Abstract

Formaldehida di dalam melamin dapat muncul pada peristiwa depolimerisasi, partikel-partikel formaldehida muncul sebagai monomer dan menghasilkan racun yang berbahaya bagi kesehatan. Dalam pembuatan peralatan makan melamin ini, produsen sering menambahkan formaldehida yang tidak seimbang dengan fenol sebagai bahan baku. Penelitian ini bertujuan mengetahui kandungan formaldehida pada peralatan makan melamin. Metode Spektrofotometri Sinar Tampak yang digunakan dengan standar acuan Peraturan Kepala Balai POM RI No. HK.03.1.23.07.11.6664 tahun 2011. Hasil penelitian menunjukkan bahwa peralatan makan piring oval ware mengandung kadar formaldehida 4,68%. Tingginya kadar formaldehida pada peralatan makan melamin disebabkan dalam sistem produksi melamin yang tidak terkontrol. Sedangkan 4 sampel peralatan makan melamin lainnya tidak terdeteksi kandungan formaldehida. Kata Kunci: formaldehida, melamin, peralatan makan

Abstract

Formaldehyde in melamine can appear at events depolymerization, formaldehyde particles appear as monomers and produce toxins that are harmful to health. In the manufacture of melamine tableware, manufacturers often add formadehyde unbalanced with phenol as a raw material. This study aims to determine the content of formaldehyde in melamine tableware. Looks Rays Spectrophotometric Method, guided by the regulatory Food and Drug Monitoring Agency (BPOM) No. HK.03.1.23.07.11.6664 in 2011. The results showed that the oval plate ware tableware containing 4.68% formaldehyde levels. High levels of formaldehyde in melamine tableware melamine production system resulting in uncontrolled. Abstract

This shredded protein nutritional value 28.18 %; fat 19.16 %; ash 3.45% and crude fiber 1.28%. Tuna shredded Processingwith the addition of goroho’sbanana expected gets sufficiency  animal protein and vegetable. This research aims to determine the influence of goroho’s banana through organoleptic test and analyze the nutrient content of shredded tuna are good quality in accordance with SNI. This research utilize a completely randomized design (CRD) with the object of research white meat tuna and goroho’s banana with  of mixing treatment between white meat tuna, goroho’s banana bud and condiments as garlic, red onion, handover, ginger and palm sugar .The results showedthat thesensory qualityof shreddedtunawiththe additionof goroho's banana bud most preferred use concentration of75% white meattunaand25% goroho's banana bud. Abstract

This study aims to analyze chemical features of scad, Caranx sp., smoked using nutmeg shell liquid smoke. It used  Complete Randomized Design under variation of liquid smoke concentrations and immersion duration.  the former applied 30 minutes, 40 minutes, and 50 minutes immersion and the latter used 10%, 15%, and 20%. Results showed that 40 minutes immersion in 15% liquid smoke had the lowest water content and the highest protein content.Keywords: liquid smoking, nutmeg shell, scad

Abstract

Sausage spent hen meat is one of processed protein product alternatives of animal origin. The purposes of this study were to find out the best formulation of culled laying hens sausage using mixture of carrot paste and baruk sago as filler and to evaluate the physical, chemical and functional characteristics of the sausage. The research consisted of five treatments of filler using various mixtures carrot paste and baruk sago, namely: 0%, 5%, 10%, 15% and 20% of carrot paste of the total 25% filler. The results showed that the use of carrots paste in the filler significantly improved (P < 0.05) the physical characteristics that increase the value and tenderness of the sausage cooking shrinkage. The chemical characteristics, on the other hand, indicated that moisture, protein, fat and carbohydrate contents were significantly affected, whereas ash content was not. The β-carotene content of sausage increased with the increasing consentration of carrot paste in the filler mixture. Sensory analysis showed that percentage of carrot paste in filler mixture only significantly affected flavor and texture but did not significantly affect the color and aroma of sausage. The hightest average panelists score was found in P2 formulation of 10% carrot and 15% sago. The water, ash, protein, fat, carbohydrate, and β–carotene contents of the P2 formula sausage were 60.63 %, 1.82 % , 15.72 %, 12.24 %,  8.25% and 0.04 % , respectively. Abstract

Study of coconut dregs waste utilization into zwieback products was carried out. This study was aimed to make zwieback products and to obtain the formula of coconut dregs waste utilization in zwieback products preferred by panelists. The study used a complete randomized design. The zwieback product had the treatment of coconut dregs waste addition respectively with A (0%), B (25%), C (50%), D (75%), E (100%). Abstract

The objective of the study was to utilize the cellulose garbages in North Minahasa Regency, North Sulawesi Province and detect the liquid sugar through acidic hydrolysis. After liquid sugar production, the product could be used as raw material of health product and pharmacy, such as intravenous liquid. For food product, it can be used as food product raw material which can increase people food security and to use the cellulose wastes for liquid sugar production from cellulose wastes of corn cob, rice husk and coconut skin.This study was carried out using laboratory analysis. It applied Complete Randomized Design factorially set with 3 replications as follows: A = cellulose wastes including corn cob (A1), coconut skin (A2) and padi husk (A3), and B = hydrolysis using HCL covering 0.50% HCl (B1), 0.75% HCl (B2) and 1.0% HCl (B3). As conclusion, the cellulose wastes of corn cob, coconut skin, and rice husk were potential to producing liquid waste, in which rice husk had the highest potential. The highest glucose concentration occurred in rice husk of 1% HCL, 25%. Keywords: liquid sugar, cellulosic waste, IV fluids

Abstract

Macroalgae are chlorophyll plants, consisting of thallus and can live in polluted waters. The purpose of the study was to analyze the lead metal (Pb) in the water column and thallus red algae Kappaphycus alvarezii which was cultivated in a certain period of time in the waters of Totok Bay. The cultivation method used is the bottom method. The algae weight is measured every two weeks. Water quality parameters and lead metal analysis (PB) are carried out in the Baristan laboratory. The results obtained are algae can grow according to the time period. Water quality can affect algae growth. Lead metal content in water is detected high enough as well as in thallus algae in the 3rd week. Keywords : Kappaphycus alvarezii, Lead metal, Water quality, Totok Bay Makroalga merupakan tumbuhan yang berklorofil dan tubuhnya berupa thallus serta mampu hidup pada perairan tersemar. Penelitian ini dilakukan dengan tujuan untuk menganalisis kandungan logam timbal (Pb) dalam air dan thallus alga merah Kappaphycus alvarezii yang dibudidayakan dalam periode waktu tertentu di perairan Teluk Totok. Metode budidaya pada yang digunakan adalah metode lepas dasar (bottom method). Pengukuran berat alga dilakukan setiap dua minggu. Beberapa parameter kualitas air dan analisis logam timbal (Pb) dilakukan di Laboratorium Baristan. Hasil yang diperoleh yaitu alga dapat tumbuh sesuai dengan periode waktu. Kualitas air dapat mempengaruhi pertumbuhan alga.Kandungan logam timbale pada air terdeteksi cukup tinggi demikian juga pada thallus alga di minggu ke-3. Kata kunci : Kappaphycus alvarezii, Logam Timbal, Kualitas air, Teluk Totok

Abstract

The octopus in Manado language is called Boboca, while the local Talaud community is called Urrita. Octopus is used as food and bait. Information on octopus biology needs to be known as basic information in the management of octopus resources. This study aims to identify and provide information on octopus habitat in the waters of Salibabu. Collecting specimens using arrows (jubi). The morphology of the example octopus is identified as Octopus cyanea Gray, 1849. In the arms of the octopus there are white-colored spots. On the left and right side of the crown of the arm are two false eyes (ocellus). On the face of the ventral arm is a dark pole pattern above the pale or creamy base color. Characteristics of female morphomes generally have a larger size compared to males. Abstract

Based on the material content, waste is grouped into two types, namely organic waste (waste derived from animal, plant and human parts) and inorganic waste (waste derived from materials such as metal, glass, styrofoam, plastic and rubber). Inorganic waste is one of the coastal pollution problems, yet information about inorganic waste in mangrove ecosystem was relatively low, especially at Lesah Village, Tagulandang Sub district, Sitaro Regency. This study aims to determine the distribution of inorganic waste by type and to analyze the characteristic of inorganic waste based on the amount of size and weight found. The method used in this research is the line transects method at 3 different stations. The results showed that the types of marine debris that found were plastic, rubber, metal, and glass waste and there were 2 characteristics, namely mega-debris and macro-debris. Of the various types of debris obtained, plastic is the most commonly found, 161 items/23.329m2 (69.099 Items/ha) with a total weight of 1357.75 gram/ha and a total size of 1938.93 cm/ha. Followed by rubber debris as many as 5 items/23.329m2 (2.146 items/ha) with a total weight of 159.309 gram/ha and a total size of 59.871 cm/ha. Then, glass debris as many as 4 items/23.329m2 (1.717 items/ha) with a total weight of 402,159 grams/ha a total size of 31.030 cm/ha. Whereas, metal debris is the lowest value found as many as 3 item/23.329m2 (1.288 items/ha) with a total weight of 67.622 gram/ha and a total size of 19.528 cm/ha.Keywords: Inorganic waste, Mangrove Ecosystem, Desa Lesah
