Abstract

Health status and micronutrient intake among vegetarian and non-vegetarian in BaliBackground: Several studies have reported that vegetarian diets have health benefits for those adopting the diets. Objective: This study aimed to compare anemia status and micronutrient intake between vegetarians and non-vegetarians in Bali. Methods: This cross-sectional study was conducted in Bali. A total of 240 samples consisting of 160 vegetarians and 80 non-vegetarians were randomly selected. Hemoglobin (Hb) and fasting blood sugar levels were measured using the cyanmethemoglobin method and enzymatic colorimetric, respectively. Meanwhile, the data on micronutrient intakes were collected by interviews using the semi-quantitative food frequency questionnaire (SQFFQ). The data were analyzed using descriptive statistics, and the Mann-Whitney test was performed to analyze the differences. Results: The study’s results showed that the mean Hb levels in the vegetarian group were significantly lower than non-vegetarians (p=0.002; p<0.05), and the anemia status in vegetarian women were higher (22.5%) than non-vegetarian women (2.5%). The mean fasting blood glucose level in non-vegetarians was significantly higher than in the vegetarian group (p=0.000; p<0.05). There were no differences in zinc (Zn) intake between vegetarians and non-vegetarians, but there were significant differences (p<0.05) in vitamin C, vitamin D, vitamin B12, folic acid, magnesium (Mg), calcium (Ca), and iron (Fe) intakes. Conclusions: There were differences in anemia status and fasting blood glucose levels between vegetarians and non-vegetarians. The fasting blood glucose levels of non-vegetarians were higher than vegetarians, and there were differences in the intake of certain micronutrients between vegetarians and non-vegetarians.

Abstract

The low level of nutritional knowledge among athletes and coaches in Indonesia is on of the main problems. Therefore, it is important to know the role of nutrition education on improvment in knowledge, attitudes, and behavior and factors which affect the nutritional knowledge of the subject. Narrative review literature has a more flexible structure. The search for the source of article was carried out using Google Scholar, Pubmed, and Elsevier using the key terms: “education” “requirement”, “nutrition status”, “nutrition”, and “athletes”. Increased knowledge, attitudes, and behavior can apply consumption patterns that can meet nutritional needs as an athlete and for coaches, officials, and administrators can provide encouragement as a peer group in implementing balanced nutrition patterns in athletes' daily lives.

Abstract

The aim of this study to review the most recent research on the factors that most influence hydration. This study review using the literature research from google scholar, PubMed, and Elsevier. Many athletes after training experience dehydration due to not consuming enough fluids and electrolytes before, during training, and competition. To assess hydration status cannot be determined by just one factor. The general recommendation of hydration status measures using accurate biomarkers to detect body water fluctuations of 3% of total body water (TBW), using dehydration index, body mass, or color of urine. Therefore, monitoring hydration status is very important to maintain athlete performance. Exercise increases hypohydration due to fluid losses so that should be given to fluid supplementation and intake from certain food for each athlete. The factor that most influences the athlete's hydration is sweat loss and fluid intake.

Abstract

Karawang Regency has quite high culinary business potential because apart from being an industrial area of Karawang it is also a tourist area. Most Karawang residents have culinary businesses, especially in the form of street vendors, warteg, catfish penyet stalls, to restaurants. However, the products being sold are fresh food products that will quickly deteriorate. This service aims to assist culinary entrepreneurs in producing food products that have a longer shelf life during production and marketing. In addition, it is hoped that it can help culinary entrepreneurs maintain the nutritional value of the products to be sold and can provide added value in sales by utilizing vacuum packaging. Education is carried out for the people of Ciampel, Karawang Regency through demonstrations or demonstrating how to pack food ingredients using the vacuum method. The activities carried out were tested first at the Padjadjaran University Laboratory in Bandung to determine the nutrient content on the first day of packaging, the seventh day and the 14th day of packaging using samples of raw snakehead fish which were packaged using the vacuum method through 2 treatments, namely salted and without being sprinkled with salt. Laboratory results showed that samples with vacuum packaging covered with salt were still suitable for consumption on seven day.
