Abstract

This research executed in Siberut island which has been specified Unesco as Biosphere Reserve. The purpose of research was to identify the policy which has been specified in Siberut, knows implementation of management, knows perception and participation of public and knows interaction of the parties involving in management Biosphere Reserve. Method applied is Inventory and contents analysis of policy, Indepth Interview with cross check, Open interview with descriptive qualitative and Inventory and Stakeholder analysis. Republic of Indonesia Government doesn't support expansion of Siberut Biosphere Reserve for all island. There is understanding difference and exploiting of Biosphere Reserve according to the Government with MAB-UNESCO so do with perception there are difference between publics Siberut with the Government. Local public assumes that forest Siberut is custom forest which its the domination stays at custom public according to custom Arat Sabulungan, where its the exploiting and management is done based on custom, but the Government considers to be state forest. Implementation of Siberut Biosphere Reserve Pledge based on Indicator Implementation released by Unesco, 1996 till now still uncommitting for overall of area Biosphere Reserve, except to of Core area (Siberut National Park). Implementation at core area based on Indicator Implementation (Unesco, 1996) mostly has been executed, except for Indikator 5,6,8,9 and 16. Role and influence MAB and TNS in Siberut still be low for the reason need to be improved. Keyword: Cagar Biosfer Siberut, Siberut Biosphere Reserve.

Abstract

This study aimed to determine the effect of boiling time on polyphenol compounds and antioxidant activity ciplukan (leaves, stems, fruit, roots and mixture of each plant part). This research used Randomized Block Design (RBD) with five groups (leaves, stems, fruit, roots, and mixture of each part of the plant ) and three treatments (10, 20 and 30 minutes). The analysis for the experiment were the antioxidant activity of each part of the plant by using various incubation time, the antioxidant activity and total polyphenol for each treatment. The results showed that the duration of boiling had a significant effect on total polyphenols but no significant effect on antioxidant activity. The highest total polyphenols were obtained on leaves with 30 min boiling duration (1210.5 mg GAE / g), and the highest antioxidant activity was also obtained on leaves with 30 min boiling time (88.32%).

Abstract

Catechins are flavonoid molecules that act as antioxidants in the body. The degradation of palm oil with catechin treatment (400, 200, 100, 50, 0) was investigated in this work (ppm). The goal of this study was to see how efficient catechins are as antioxidants in cooking oil and what the optimal treatment would be for the amount of catechins added. Catechin concentration, antioxidant IC50, free fatty acid, peroxide value, water content, color, and fatty acid profile are all analyzed using GC-MS. Treatment E (400 ppm) was found to be the most effective, with free fatty acid values of 0.45 percent, peroxide value of 5 mek/g, moisture content of 0.89 percent, and color of 95.95 (L*16, 11, a* -1.51, b* 14.51). Catechins can retain three fatty acids in the oil, according to GC-MS analysis: hexadecanoic acid, 9-octadecanoic acid, and heptadecanoic acid.

Abstract

This research aimed to study the characteristics of herbal tea bags from starfruit leaves, gotu kola leaves and cinnamon powder. This research used a completely randomized design with 5 treatments, namely differences in substitution of cinnamon powder 0%, 1%, 2%, 3% and 4% with 3 replications. The data obtained were analyzed statistically with ANOVA (Analysis of Variance) and if they were significantly different, then continued with the DNMRT (Duncan's News Multiple Range Test) test at a level of 5%. The results showed that the difference in the amount of cinnamon powder substitution had a significant effect on antioxidant activity, total water-soluble ingredients, total polyphenols, color, taste, and aroma. Differences in the concentration of cinnamon powder substitution did not significantly affect the water content and pH. The best treatment in this research was treatment E with substitution of cinnamon powder 4%. The results of organoleptic analysis were the average value of colour preference 3.95, taste 3.65, and aroma 4. The results of chemical analysis were pH 6.13 and antioxidant activity 36.93%.

Abstract

The best treatment in this study was treatment E with the addition of 4% cinnamon powder, the organoleptic results obtained were the average value of color preference 3.95 (like), taste 3.65 (like), and flavor 4 (like). The results of chemical analysis on tea products are water content 7.88%, total polyphenols 109.32 mg GAE/g, IC50 value 96.71, total water soluble ingredients 19.66% and in steeped tea pH value is 6.13, and activity antioxidant 36.93%.

Abstract

Rendang is a traditional-specific food in Indonesia. Rendang is generally made with beef, coconut milk, and spices. There are two types of rendang according to its time processing. Rendang “kalio” is a final product of rendang that needs a short heating period while dried rendang is produced by the longer heating period. In the present study, the profile of the volatile compounds that most obtained from spices was analyzed by gas chromatography-mass spectrometry (GC-MS) to characterize the influence of the cooking period on the flavor characteristic of two available types of rendang. There were dozens of volatile compounds identified including carboxylic, aromatic, carbonyl, and alcohols where carboxylic and aromatics were the predominant volatile fractions. The results indicated that the cooking period affected the profile of volatile compounds between "kalio" rendang and dried rendang. Carboxylic and aromatics were less in the dried rendang compared to the rendang “kalio” where others were opposites. The increase of carbonyls and alcohol during the cooking process has suggested can play a crucial role in the flavor of dried rendang.

Abstract

The leaves of M oleifera contain high protein and crude fiber. Thus the addition of M oleifera leaves is expected to increase protein levels and crude fiber levels of crackers produced. This study aimed to determine the effect of the addition moringa leaves on the characteristics of crackers and the addition of the moringa leaves to product crackers on characteristics acceptable to panelists based on sensory analysis. This study used a Completely Randomized Design with 5 treatments, that was the addition of leaves A (4%), B (6%), C (8%), D (10%), E (12%), and 3 replications. The data were analyzed using ANOVA and continued with Duncan's New Multiple Range Test (DNMRT) at a significant level of 5%. The results show that the addition of moringa leaves a significant effect on moisture content, protein content, fat content, ash content, carbohydrates, crude fiber, but does not significantly affect on color, aroma, taste, and texture of the crackers. Based on nutritional content and sensory test, the crackers of treatment E (the addition of moringa leaves 12%) with the characteristics moisture content of 4.67%; protein content of 14.18%; fat content of 22.52%; ash content of 1.67%; carbohydrates of 56.96%; crude fiber of 15.50%; calories of 456.42 kcal/100g; the color of 3.43 (neutral); aroma of 3.83 (likes); a taste of 3.17 (neutral); and texture of 3.30 (neutral).

Abstract

Seagrass bed on Karang Tirtas's coast consist of two species of seagrass namely Thalassia hemprichii and Enhalus acoroides. Thalassia hemprichii is the most dominating species with a frequency to be found about 96,3% while the frequency of Enhalus acoroides is 3,7%. Seagrass has ± 14 hektar distribution area with the pattern of distribution in group. The coverage of seagrass in Karang tirta's coastal included into poor cathegory. Meanwhile, the seagrass bed is one of the important ecosystem in the coastal area that are habitat for some other species and carbon sinc. Physical chemical factor's water of Karang Tirta's coastal area can support the growth of seagrass well except the temperature factor that is high.

Abstract

This activity was carried out in order to increase the effectiveness of antiseptic liquid soap by adding extracts of natural ingredients, namely catechins from Gambir so that the production of antiseptic liquid soap can be increased with the cooperation of CV Novalindo. Antiseptic liquid soap product with the addition of gambir extract was introduced and then production was carried out more in CV. Novalindo. The introduction of technology using active ingredients catechins in the manufacture of liquid soap can be utilized by CV. Novalindo to develop liquid soap made from active catechins as a natural antiseptic in liquid soap. It is hoped that this product will become a brand by CV Novalindo.

Abstract

This community engagement activity has located a centre for horticultural agriculture, such as fruits and vegetables, in Nagari Padang Laweh, Sungai Pua district and Agam regency, West Sumatra Province. The focus products were tomato and oyster mushrooms at the time. Besides a farmer's land for tomatoes, there is also an oyster mushroom business managed by Hoki Jamur, producing 5-7 kg of fresh mushrooms per day. The problems faced by the partner's activity were a lack of processing technology for horticultural products. Tomatoes often through away when the price is low in the market. The production of oyster mushrooms is still fluctuating because cultivation is not good enough, and oyster has high water content, so it is easy to rot and have a short shelf life. Activities that have been carried out to solve partner problems were first evaluating horticulture and oyster mushroom cultivation activities at partner locations. Then, introducing processed post-harvest of horticulture to increase the selling value and its diversification to increase the shelf life of products by making tomato sauce and oyster mushroom meatballs. This activity went well and smoothly and was attended by local farmers, members of the Family Welfare Movement (PKK), and young entrepreneurs. Participants' enthusiasm for participating in this activity was high, especially during post-harvest product processing technology. This activity is expected to improve the quality and quantity of business production, income and economic welfare of partners and communities involved in partner business activities.
