PENGARUH FERMENTASI KULIT BUAH KOPI DENGAN Trichoderma Reseei YANG DITAMBAH Zn–Cu ISOLEUSINAT TERHADAP PERUBAHAN KANDUNGAN NUTRISI

Abstract

Objective of the research was to determine the effect of fermented coffee pulp with Trichodermareseei and effect of fermented coffee pulp with Trichodermareseei plus Zn-Cu isoleusinat. The design used in this research was the Completely Randomized Design (CRD) with 3 treatments was repeated 5 times each. Treatment used were P1: coffee pulp without fermented. P2: fermented coffee pulp with Trichodermareseei, P3: fermented coffee pulp with Trichodermareseei plus Zn-Cu isoleusinat.. Parameters measured were dry matter, organic matter, crude protein, crude fat, crude fiber, extract materials without nitrogen. The results showed that the dry matter content was 89.82% and organic matter was 92.57% in the P2. Crude protein was 10,63% in treatment P. Crude fat was 2.76%, at treatment P1., crude fiber 35.71%, BETN (Extract Materials Without Nitrogen) 47.56%. It was concluded that the effect of fermented coffee pulp with Trichodermareseei plus Zn-Cu isoleusinatin crease the protein content and lower crude fiber content. ABSTRAK Penelitian ini bertujuan untuk mengetahui pengaruh fermentasi kulit buah kopi dengan Trichodermareseei dan fermentasi kulit buah kopi dengan Trichodermareseei yang ditambah Zn-Cu isoleusinat terhadap kandungan nutrisinya. Rancangan yang digunakan dalam penelitian ini adalah Rancangan Acak Lengkap (RAL) 3 x 5; dengan 3 perlakuan yang diulang masing-masing 5 kali. Perlakuan yang diberikan adalah P1: Kulit buah kopi tanpa fermentasi, P2: Kulit buah kopi difermentasi Trichodermareesei, P3: Kulit buah kopi difermentasi Trichoderma reesei yang ditambah Zn-CuIsoleusinat. Parameter yang diukur adalah: kandungan bahan kering, bahan organic, protein kasar, serat kasar, lemak kasar dan bahan ekstrak tanpa nitrogen (BETN). Hasil penelitian menunjukan bahwa kandungan bahan kering (89,82%) dan bahan organik (92,57%) pada perlakuan P2, protein kasar 10,63% pada perlakuan P3, lemak kasar 2,76%, pada perlakuan P1Disimpulkan bahwa fermentasi kulit buah kopi dengan Trichodermareseei yang ditambah Zn-Cu Isoleusinat meningkatkan kandungan protein dan menurunkan kandungan serat kasar.
