Abstract

ABSTRAK Madu mempunyai nilai gizi yang baik dan banyak manfaatnya. Permasalahan utama yang seringkali ditemukan pada madu Indonesia adalah kadar air yang tinggi (>22%). Hal ini disebabkan terutama karena iklim Indonesia yang tropis. Kadar air madu yang tinggi akan memicu fermentasi selama penyimpanan. Salah satu alternatif lain untuk penurunan kadar air adalah pengeringan adsorpsi. Penelitian ini bertujuan untuk menentukan kondisi optimum lama waktu dan rasio berat sampel:adsorben pada proses penurunan kadar air madu. Penelitian optimasi proses penurunan kadar air madu dirancang dengan menggunakan metode RSM-JOP (Joint Optimation Plot) yang ditinjau dari variabel lama waktu (15, 20 dan 25 jam) dan rasio berat sampel:adsorben (1:3; 1:4 dan 1:5) dengan analisis respon kadar air, pH dan perubahan warna. Hasil yang optimum untuk penurunan kadar air madu dengan lama waktu 14,37 jam dan rasio berat sampel:adsorben 1:4.85 (b/b) dengan prediksi respon kadar air, pH dan perubahan warna adalah 20.24±0.46%; 3.48 dan 12.52.   Kata kunci: Adsorption Drying, Kadar Air, Madu, RSM ABSTRACT Honey has a good nutritional value and many benefits. The main problems that are often found in Indonesia’s honey is a high water content (>22%), this is caused mainly due to the tropical climate of Indonesia. The high water content of honey will trigger fermentation during storage. One of alternative is to decrease the water content adsorption drying. This study aims to determine the optimum conditions a length of time and the ratio of the sample weight: adsorbent in the process of reduction in the moisture content of honey. Process optimization studies honey moisture reduction is designed by using RSM-JOP (Joint Optimization Plot) were evaluated from the variable of length of time (15, 20 and 25 hours) and the ratio of the sample weight: adsorbent (1:3; 1:4 and 1:5) the response analysis of water content, pH and color change. Optimum results for the reduction in the moisture content of honey with a length of time 14.37 hours and the weight ratio of the sample: adsorbent of 1:4,85 (w/w) with a predicted response moisture content, pH and color change was 20.24±0.46% ; 3.48 and 12.52.
