Abstract

AbstrakTujuan penelitian ini adalah mengetahui faktor yang paling mempengaruhi usaha cokelat, mengetahui posisi usaha cokelat, mengetahui alternatif strategi yang tepat untuk pengembangan usaha cokelat, serta menentukan prioritas strategi. Analisis Strength, Weakness, Opportunity, dan Threat (SWOT) dilakukan untuk merumuskan alternatif strategi yang terintegrasi. Metode QSPM kemudian digunakan untuk mengevaluasi strategi tersebut, sedangkan metode MAUT untuk pengambilan keputusan berdasar nilai utilitas atribut. Hasil penelitian menunjukkan bahwa faktor internal yang paling berpengaruh dari segi kekuatan dan kelemahan secara berturut turut adalah menyediakan berbagai macam olahan cokelat (0,42) dan kurangnya perluasan pasar (0,09). Faktor eksternal yang paling berpengaruh dari segi peluang dan ancaman secara berturut-turut adalah perubahan gaya hidup masyarakat (0,52) dan munculnya usaha dengan produk sejenis (0,21). Matriks Internal dan Eksternal (IE) menunjukkan posisi usaha cokelat ini pada sel V dengan nilai total Internal Factors Evaluation (IFE ) dan External Factore Evaluation (EFE) berturut-turut 2,64 dan 2,54 yang berarti usaha ini harus melakukan strategi hold and maintain. Berdasarkan analisis SWOT, terdapat 9 buah strategi alternatif yang terbentuk. Berdasarkan QSPM dan MAUT, prioritas strategi yang dapat diterapkan adalah meningkatkan promosi produk dengan iklan, mengikuti event-event tertentu, dan membuka galeri baru (ST5) serta meningkatkan penjualan dengan pengembangan varian produk cokelat dan memaksimalkan fasilitas pendukung (ST2).Kata kunci: cokelat, MAUT, pengembangan usaha, QSPM, SWOTAbstractThis research aimed to know the factors that most influence the chocolate business, the position of the chocolate business, the right alternative strategies for business development, and to determine strategic priorities. SWOT Analysis was carried out to formulate an integrated strategy alternatives. QSPM method was used for evaluating the strategy, while MAUT was used for decision-making based on utility value attributes that should be taken into account. The results showed that the most influential of internal factors in terms of strength and weakness were offering a wide variety of chocolate (0.42) and the lack of market expansion (0.09). The most influential of external factors in terms of the opportunity and threat were the changing of people's lifestyles (0.52) and the emergence of similar products businesses (0.21). IE matrix indicated that the position of the chocolate business was at the V cells with a total value of IFE and EFE respectively 2.64 and 2.54.  It means the business must be run on hold and maintain strategies. There were 9 alternatives of strategies based on the SWOT analysis. The priority strategies to be applied were increasing the product promotion by advertising (ST5) and increasing the sales by developing chocolate product variant (ST2).Keywords: business development, chocolate, MAUT, QSPM, SWOT

Abstract

AbstrakTujuan penelitian ini untuk mengetahui pengendalian kualitas pengalengan jamur di PT Y. Penelitian menggunakan metode Six Sigma dibatasi tahap define, measure, analyze dan improve. Tahap improve menggunakan salah satu alat implementasi kaizen yaitu Five M Checklist untuk mengusulkan alternatif perbaikan pengalengan jamur. Hasil penelitian menunjukkan jenis cacat terbesar pengalengan adalah knocked down flange (KDF). Nilai sigma sebesar 3,46, final yield 97,5%, dan kapabilitas proses (Cp) sebesar 1,15. Penyebab KDF adalah pekerja kurang teliti, pekerja kurang memahami standard operational procedure (SOPs) produksi, kesalahan setting up mesin, mesin seamer tidak stabil, komponen mesin seamer aus, bahan kaleng kurang baik dan area produksi tidak nyaman. Alternatif perbaikan yang disarankan adalah memberi arahan dan SOPs training untuk pekerja, mengontrol dan merawat mesin lebih ketat, menjadwal penggantian komponen mesin. Selain itu, perlu melatih dan mengawasi operator mesin, memeriksa bahan kaleng lebih ketat, dan menambah turbine ventilator di area produksi.Kata kunci : final yield, five M checklist, kapabilitas proses (Cp), pengemasan jamur AbstractThe purpose of this study was to determine quality control of mushrooms canning in Company Y. The study using six sigma method, which were used was limited to the define, measure, analyze and improve. Improve stage was done using one of the implementation tools of kaizen namely Five M Checklist to recommend for improve mushrooms canning. The result known most types of defects in packaging is knocked down flange (KDF).The sigma value is 3,46, 97,5% of final yield and 1,15 of process capability (Cp).  The cause of KDF were careless of workers, workers don’t understand the production SOPs,  machine setting up fault, instability of seamer machine, worn out of seamer machine component, bad canning material and uncomfortable production area. Suggested improvement will give direction for workers, provide a SOPs training for workers, control and maintenance of seamer machine, arrange schedule replacement of seamer machine components, supervise machine operator, also provide machine operator training, perform a more rigorous inspection of cans material and add turbine ventilators in processing area.Keywords : final yield, five M Checklist, mushrooms canning , process capability (Cp)

Abstract

AbstrakPT. XYZ menghasilkan produk utama yaitu minyak goreng (olein). PT. XYZ dalam memastikan mutu dari minyak goreng dilakukan pengujian laboratorium berupa uji FFA, M&I, IV, PV, M.PtoC dan colour. Namun, untuk pengujian paling dasar dan penting dilakukan adalah uji FFA (Free Fatty Acid) dan colour dari minyak goreng. Penelitian ini bertujuan untuk mengetahui penerapan pengendalian mutu FFA dan colour minyak goreng produksi PT. XYZ. Data mutu FFA dan colour minyak goreng PT. XYZ diperoleh dengan cara pengamatan langsung pada laboratorium tempat uji berlangsung. Pengamatan dilakukan selama sembilan hari untuk masing-masing FFA dan colour. Penelitian ini melakukan analisis permasalahan mutu FFA dan colour untuk dievaluasi penyebabnya, menggunakan diagram sebab-akibat. Faktor-faktor penyebab permasalahan pada diagram sebab-akibat diperoleh dengan pengamatan langsung dan wawancara dengan pekerja serta atasan bagian produksi PT. XYZ. Dari sampel yang dianalisis diketahui bahwa karakteristik mutu FFA dan colour minyak goreng PT. XYZ sudah memenuhi standar yang ditetapkan.Kata kunci: colour, FFA, minyak goreng, sebab-akibat, uji mutu Abstract PT. XYZ is producing main product of cooking oil (olein). On ensuring the quality of its cooking oil, PT. XYZ is conducting several test, with two basic and important test need to be done are FFA (Free Fatty Acid) and colour of the cooking oil. This research objective is to examine the implementation of quality control of FFA and colour on cooking oil produced by PT. XYZ. Quality data of FFA and colour of PT.XYZ’s cooking oil was obtained through direct observation on the laboratory, for nine days of samples. Furthermore, this research analyzed quality problems of FFA and colour to evaluate the causes, using cause-effect diagram. Causal factors resulting to quality problems on the cause-effect diagram was derived by direct observation and interview with both the workers and supervisors of production facility at PT. XYZ. From the samples analyzed, it is known that quality characteristics of FFA and colour on cooking oil produced by PT. Abstract

AbstrakPerilaku merupakan aspek penting cermin kehidupan manusia, terwujud salah satunya pada perilaku konsumen. Studi tentang perilaku konsumen terkait individu, kelompok, organisasi dan proses, adalah memilih, mengamankan, menggunakan, dan membuang produk, jasa, pengalaman, untuk memuaskan kebutuhan serta faktor yang mempengaruhi manusia mengkonsumsi produk. Penelitian bertujuan mengukur dan menentukan pengaruh pemasaran dan lingkungan sosial budaya terhadap perilaku konsumsi makanan Kebab yang bukan menjadi makanan khas Indonesia. Metode penelitian menggunakan SEM (Structural Equation Modelling) dengan pendekatan PLS (Partial Least Square) yang merupakan penggabungan analisis faktor, analisis jalur, dan analisis regresi. Berdasarkan hasil penelitian,  dari tiga variabel (konsep produk, budaya konsumsi, dan keluarga), terdapat pengaruh kuat dari keluarga dalam mempengaruhi perilaku konsumen mengkonsumsi kebab, diikuti pengaruh budaya konsumsi, tetapi tidak terdapat pengaruh dari konsep produk.Kata Kunci: budaya konsumsi, keluarga , konsep produk, SEM AbstractBehavior is one of the important aspect as reflection of human’s life and applicable in many aspects, such as knowing consumer behavior. Study of consumer behavior in individual, groups, organization and the process of consuming could be used to select, secure, use, and dispose of products, services, experiences, to satisfy needs and factors for influencing people to consume products. This study aims to measure and determine the influence of marketing and social culture environment on consumption behavior of the kebab product. The method of analysis used Structural Equation Modelling (SEM) with Partial Least Square(PLS) approach focus on the following three variables; product concept, cultural consumption and family. The result found  that  family was the strong factor in consuming kebab product, followed by cultural consumption, and not for products concept.Keywords : consumption culture, family, product concept , SEM

Abstract

AbstrakUKM MMM adalah salah satu UKM berkembang di Kabupaten Malang yang memiliki produk unggulan kedelai goreng dengan kapasitas produksi 12 kuintal/minggu. Permasalahan yang muncul pada UKM MMM diakibatkan terlalu besarnya penggunaan luas area pada proses pendinginan kedelai goreng yaitu 19,063 m2 dari luas total area produksi 83,6 m2. Hal ini menyebabkan aliran bahan semakin panjang, penanganan bahan yang tidak tepat serta perpindahan alat dan mesin produksi yang dilakukan setiap pergantian proses dapat mengakibatkan kerusakan pada mesin. Selain itu, penggunaan area yang berlebih untuk proses pendinginan menimbulkan rasa tidak nyaman pada tenaga kerja terutama pada saat melakukan pemindahan bahan dari proses satu ke proses yang lainnya dan dapat menimbulkan kecelakaan kerja seperti tumpahnya bahan atau produk jadi yang dibawa oleh pekerja. Metode yang dapat digunakan untuk melakukan perbaikan tata letak fasilitas pada UKM MMM adalah BLOCPLAN dan CORELAP (Computerized Relationship Layout Planning). Hasil dari penelitian didapat bahwa usulan tata letak dengan menggunakan metode BLOCPLAN dipilih sebagai tata letak usulan karena memiliki efisiensi sebesar 52,70% dengan OMH pertahun Rp 2.384.981. Sedangkan tata letak menggunakan metode CORELAP memiliki efisiensi sebesar 31,35% dengan OMH pertahun sebesar Rp 3.461.765.Kata kunci: ARC, BLOCPLAN, CORELAP, material handling, tata letak AbstractMMM is one of the growing SME located in Malang, producing fried soybean with a capacity of 12 quintals per week. Unfortunately, it is discovered that MMM occupies an overly large area to operate its production. While the industry only requires 19.063 m2 for the fried soybean’s cooling process, the area provides 83,6m2 to occupy. This resulted on longer ingredients distribution track, incompatibility materials treatment, and higher risk of damaged production machines and equipment. In addition, the overly large production area hampers the workers while distributing the ingredients from one place to another. This obstruction can possibly increase the risk of work accidents during the production process, for instance, failure in distributing material or even finished products. Among the recommended methods, BLOCPLAN and CORELAP (Computerized Relationship Layout Planning) are considered as the most suitable methods to improve the MMM’s area layout. Based on this research’s findings, BLOCPLAN is approved to be the most applicable method to improve the MMM’s area layout with an efficiency percentage of 52.70% and OMH per year Rp2.384.981. Meanwhile, CORELAP can only show an efficiency percentage of 31.35% with OMH per year as much as Rp 3.461.765.Keywords: ARC, BLOCPLAN, CORELAP, material handling, layout design

Abstract

AbstrakPenelitian ini bertujuan untuk mengetahui proporsi asam sitrat dan bubuk jeruk baby java yang tepat untuk menghasilkan tablet effervescent dengan karakteristik fisik, kimia organoleptik terbaik. Rancangan percobaan yang digunakan berupa Rancangan Acak Kelompok (RAK), terdiri dari proporsi asam sitrat (5%, 10%, 15%, 20%, 25%) dengan bubuk jeruk baby java (40%, 35%, 30%, 25%, 20%). Hasil penelitian diperoleh perlakuan terbaik dari analisa fisik, kimia dan organoleptik yakni proporsi asam sitrat 5% dengan bubuk jeruk baby java 40%. Hasil analisis fisik perlakuan terbaik meliputi kekerasan 5,4 N; dan kecepatan larut 1,30 menit. Karakteristik kimia kadar air 0,4719%; pH 8,23; vitamin C 266,46 mg/100g. Karakteristik organoleptik terbaik yakni kenampakan 4,76; rasa 3,35; aroma 3,7.Kata kunci: asam sitrat, baby java, effervescent, jeruk, vitamin C AbstractThis research aims to understand the optimal proportion of citric acid and baby java orange powder to produce effervescent tablets with the best characteristics of physical, chemical and organoleptic. This research used randomized block design (RBD), consists of a proportion of citric acid (5%, 10%, 15%, 20%, 25%) with baby java orange powder (40%, 35%, 30%, 25%, 20%). The best treatment result were obtained from physical, chemical and organoleptic analysis, the proportion of 5% citric acid with baby java orange powder 40%. The results of the best treatment which is hardness 5.4 N; soluble speed 1,30 minute; water content 0.4719%; pH 8.23; vitamin C 266,46mg / 100g. The best organoleptic result that the appearance of 4.76; taste 3.35; flavor 3.7.Keywords: baby java, citric acid, effervescent, orange, vitamin C

Abstract

AbstrakPenelitian ini bertujuan untuk menentukan proporsi bubur kelapa gading dan santan kelapa terbaik, sehingga didapatkan karakteristik fisik, kimia, dan organoleptik es krim berkualitas, serta meningkatkan nilai ekonomi kelapa gading agar menjadi komoditas komersial. Bubur kelapa gading dibuat dari daging kelapa gading, sedangkan santan kelapa dibuat dari parutan kelapa hijau yang bertujuan untuk mendapatkan harga es krim ekonomis. Penelitian ini menggunakan Rancangan Acak Kelompok (RAK) dengan 1 faktor, yaitu proporsi bubur kelapa gading dan santan kelapa (70%:30%, 60%:40%, 50%:50%, 60%:40%). Hasil penelitian menunjukkan bahwa perbedaan penggunaan proporsi bubur kelapa gading dan santan kelapa berpengaruh nyata pada parameter aroma, rasa, tekstur, viskositas, overrun, dan kecepatan leleh, tetapi tidak berpengaruh nyata pada warna dan pH. Pemilihan perlakuan terbaik penelitian ini adalah es krim kelapa gading dengan konsentrasi bubur kelapa gading 60% dan santan kelapa 40%. Karakteristik fisik pada perlakuan terbaik meliputi overrun 32,46%, waktu leleh 9,62 menit, viskositas 2982 cP, dan nilai pH 5,917, sedangkan karakteristik kimia meliputi protein 3,7%, lemak 5,5%, air 59,94%, abu 1,25%, dan karbohidrat 29,61%. Es krim kelapa gading perlakuan terbaik memiliki biaya paling ekonomis, serta memiliki skor hedonik lebih mendekati es krim komersial berdasarkan tingkat kepentingan rasa dan tekstur yang merupakan bobot kepentingan tertinggi dari panelis.Kata kunci : es Krim, kelapa gading, proksimat, santan kelapaAbstractThe purpose of this research is to determine the proportion of ivory coconut pulp and coconut milk to make qualified ice cream based from physical, chemical, and organoleptic characteristics, and increase the economic value of ivory coconut for comercial comodities. The pulp is made from ivory coconut flesh, while the milk is from the grated of green coconut flesh, to aim the economic price of ice cream. This research uses randomized block design with one factor from proportion of ivory coconut pulp and coconut milk (70%:30%, 60%:40%, 50%:50%, 40%:60%). The result shows the difference of using ivory coconut pulp and milk coconut concentration significantly influence based from flavour, texture, viscosity, overrun, and melting down, except from color and pH. The best treatment choose ice cream with 60% of ivory coconut pulp and 40% coconut milk. The best physical characteristics are 32,46 of overrun, 9,62 minutes of melting time, 2982 cP of viscosity, dan 5,917 of pH, while chemical characteristics are 3,7% of protein, 5,5% of fat, 59,94% of water, 1,25% of ash, and 29,61% of  carbohydrate. This type of ice cream (from the best treatment) has the most economical cost and the hedonic score is approximate to commercial ice cream from flavour and texture, which was the highest importance weight from panelists.Keywords: ice cream, ivory coconut, milk coconut, proximate
