Abstract

Ubud merupakan salah satu tujuan wisata terkenal di Bali selain Kuta, Nusa Dua, dan Sanur. Kementerian Pariwisata mengusulkan Ubud sebagai Destinasi Gastronomi berstandar United Nations World TourismOrganization (UNWTO) yang pertama di Indonesia. Penelitian ini bertujuan untuk merumuskan strategi pengembangan kuliner lokal berdasarkan persepsi wisatawan nusantara di Ubud. Penelitian dilakukan tahun 2018 menggunakan pendekatan deskriptif kualitatif dengan melakukan observasi, wawancara, dan menyebarkan kuesioner kepada wisatawan yang menikmati kuliner lokal pada restoran atau warung di Ubud. Data dari hasil kuesioner dianalisis dengan Importance Performance Analysis (IPA), menggunakan teori Pariwisata Budaya dan teori Persepsi. Hasil penelitian menunjukkan bahwa persepsi wisatawan nusantara terhadap kuliner lokal adalah baik memiliki hidangan beragam, unik, disajikan menarik dengan lokasi restoran strategis dan pelayanan ramah dari karyawan. Harga dinilai mahal, tidak memberikan diskon kepada wisatawan, kurang dipromosikan dan tempat parkir yang kurang memadai. Strategi pengembangan kuliner lokal berdasarkan persepsi wisatawan nusantara yaitu: 1) menggelar street food, 2) meningkatkan promosi, 3) meningkatkan lingkungan fisik restoran.

Abstract

The International Bali Tourism Institute is one of Private School in Tourism and Hospitality.. High quality human resources are urgently needed by an institution to be able to compete and develop its potential as an embodiment of the performance. Efforts to improve organizational performance should be started from the employee's performance. Many factors affect the performance of the employee. This research focuses the employee performance on three things: compensation, leadership and work environment.The study uses 74 respondents, employees of The International Bali Tourism Institute. The research aimed to determine the effect of compensation, leadership and work environment to employee’s performance at the College of Tourism Bali International. The data analysis is using multiple linear regression. The results showed there are significant positive and significant between compensation and leadership on employee performance, meaning that if the compensation and leadership increases, the performance of employees will increase. There is a positive effect but not significant between the work environments on employee performance, meaning that although the work environment increases employee performance has not increased. There is a positive and significant influence between compensation, leadership and work environment simultaneously on employee performance, meaning that if the compensation, leadership and work environment increases, the performance of employees will increase.

Abstract

Policy of Government through Circular Minister of Administrative and Beraucratic Reform No. 11/2014 contains a ban on the whole range of civil state apparatus governance activities outside government agencies apply from Desember 1, 2014 alarmed hospitality businesses. Chariman of the Indonesian Hotel and Restaurant Association (IHRA) Wiryanti Sukamdani recognize this policy has had an impact on revenue of the hotel. If the hotel continued to decline, will possibly be happen of Termination of Employment.Employment synonymous with career opportunities. Orientation of hospitality students can be ascertained by majoriy is looking for a job after graduation, when the availiability of jobs in particular field is getting narrower, it is fear will affect the interest of students for career in th hospitality field. This research aims to examine and analyze empirically the effect of the impact of government policy through Circular Letter of Minister of PAN and RB no. 11 of 2014 on the prohibiton of carrying out activities for government personnel outside the government agencies against the interest of student majoring in hospitality School of Tourism Bali International for career in the field of hospitality.Result of the research concludes that impact of government policy on Circular Letter of Minister of PAN and RB no 11 of 2014 negatively affect the interests of student for career in the hospitality field is not proven true, in this case indicates that the interests of students the School of Tourism Bali International (STPBI) for career in the hospitality affected bu the impact of government policies is significantly positive
