AbstrakMinuman es seperti es kelapa, es buah, es campur, jus buah, es teh dan es dengan cincau banyak ditemukan di kota Bogor dan harus terjamin keamanannya. Penelitian ini bertujuan untuk mengetahui karakteristik dan kondisi pedagang minuman es, serta tingkat kepatuhannya terhadap pelaksanaan good manufacturing practices/cara produksi pangan yang baik (CPPB) selama proses pengolahan minuman es. Survei dan observasi dilakukan terhadap 90 orang pedagang minuman es yang menggunakan hancuran es untuk minumannya, dengan tiga skala usaha berdasarkan kelas ekonominya yaitu, skala kelas bawah yang terdiri dari pedagang kaki lima, skala kelas menengah yang terdiri dari rumah makan dan kedai, dan skala kelas atas yang terdiri dari restoran dan hotel. Pada umumnya pedagang membuat es batu menggunakan air dalam kemasan (56,23%). Sebagian pedagang membuat es batu dari air mentah yaitu air PAM (71,43%), sebanyak 6,49% diantaranya tidak melakukan perebusan terlebih dahulu. Semakin tinggi tingkat pendidikan dan besar skala usaha, semakin tinggi tingkat kepatuhan pedagang terhadap penerapan CPPB. Tingkat kepatuhan terhadap CPPB dari setiap skala usaha adalah 4,69% untuk skala usaha kelas bawah, 83,33% untuk skala kelas menengah, dan 100% untuk skala kelas atas.Kata kunci: cara produksi pangan yang baik, minuman es, tingkat kepatuhan AbstractIced drinks such as coconut ice, ice fruit soup, mixed blend ice, fruit juice, iced tea, and ice with grass jelly are commonly found in Bogor and should be safe for human consumption. The objectives of this study were to determine the characteristics and conditions of seller iced beverages, and identify the level of compliance on the implementation of good manufacturing practices (GMP) during the processing of ice drinks. The survey and observation were conducted to 90 iced drink sellers. There was three business scale observed based on economic class: small-scale business consists of street vendors; medium-scale business consists of small restaurants and food stalls and large-scale business consists of restaurants and hotels. Most of the seller used bottled water (56.23%) as raw material. Some sellers made ice cubes using tap water from Indonesian regional water company (71.43%) and 6.49% from them did not boil the water before. The higher level of education and the bigger business scale gave the higher level of vendors compliance towards the application of GMPs. The level of compliance to GMP from each business scale was 4.69% for small-scale business, 83.33% for medium-scale business, and 100% for large-scale business.Keywords: good manufacturing practices, iced drinks, level of compliance

AbstrakPenelitian ini bertujuan untuk mengetahui nilai Technology Contribution Coefficient (TCC) dan nilai kontribusi komponen teknologi yang meliputi technoware, humanware, infoware, dan orgaware di PT Z dengan komoditas utama kopi. Metode penelitian yang digunakan adalah pengamatan terhadap perusahaan dan wawancara kepada 10 orang karyawan dan 4 orang trainee. Pengolahan data menggunakan metode Teknometrik didukung metode SMART (Simple Multi Attribute Rating Technique) dan analisis SWOT. Hasil penelitian menunjukkan nilai TCC PT Z adalah 0,7255. Berdasarkan nilai TCC, PT Z termasuk klasifikasi sangat baik dan berdasarkan tingkat teknologi memiliki tingkat teknologi modern. Nilai kontribusi komponen teknologi orgaware mempunyai kontribusi yang paling tinggi (0,9444), kemudian infoware (0,8241), humanware (0,6283), dan terkecil technoware (0,4954). Hasil diagram posisi analisis SWOT komponen technoware, infoware, orgaware pada kuadran I, sedangkan komponen humanware pada kuadran II. Hasil penilaian kontribusi teknologi ini dikaitkan dengan pilihan strateginya bahwa sekalipun perusahaan kopi, dalam penerapan teknologi perlu siaga menyesuaikan kecepatan perubahan teknologi yang cepat. Upaya penyesuaian ini sangat dibantu dengan sangat terbukanya ketersediaan informasi teknologi. Keadaan ini bisa menjadi rujukan bagi perusahaan sejenis.Kata kunci: analisis SWOT, Simple Multi Attribute Rating Technique, Technology Contribution Coefficient, teknometrik AbstractThis study aims to determine the value of Technology Contribution Coefficient (TCC) and the value of the contribution component technologies include technoware, humanware, infoware, and orgaware in PT Z where coffee becomes a commodity business. The research method used is an in-depth observation of the company and interviews with 10 employees and 4 trainees. Data processing used technometric supported by the SMART method and SWOT analysis. Based on the research results the Value of TCC PT Z was 0.7255. Based on the value of TCC, PT Z includes good classification and based on the level of technology has a modern technology. The value of orgaware contributes the highest (0.9444), infoware (0.8241), humanware (0.6283) and the smallest technoware (0.4954). SWOT analysis of the diagram position, technoware, infoware, orgaware in quadrant I, meanwhile humanware in quadrant II. The result of this technology contribution assessment associated with the chosen strategy that even coffee companies, in the application of technology need to be alert to adjust the speed of rapid technological change. This adjustment effort is greatly assisted by the high availability of information technology. AbstrakPenelitian ini bertujuan untuk mengetahui pertumbuhan dan produktivitas jamur tiram putih dari medium tanam campuran sengon, ampas tebu dan jerami padi. Metode penelitian menggunakan Rancangan Acak Lengkap (RAL)tersarang dimana perbedaan komposisi medium tanam sebagai faktor utama dan waktu panen (panen pertama, kedua, ketiga) merupakan faktor tersarang. Komposisi medium tanam terdiri dari 4 perlakuan yaitu A (serbuk gergaji 100%, tanpa ampas tebu dan jerami padi), B (serbuk gergaji 50%, ampas tebu 25% dan jerami padi 25%), C (serbuk gergaji 25%, ampas tebu 50%, jerami padi 25%) dan D (serbuk gergaji 25%, ampas tebu 25%, jerami padi 50%). Analisis data menggunakan ANOVA, jika terdapat beda nyata dilakukan uji lanjut DMRT. Pertumbuhan miselium tercepat pada medium C dengan kecepatan laju pertumbuhan 0,71 cm/hari selama 28 hari. Lama waktu panen berhubungan dengan pertumbuhan miselium dimana miselium baglog C lebih cepat panen daripada baglog lainnya. Hasil produktivitas dari medium tanam D memiliki hasil yang paling baik dibandingkan dengan medium tanam lainnya. Hasil berat segar dan produktivitas lebih tinggi pada panen pertama dan mampu menghasilkan berat segar jamur sebesar 177,8100 gram dan produktivitas jamur mencapai 11,7100 gram/hari.Kata kunci: ampas tebu, jerami padi, Pleurotus ostreatus, serbuk gergaji AbstractThis study aims to determine the growth and productivity of white oyster mushrooms from the medium planting of sengon wood dust, sugarcane bagasse and rice straw mixture. The research method used Complete Randomized Design where the difference of cropping medium composition as the main factor and harvest time (first, second, the third harvest) as the nested factor. The composition of plant medium consists of 4 treatments there are A (100% wood dust), B (50% wood dust, 25% sugarcane bagasse and 25% rice straw), C (25% wood dust, 50% sugarcane bagasse, 25% rice straw) and D (25% wood dust, 25% sugarcane bagasse, 50% rice straw). ANOVA used to analyze the data and DMRT used for a further test if there is a real difference. The fastest mycelium growth in medium C with a growth rate of 0.71 cm/day for 28 days. The harvest time relates to the growth of the mycelium where the baglog C harvests faster than other baglogs. The yield of productivity from planting medium D has the best result compared to another planting medium. The result of fresh weight and productivity is higher at first harvest and able to produce a fresh weight of mushroom equal to 177.8100 gram and mushroom productivity reach 11.7100 gram/day.Keywords: Pleurotus ostreatus, rice straw, sugarcane bagasse, wood dust

AbstrakSusu kedelai dan tempe adalah pangan olahan yang digemari masyarakat Indonesia dan menjadi salah satu sumber protein nabati yang terbuat dari kedelai. Kedelai mengandung senyawa isoflavon glikosida yang bermanfaat untuk kesehatan sebagai pencegah penyakit kardiovaskuler, kanker, diabetes, hipertensi, osteoporosis, obesitas dan menopause. Isoflavon glikosida memiliki struktur yang lebih kompleks, sehingga perlu mengalami proses biokimiawi untuk menyederhanakan strukturnya agar mudah diserap oleh tubuh. Isoflavon glikosida akan disederhanakan menjadi bentuk aglikon selama proses fermentasi dan hidrolisis kimiawi. Genistein merupakan salah satu bentuk isoflavon aglikon yang banyak ditemui pada produk kacang-kacangan. Susu kedelai dan tempe merupakan produk olahan dari kedelai, perbedaannya adalah tempe telah mengalami proses fermentasi, sehingga diyakini memiliki kadar isoflavon aglikon yang tinggi. Penelitian ini bertujuan untuk menentukan kadar genistein pada ekstrak susu kedelai dan tempe dengan menggunakan spektrofotometri UV-Vis. Sampel diekstraksi dengan menggunakan etil asetat, sehingga diperoleh ekstrak kental, selanjutnya diukur kadar genistein dengan metode spektrofotometri UV-Vis, menggunakan baku standar. Hasil penelitian diperoleh kadar genistein pada ekstrak susu kedelai dan tempe yaitu masing-masing 0.613 dan 5.519% (b/b). Hal ini menunjukkan bahwa kadar isoflavon aglikon lebih tinggi pada tempe dibanding susu kedelai.Kata kunci: genistein, isoflavon aglikon, susu kedelai, tempe AbstractSoymilk and tempeh are a processed food that is popular with Indonesian society and becomes one of vegetable protein source made from soybean. Soy contains isoflavones glycosides are useful for health as preventions of cardiovascular disease, cancer, diabetes, hypertension, osteoporosis, obesity, and menopause. Isoflavones glycosides have more complex structures, so they need to undergo biochemical processes to simplify their structure and are easily absorbed by the body. Isoflavones glycosides will be simplified into aglycone forms during chemical fermentation and hydrolysis processes. Genistein is one form of isoflavone aglycone that is commonly found in nuts products. Soymilk and tempeh are processed products from soybeans, the difference is tempeh has undergone a fermentation process, so it is believed to have high levels of isoflavone aglycone. The purpose of this study was to determine the genistein content in the extract of soymilk and tempeh by using UV-Vis spectrophotometry. The sample was extracted by using ethyl acetate, so obtained by viscous extract, then measured its genistein level by UV-Vis spectrophotometry method, using standard reference. The result showed that genistein content of soymilk and tempeh extract were 0.613 and 5.519% (w/w), respectively. This indicates that isoflavone aglycone content is higher in tempeh than soymilk.Keywords: genistein, isoflavone aglycone, soymilk, tempeh

Delignifikasi Batang Sawit Nonproduktif secara Organosolv dengan Asam Formiat Fatmayati Fatmayati; Nur Asma Deli

AbstrakBatang sawit nonproduktif adalah salah satu biomassa lignoselulosa, sumber bioetanol generasi kedua. Pretreatment dibutuhkan untuk mendapatkan perbandingan selulosa cukup besar terhadap lignin yang kemudian dihidrolisis dan difermentasi untuk menghasilkan bioetanol. Tujuan dari penelitian ini adalah mempelajari proses delignifikasi batang sawit nonproduktif untuk mengurangi atau menghilangkan kandungan lignin sehingga perbandingan selulosa terhadap lignin cukup besar dan mendapatkan kondisi waktu reaksi terbaik pada proses delignifikasi batang sawit nonproduktif menggunakan pelarut asam formiat. Pelaksanaan penelitian terdiri dari tiga tahapan, yaitu karakterisasi batang sawit nonproduktif sebagai bahan baku, proses delignifikasi batang sawit nonproduktif dan tahap karakterisasi pulp hasil delignifikasi. Berdasarkan hasil penelitian, didapatkan waktu reaksi delignifikasi terbaik pada penelitian ini yaitu 120 menit, dimana terjadi perolehan kadar lignin sebesar 8%. Pada waktu reaksi tersebut juga diperoleh kadar selulosa cukup maksimal yaitu 82,5%.Kata kunci: asam formiat, batang sawit, delignifikasi, organosolv, pretreatment bioetanol AbstractNon-productive palm oil trunk is one of the lignocellulose biomass, second generation bioethanol source. Pre-treatment is needed to obtain a considerable cellulose ratio of lignin which is then hydrolyzed and fermented to produce bioethanol. The purpose of this study was to study the process of delignification of non-productive palm oil trunk to reduce or eliminate the lignin content so that the cellulose to lignin ratio is large and obtain the best reaction time condition in the process of delignification of non-productive palm oil trunk using formic acid solvent. The research implementation consists of three stages. There are the characterization of non-productive palm oil trunk as raw material, the process of delignification of non-productive palm oil trunk and pulp characterization stage of a delignification result. Based on the result of the research, the best delignification reaction time in this research is 120 minutes, where the lignin content is 8%. At the time of the reaction also obtained a maximum cellulose content of 82.5%.Keywords: delignification, formic acid, organosolv, palm oil trunks, pretreatment bioethanol

Abstrak Badan Pusat Statistik Nasional (BPS) menyatakan jumlah produksi dan produktivitas minyak nilam Sumatera Barat khususnya Pasaman Barat mengalami penurunan beberapa tahun terakhir. Menurunnya produksi nilam Pasaman Barat tentunya akan berpengaruh langsung pada nilai ekspor Indonesia. Posisi Indonesia sebagai negara penghasil minyak nilam dunia akan melemah. Penelitian ini bertujuan menggambarkan kompleksitas agroindustri minyak nilam di Pasaman Barat yang dimulai dari suplai bahan baku di tingkat petani hingga pemasaran produk berupa minyak nilam di tingkat pengumpul. Adapun tahapan yang dilakukan dalam penelitian ini adalah survei dan wawancara kepada pelaku agroindustri minyak nilam di Pasaman Barat, studi literatur, membangun model rantai pasok agroindustri minyak nilam di Pasaman Barat, menentukan faktor yang mempengaruhi produksi minyak nilam di sepanjang rantai pasok, menentukan hubungan antar faktor dan pembuatan rantai untuk setiap tahapan. Pengambilan data dilakukan melalui wawancara dan mengambil data yang sudah ada di BPS. Faktor harga minyak nilam saat ini merupakan faktor yang mempengaruhi jumlah stok nilam pada ketiga level model. Jika harga meningkat maka stok pada masing-masing level meningkat, atau sebaliknya jika harga turun maka stok akan mengalami penurunan. Diduga faktor harga merupakan pemicu utama menurunnya produktivitas nilam di Pasaman Barat beberapa tahun terakhir.Kata kunci: agroindustri, minyak nilam, model konseptual, sistem dinamikÂ AbstractBadan Pusat Statistik Nasional (BPS) shows that the number production and productivity of patchouli oil at West Sumatra, especially in West Pasaman has decreased in recent years. The decline of patchouli production will have an immediate effect on Indonesia export value. Indonesia position as the producer of patchouli oil in the world will weaken. This study aims to illustrate the complexity of patchouli oil agro-industry in Pasaman Barat starting from the raw material supply at the farmer level to the marketing of patchouli oil at the collecting level. The stages of this research were survey and interview to the actors of patchouli oil agro-industry in Pasaman Barat, literature study, design supply chain of patchouli oil agro-industry in Pasaman Barat, determine the factors that influence the production of patchouli at supply chain stages, determine the relationship between factors and making the chain for each stage. Data collection were done through interviews and data that already exist in BPS. Patchouli oil current price is a factor affecting the amount of patchouli stock at the third level of the model. If price increase, stock at each level also increase, otherwise if the price falls then the stock will decrease. Perhaps the price factor is the main trigger of the decline in patchouli productivity in West Pasaman in recent years.Keywords: agro-industry, conceptual model, dynamic system, patchouli oilÂ

AbstrakUdang merupakan salah satu komoditas perikanan dengan potensi besar. UD Ali Ridho Group adalah salah satu pemasok udang Windu dan Vannamei di Kabupaten Sidoarjo. Penelitian ini bertujuan untuk mengetahui arus produk, keuangan, dan informasi serta menganalisa nilai tambah dan tingkat efisiensi pemasaran pada persediaan udang pada UD Ali Ridho Group. Metode penelitian yang digunakan adalah aliran rantai pasok, metode Hayami nilai tambah, konsep efisiensi dan distribusi margin pemasaran. Hasilnya menunjukkan bahwa ada aliran produk, arus keuangan, dan arus informasi pada rantai pasokan Windu dan Vannamei di UD Ali Ridho Group. Penanganan Windu dan Vannamei pada bulan April 2017 memberikan nilai positif per kg untuk pemasaran ke eksportir udang sebesar Rp3.332,31 dan Rp3.499,38 dan pemasaran ke konsumen ritel sebesar Rp40.332,00 dan Rp23.663,88. Nilai efisiensi pemasaran Windu dan Vannamei pada bulan April 2017 terhadap eksportir adalah 2,25% dan 1,97%.Kata kunci: efisiensi pemasaran, nilai tambah, rantai pasokan, udang AbstractShrimp is one of the fishery commodities with great potential. UD Ali Ridho Group is one of Windu and Vannamei shrimp supplier in Sidoarjo Regency. This study aims to find out the flow of products, finance, and information as well as analyzing added value and marketing efficiency level on shrimp supply at UD Ali Ridho Group. The research used supply chain flow, Hayami’s value added method, efficiency concept and marketing margin distribution. The results show that there are product flow, financial flow, and information flow in Windu and Vannamei’s supply chain at UD Ali Ridho Group. The handling of Windu and Vannamei in April 2017 gave a positive added value for marketing to shrimp exporters of 3,332.31 IDR and 3,499.38 IDR and marketing to retail consumers of 40,332.00 IDR and 23,663.88 IDR. The value of Windu and Vannamei’s marketing efficiency in April 2017 to exporters was 2.25% and 1.97%.Keywords: marketing efficiency, shrimp, supply chain, added value
