AbtrakPenelitian ini bertujuan membedakan produk-produk berindikasi geografis dari Daerah Istimewa Yogyakarta menggunakan kandungan mineralnya. Kandungan dari empat elemen, yaitu Cu, Fe, Mn dan Zn, pada sampel salak pondoh dan nira kelapa yang merupakan produk berindikasi geografis dari Daerah Istimewa Yogyakarta diukur menggunakan Atomic Absorption Spectrometry (AAS). Data yang diperoleh kemudian diolah menggunakan diagram pencar dan analisis diskriminan. Penggunaan diagram pencar elemen Fe dan Mn mampu memisahkan sampel salak pondoh Sleman dengan sampel dari daerah lain, sementara penggunaan Canonical Discriminant Analysis mampu memisahkan sampel nira kelapa Kulonprogo dari daerah lain dengan tingkat ketepatan prediksi mencapai lebih dari 80%.Kata kunci: indikasi geografis, nira kelapa, salak pondoh, Yogyakarta AbstractThis study aims to discriminate Yogyakarta’s geographical indication products using their mineral contents. Mineral content of four elements, Cu, Fe, Mn, and Zn, in pondoh snake fruit and coconut sap which are geographical indication products from Yogyakarta Special Region (DIY) were measured by Atomic Absorption Spectrometry (AAS). The collected data were then analyzed with scatter and discriminant analysis. Scatter diagram of Fe and Mn was able to discriminate Sleman’s Pondoh snake fruits from other regions while Canonical Discriminant Analysis was able to separate Kulonprogo’s coconut sap samples from the other investigated regions with accurate prediction rate more than 80%.Keywords: coconut sap, geographical indication, pondoh snake fruit, Yogyakarta

AbstrakTujuan penelitian ini adalah mendapatkan umur simpan bubur dari kombinasi lobak, nanas madu, dan kemiri sebelum dilakukan pengeringan, serta lama pengeringan dan konsentrasi bahan pembusa Tween 80 yang tepat dengan metode foam mat drying agar menghasilkan produk yang berkualitas dan dapat digunakan sebagai obat bagi penderita asam urat. Rancangan penelitian disusun dengan Rancangan Acak Kelompok. Penelitian diawali dengan membuat bubur dari lobak, nanas madu, dan kemiri. Lalu ditentukan umur simpan dengan hasil uji TPC (Total Plate Count) dan pH, selanjutnya dibubukkan. Terdapat dua faktor dalam pembubukan yaitu lama pengeringan dan konsentrasi tween 80 yang dikombinasikan menjadi 9 perlakuan. Hasil penentuan umur simpan menunjukkan bubur anti asam urat dapat bertahan selama maksimal 8 jam pada suhu ruang dengan acuan perhitungan TPC. Hasil terbaik bubuk anti asam urat yaitu pada perlakuan lama pengeringan 24 jam dan penambahan Tween 80 0,7% dengan hasil uji organoleptik berturut-turut yaitu warna 4,55 (agak menyukai), rasa 4,8 (menyukai), aroma 4,8 (menyukai), dan tekstur 4,95 (menyukai). Bubuk anti asam urat terbaik menghasilkan TPC sebesar 1,4 x 10² koloni/g, pH sebesar 4,3, rendemen sebesar 16,777%, dan kadar air sebesar 4,435%.Kata Kunci: asam urat, lobak, nanas madu, kemiri AbstractThe purpose of this study is finding the shelf life of the combination of pureed radish, honey pineapple and candlenut prior to drying and finding drying time and the concentration of foaming agents Tween 80 to produce good quality powder. The research design prepared by a randomized block design. This research begins with making a slurry of material. Then the TPC (Total Plate Count) and pH are tested. Then determined the shelf life to the next in pulverization. There are two factors in pulverization process: drying time and concentration Tween 80 are combined into nine treatments. The results of the determination of shelf life arthritis gout powder can last maximum 8 hours at room temperature with reference to the calculation of TPC. The best results of powder, anti-gout is on the treatment of drying time 24 hours and Tween 80 0.7% addition with the results of organoleptic test are the color is 4.55 (a bit liked), flavor is 4.8 (liked), aroma 4.8 (liked), and the texture is 4.95 (liked). Best powder provides TPC in the amount of 1.4 x 10² colonies / g, a pH of 4.3, a yield of 16.777%, and a water content of 4.435%.Keywords: candlenut, honey pineapple, uric acid, radish

AbstrakTujuan dari penelitian ini adalah mengetahui pegaruh konsentrasi asam dan waktu hidrolisis terhadap kadar gula total serta kadar gula reduksi. Metode penelitian yang digunakan adalah Rancang Acak Kelompok (RAK) faktorial 2 faktor yaitu konsentrasi H2SO4 dan lama waktu hidrolisis. Faktor pertama terdiri dari tiga level yaitu 0,4M, 0,6M dan 0,8M, sedangkan faktor kedua terdiri dari tiga level yaitu 60 menit, 80 menit dan 100 menit dari rancangan tersebut diperoleh sembilan kombinasi. Pada setiap kombinasi dilakukan tiga ulangan (27 sampel). Selanjutnya, dilakukan uji kadar gula total menggunakan refraktometer dan kadar gula reduksi menggunakan Nelson Somogyi. Data kemudian dianalisis menggunakan ANOVA dan uji DMRT 5%. Hasil pengamatan menunjukkan kandungan gula total tertinggi saat proses hidrolisis adalah perlakuan H2SO4 0,6M dengan waktu 100 menit yaitu 10,7%. Berdasarkan uji Anova dan DMRT5% bahwa kedua faktor perlakuan berpengaruh signifikan terhadap kadar gula dan berbeda nyata. Gula reduksi yang dihasilkan pada proses hidrolisis sebesar 19,29%. Dari bahan tersebut didapatkan etanol hasil fermentasi sebesar 4%.Kata kunci: bioetanol, gula, hidrolisis, pelepah sawit AbstractThe purpose of this research was to determine the effect of acid concentrations and hydrolysis time. Randomized Completely Block Design were arranged in a factorial with two factors : H2SO4 concentrations were 0.4M, 0.6M, 0.8M and hydrolysis time were 60 minutes, 80 minutes, 100 minutes. Each combination repeated three times. Samples were tested of total sugar content using refractometer and were tested of reducing sugar using Nelson Somogyi. Data were analyzed used two-ways ANOVA and conducted further test using the DMRT 5%. The result showed that the highest total sugar content is 10.7% in the treatment of H2SO4 concentration 0.6M and hydrolysis time 100 minutes. Based on ANOVA and DMRT test, all factors had significantly effect of the percentage of sugar. Beside that, in this research also have reduction sugar about 19.29% from sugar content of result hydrolysis process. Pretreatment oil palm frond using H2SO4 was produced 4% etanol after fermentation.Keywords: bioetanol, hydrolysis, oil palm frond, sugar

Perbandingan Ekstrak Bayam dan Ubi Jalar, Serta Lama Pemasakan terhadap Sifat Fisikokimia Saus Bayam Poppy Diana Sari; Atmiral Ernes; Dwi Rianto

AbstrakTujuan penelitian ini adalah untuk mengetahui perbandingan ekstrak bayam dengan ubi jalar dan lama pemasakan perlakuan terbaik berdasarkan uji organoleptik dan pengaruhnya terhadap sifat fisikokimia saus bayam. Penelitian ini dilakukan dengan 2 variabel perlakuan, variabel pertama yaitu perbandingan kadar bayam dengan ubi sebanyak 3 level yaitu 25%:75%, 50%:50%, dan 75%:25% untuk bayam:ubi. Variabel ke dua yaitu efektivitas lama pemasakan dengan 3 level yaitu 5 menit, 7 menit dan 9 menit pemasakan. Pengujian yang dilakukan yaitu dengan cara uji organoleptik yang akan menilai dari segi rasa, warna, tekstur dan kekentalan, hasil terbaik akan diuji sifat fisikokimia dengan parameter kadar air, viskositas, warna, serat dan zat besi (Fe). Dari hasil pengujian organoleptik diperoleh hasil perbandingan dan kombinasi sampel terbaik yaitu A2B2 dengan bayam 50%:50% ubi jalar dengan lama pemasakan 7 menit. Dengan hasil rata-rata warna dengan nilai 8, rasa dengan nilai 8,1, tekstur dengan nilai 7,9 dan kekentalan yaitu 6,8. Dari hasil pengambilan sampel perlakuan terbaik diujikan sifat fisikokimia dengan hasil kadar air 78,86 %, viskositas 17,65 Cp, warna hijau tua gelap berwarna asli klorofil, serat 5,16%, dan kandungan besi (fe) 2,01 mg/100gram.Kata kunci: saus bayam, efektifitas waktu, sifat fisikokimia AbstractThe aim of this research is to find the spinach extract and sweet potato ratio, cooking time for best treatment based on organoleptic test, and its influence to spinach sauce physicochemical properties. This research was done by 2 treatment variables. The first variable is the spinach extract and sweet potato ratio, with 3 levels treatment, namely 25%:75%, 50%:50%, and 75%:25%.The second variable is cooking time effectiveness with 3 levels treatment, namely 5, 7and 9 minutes. The analyzes was done by organoleptic which was assessed in term of taste, colour, texture and viscousity, the best result obtained then performed physicochemical analyzed by the water contained, viscousity, colour, fibre and iron (Fe) parameter.From the organoleptic analyzes, the bestspinach extract and sweet potato ratio treatment is A2B2 with the ratio of 50%:50% spinach extract:sweet potatowith 7 minutes cooking time. The average colour value of 8, taste value is 8.1, texture value of 7.9, and viscousity value of 6.8. From the best treatment, the physichochemical properties was conductedwith the result 78.86% of water content,viscousity of 17.65 Cp, dark green colour from the clorophyl, fibre of 5.16%, and the Iron (Fe) content of 2.01 mg/100gram.Keywords: physichochemical properties, spinach sauce, time effectiveness

AbstrakRisiko produksi merupakan suatu keadaan yang dapat merugikan pencapaian tujuan dan sasaran organisasi bisnis. UKM XYZ merupakan industri kecil pembuat keripik tempe yang memiliki risiko pada proses produksi. Tujuan penelitian adalah menganalisis dan merumuskan strategi mitigasi risiko yang dihadapi pada UKM XYZ. Metode analisis yang digunakan adalah Failure Mode Effect Analysis (FMEA) dan Analytical Hierarchy Process (AHP). Hasil penelitian menunjukkan risiko tertinggi yaitu harga bahan baku kedelai yang berfluktuasi, hasil produk keripik tempe yang kurang baik dan beragam, serta permintaan keripik tempe tidak pasti. Tulisan ini juga mengembangkan strategi mitigasi risiko proses produksi.Kata kunci: AHP, FMEA, keripik tempe, risiko produksi AbstractProduction risk is a condition that can be detrimental to the achievement of the goals and objectives of the business organization. UKM XYZ is a small industry of tempe chips producer that has a risk on the production process. The objective of the research is to analyze and formulate risk mitigation strategies. The analysis method used is Failure Mode Effect Analysis (FMEA) and Analytical Hierarchy Process (AHP). The results showed the highest risk are fluctuating soybean feedstock, low diversity and quality of the product, and demand of tempe chips is uncertain. AbstrakTujuan penelitian adalah membandingkan aktivitas antibakteri minyak atsiri ranting, kulit buah dan daun jeruk purut (Citrus hystrix DC) terhadap bakteri Klebsiella pneumoniae DC, serta mengetahui pengaruh konsentrasi minyak atsiri jeruk purut (Citrus hystrix DC)Â dalam menghambat pertumbuhan bakteri Klebsiella pneumoniae DC. Rancangan percobaan yang digunakan adalah rancangan acak tersarang (nested design) dengan dua faktor. Faktor pertama adalah jenis minyak atsiri (ranting, kulit buah dan daun jeruk purut). Faktor kedua adalah konsentrasi (100 Âµl/ml, 300 Âµl/ml dan 500 Âµl/ml). Diulang sebanyak 3 kali. Ethanol 95% sebagai kontrol positif dan aquades steril sebagai kontrol negatif. Hasil penelitian menunjukkan bahwa minyak atsiri yang berasal dari kulit buah jeruk purut memiliki kemampuan menghambat pertumbuhan Klebsiella pneumoniae ATCC lebih kuat dari pada yang berasal ranting dan daun. Jumlah minyak atsiri kulit buah jeruk purut, ranting maupun daun jeruk purut tidakÂ berpengaruh terhadap pertumbuhan Klebsiella pneumoniae ATCC.Kata kunci:Â antibakteri, jeruk purut (Citrus hystrix DC), Klebsiella pneumoniae ATCC, minyak atsiriAbstractThe objective of the study was to compare the antibacterial activity of essential oil of twigs, kaffir lime peels and leafs (Citrus hystrix DC) to Klebsiella pneumoniae DC bacteria, and to know the effect of citrus hystrix DC in limiting the growth of Klebsiella pneumoniae DC bacteria. The experimental design used was a nested design with two factors. The first factor is the type of essential oil (twigs, kaffir lime peels and leaves). The second factor is concentration (100 Î¼l / ml, 300 Î¼l / ml and 500 Î¼l / ml). Repeated 3 times. Ethanol 95% as positive control and sterile aquades as negative control. The results showed that the essential oil derived from the kaffir lime peels has the ability to inhibit the growth of Klebsiella pneumoniae ATCC stronger than that derived from twigs and leaves. The amount of essential oil of kaffir lime leaves, twigs and leaves of kaffir lime has no effect on the growth of Klebsiella pneumoniae ATCC.Keywords: antibactery, essential oil, kaffir lime (Citrus hystrix DC), Klebsiella pneumoniae ATCCÂ

AbstrakUsaha kecil menengah minuman sari buah sirsak termasuk dalam bidang pengolahan pangan. Dalam realitasnya usaha ini banyak mengalami permasalahan terutama dalam hal pengembangan usaha supaya mampu bertahan dalam persaingan bisnis. Perencanaan strategis untuk pengembangan usaha perlu dibuat agar operasional industri dapat berjalan efektif dan efisien. Penelitian ini menggunakan metode penelitian kualitatif deskriptif dengan bantuan analisis SWOT. Metode ini mampu menganalisis kekuatan, kelemahan, peluang dan ancaman. Data diperoleh dari hasil wawancara dengan pemilik usaha pengelolaan minuman sari buah sirsak serta konsumennya. Berdasarkan analisis SWOT, formulasi strategi yang cocok digunakan adalah strategi pengembangan pasar untuk menambah jumlah konsumen.Kata kunci: analisis SWOT, pengembangan usaha, usaha kecil menengah AbstractSmall and medium businesses soursop juice drink included in the field of food processing. In reality this business has many problems especially in terms of business development in order to survive in business competition. To develop its business hence need to be made strategic planning for operational of industry can run effectively and efficient. This research used descriptive qualitative research method by SWOT analysis. This method is able to analyze strengths, weaknesses, opportunities and threats. The data obtained from the interview with the business owner of soursop juice management and consumers.
