, TVB P1  at 0 hours of observation had the best value of 2.39 mgN/100g and reached the quality rejection limit at 14 hours of the observation, 30.33 mgN/100g. TVB P2  at 0 hours of observationhad a value of 6.45 mgN/100g and reached the quality rejection limit at 12 hours of the observation, 30.33 mgN/100g. Keywords:common crap, death floundered ,Medulla oblongata,  mortality process, Organoleptic, TVB.

Abstract

This research was carried out to evaluate consumer acceptance of tilapia abon fortified with white oyster mushroom. Tilapia weighing 400-600 g each was taken from a fish market in Pekanbaru. Four types of fish abons were prepared from the fish meat which was fortified with white oyster mushroom 0%, 25%, 50%, and 75% of the fish weight. The fish abons were eval-uated for consumer acceptance by 80 panelist. The results indicated that the fish abons fortified with 25% white oyster mushroom was the most acceptable by consumer. Moisture, protein, fat, and crude fiber of the fish abon was: 5.83%, 33.79%, 29.03%, and 1.49% respectively.

Abstract

A research study was carried out from September 2004 to February 2005. Theresult showed that the best concentrate from rubber seed extract were 5.4 mg/Ienable to transport the fish for 8 hours producing 90 % survival rate, withconcentrate 5.4 mg/1 to sped up anesthesis time were 10 – 15 minutes, withconcentrate 5.4 mg/I at temperature of 14°C indicated that the best condition offish after anesthesis.

Abstract

The aim of this research is to investigate natural food composition of varioussea cucumber. Samples were collected in the coastal waters of Natuna, Riau Islandsin June 2009. Samples were taken from 2 location: Sepempang dan Pengadah beach.The analysis methods use is identification of phytoplankton, frequency of presencephytoplankton and percentage volume of phytoplankton. Of ten10 species found 19genus and detritus, include two families : Chrysophyta and Chyanophyta. The highestfrequency of presence is 100% by detritus from Sepempang and Pengadah beach.Thehighest percentage volume of food is 13,5% by Cymbella from Sepempang beachand 13,6% by Cymbella from Pengadah beach.
