Abstract

AbstrakMeningkatnya kebutuhan protein hewani menyebabkan permintaan komoditi ikan meningkat. Sumber protein hewani yang banyak beredar di pasaran adalah lele (Clariasbatrachus). Pellet sebagai sumber utama pakan memiliki harga yang mahal sehingga perlu alternatif lain untuk mengurangi biaya penyediaan pakan. Maggot (Hermetiaillucens Linnaeus) merupakan larva lalat black soldier yang memiliki tekstur kenyal, berprotein tinggi serta memiliki kemampuan untuk mengeluarkan enzim alami yang membantu meningkatkan sistem pencernaan ikan. Penelitian ini bertujuan mengetahui potensi analisis usaha budidaya maggot serta penghematan yang dapat dilakukan jika maggot diberikan sebagai alternatif kombinasi pellet untuk pakan lele. Dari hasil penelitian didapatkan bahwa diperlukan waktu hingga 2 minggu untuk menghasilkan maggot yang siap digunakan untuk pakan. Hasil penelitian menunjukkan bahwa maggot sangat berpotensi sebagai untuk dibudidayakan sebagai alternatif pakan ikan lele. Penggunaan 50% pellet dan 50% maggot dapat menghemat biaya pengadaan pakan sebesar 22,74%.Kata kunci: maggot, budidaya, penghematan biaya pakan AbstractThe increasing need for animal protein increases the demand for fish commodities. The source of animal protein that is widely circulating in the market is catfish (Clariasbatrachus). Pellet as the primary source of feed has a high price so need another alternative to reduce the cost of providing feed. Maggot (Hermetiaillucens Linnaeus) is a black soldier fly larva that has a chewy texture, high protein and has the ability producing natural enzymes that help improve the digestive system of fish This study aims to determine the potential analysis of maggot cultivation and savings that can be done if maggot is given as an alternative combination of pellets for catfish feed. From the results of the study found that it can take up to 2 weeks to produce a maggot that is ready for use for feed. The results showed that maggot is potential to be cultivated as an alternative to feeding catfish. The use of 50% pellets and 50% maggot can save the cost of feed procurement by 22.74%.Keywords: maggot, cultivation, feed cost saving

Abstract

AbstrakTujuan penelitian ini adalah mengetahui pengaruh dari persentase inokulum dan waktu inkubasi terhadap kemampuan isolat bakteri asetogenik untuk memproduksi total asam tertinggi serta mengetahui karakteristik dari isolat bakteri tersebut. Rancangan Acak Kelompok (RAK) disusun secara faktorial dengan dua faktor yaitu persentase inokulum (I) (10%, 15%, 20%) serta faktor waktu inkubasi (W) (24 jam, 48 jam, 72 jam). Kombinasi perlakuan terbaik pada isolat bakteri asetogenik dalam menghasilkan asam adalah I1W1, yakni persentase inokulum 10% dan waktu inkubasi 24 jam. Pada perlakuan ini kadar asam asetat yang dihasilkan adalah 3,853%, pH 5,544, total bakteri 7,7 x 107 CFU/ml, dengan kadar glukosa 2,5237%. Karakteristik dari isolat bakteri asetogenik terpilih secara morfologi koloni yaitu memiliki kenampakan warna putih, bentuk tidak beraturan, permukaan (elevasi) datar, dan tepi yang bergelombang. Berdasarkan morfologi sel, isolat bakteri merupakan bakteri Gram negatif bentuk batang. Berdasarkan identifikasi secara biokimia, isolat bakteri ini adalah Acinetobacter sp dengan probabilitas 51,25%.Kata kunci: asam asetat, bakteri asetogenik, isolasi, persentase inokulum, waktu inkubasi AbstractThe purpose of this research was to understand the effect of inoculum percentage and incubation time of acetogenic bacteria to produce total acid and to understand the characteristics of acetogenic bacteria that could produce the highest total acid. The experimental design used was Randomized Block Design that arranged in factorial with two factors: percentage of inoculum (I) (10%, 15%, 20%) and the factor Incubation time (W) (24 hours, 48 hours, 72 hours). The best treatment combination on isolated acetogenic bacteria to produce total acid was I1W1 (10% inoculum percentage and 24 hours incubation time ). This treatment produced 3.853% acetic acid levels, 5.544 pH, 7.7 x 107 CFU / ml total bacteria and 2.5237% glucose levels. The characteristics of isolated acetogenic bacteria based on colony morphology was white, irregular shape, surface (elevation) flat, and wavy edges. Based on cell morphology, the isolated bacteria were Gram-negative rod shape. Based on the biochemical identification, the isolated bacteria is an Acinetobacter sp with 51.25% probability.Keywords: acetic acid, acetogenic bacteria, isolation, percentage of inoculum, incubation time

Abstract

AbstrakSeluruh proses produksi pada UKM Sofia melibatkan kinerja manual manusia sehingga memiliki risiko cidera kerja tinggi. Tingkat beban kerja fisik yang dialami pekerja belum diketahui. Tujuan penelitian ini adalah menentukan tingkat beban kerja fisik pekerja pada UKM Sofia. Metode yang digunakan adalah pengukuran faktor fisiologis pekerja berupa denyut jantung (%HRR) dan konsumsi oksigen. Selain itu pengamatan terhadap suhu tubuh pekerja juga dilakukan untuk melihat pengaruh kegiatan bekerja pekerja terhadap suhu tubuh. Denyut jantung pekerja diukur menggunakan finger pulse oxymeter dan suhu tubuh diukur menggunakan termometer telinga, dilakukan sebelum, selama, dan sesudah pekerja bekerja. Tujuh pekerja pada UKM Sofia dijadikan objek penelitian untuk mengukur beban kerja tersebut. Hasil penelitian menunjukkan tingkat beban kerja fisik berdasarkan nilai %HRR dan konsumsi oksigen (liter/menit) adalah perebusan 23% (tidak terjadi kelelahan) 0,9 (berat), pencucian 1 31% (perlu perbaikan) 1,1 (berat), pencucian 2 31% (perlu perbaikan) 1,1 (berat), pengukusan 21% (tidak terjadi kelelahan) 1,1 (berat), pendinginan 10% (tidak terjadi kelelahan) 1,1 (berat), pemipihan dan penjemuran 15% (tidak terjadi kelelahan) 0,9 (sedang), pengayakan 9% (tidak terjadi kelelahan) 0,8 (sedang), dan penggorengan 16% (tidak terjadi kelelahan) 0,9 (sedang). Perbaikan sebaiknya dilakukan pada proses pencucian 1 dan 2 dikarenakan memiliki tingkat beban kerja fisik tertinggi.Kata kunci: beban kerja fisik, %HRR, kelelahan kerja, konsumsi oksigen, perbaikan kerja AbstractAll production process in UKM (SME) Sofia involving manual work, so it has a high risk of physical injury. Physical workload level endured by the workers has not identified yet. The method conducted was by measuring physiological factors of heart rate (%HRR) and oxygen consumption. Workers’ body temperature was also measured to analyze the work effect to body temperature. Heart rate measurement was done using finger pulse oximeter while body temperature using an ear thermometer, measured before, during, and after work. Seven workers at UKM Sofia were all involved to be these research respondents to measure the physical workload. Research results showed that physical workload based on %HRR and oxygen consumption (litre/minute) for boiling process 23% (low workload) and 0.9 (high), 1st washing process 31% (need improvement) and 1.1 (high), 2nd washing process 31% (need improvement) and 1.1 (high), steaming process 21% (low workload) and 1.1 (high), cooling process 10% (low workload) and 1.1 (high), drying process 15% (low workload) and 0.9 (medium), sieving process 9% (low workload) and 0.8 (medium), frying process 16% (low workload) 0.9 (medium). Abstract

AbstrakTempe merupakan produk fermentasi kedelai asli dari Indonesia yang tinggi protein. Pembuatan tempe menggunakan bumbu diharapkan menjadi inovasi. Tujuan penelitian ini adalah (1) mengetahui formulasi terbaik pembuatan tempe yang dibuat menggunakan bumbu, (2) mengetahui mutu hedonik terbaik pada tempe yang diberi penambahan bumbu, serta (3) mengetahui kandungan zat gizi yang terdapat pada tempe berbumbu berdasarkan hasil pengujian mutu hedonik terbaik. Uji yang dilakukan pada penelitian ini yaitu uji formulasi pembuatan tempe berbumbu (bawang putih, cabai, kunyit, dan jahe), uji organoleptik untuk mengetahui mutu hedonik, serta uji sifat kimia (analisis proksimat, kandungan asam lemak dan asam amino) terhadap hasil terbaik. Hasil formulasi tempe dengan menambahkan bumbu hingga 4% memperlihatkan hasil yang baik. Uji mutu hedonik menunjukkan penambahan bawang putih dan jahe sebanyak 4% pada pembuatan tempe lebih disukai dibandingkan penambahan kunyit dan cabai. Penambahan bumbu sebanyak 4% dapat meningkatkan kandungan gizi berdasarkan kandungan asam lemak dan kandungan asam amino pada tempe. Berdasarkan pengujian dengan menggunakan metode proksimat, kandungan zat gizi yang terdapat pada tempe berbumbu tidak jauh berbeda dibandingkan tempe tanpa bumbu.Kata kunci : tempe berbumbu, kandungan gizi, asam amino, asam lemak AbstractTempe is the original fermented soybean product from Indonesia which has high protein contents. Making tempe using spices is expected to be innovative. The objectives of this research are (1) to know the best formulation of tempe making made using spices, (2) to identify the best hedonic quality in tempe with added seasoning, and (3) to know the nutrient content contained in a spiced tempe based on the best hedonic quality test result. The test which conducted in this research is the formulation test of the manufacture of spiced tempe (garlic, chili, turmeric, and ginger), organoleptic test to know hedonic quality and test chemical properties (proximate analysis, fatty acid content and amino acid) to the best result. The result of tempe formulations by adding spices up to 4% shows good results. The hedonic quality test confirmed the addition of garlic and ginger as much as 4% in the manufacture of tempeh is preferred compared to the addition of turmeric and chili. Adding spices as much as 4% can increase the nutritional content based on fatty acid content and amino acid content in tempe. Meanwhile, based on testing that using the proximate method, the nutrients content contained in spiced tempe is not much different than tempe without spice.Keywords: spiced tempe, nutrition content, amino acid, fatty acid

Abstract

Abstrak Tren back to nature mendorong masyarakat untuk mengubah pola konsumsinya untuk lebih memperhatikan kandungan gizi dan manfaatnya untuk kesehatan. Hal ini mengakibatkan konsumsi minuman herbal meningkat. Pengolahan dari bahan segar menjadi produk instan perlu dilakukan untuk meningkatkan umur simpan produk herbal. Penelitian ini bertujuan untuk menganalisis usaha berdasarkan biaya total, penerimaan, dan keuntungan, sertamenganalis nilai tambah produk olahan tanaman rimpang sebagai minuman herbal. Produk olahan tanaman rimpang yang dianalisis adalah minuman herbal kopi laos dan kunyit putih. Metode analisis usaha yang digunakan meliputi analisis biaya, penerimaan, keuntungan dan R/C ratio. Analisis nilai tambah menggunakan metode Hayami. Hasil analisis menunjukkan bahwa usaha pengolahan kopi laos dan kunyit putih menguntungkan karena setiap Rp1 biaya yang dikeluarkan untuk memproduksi kopi laos akan memberikan penerimaan sebesar Rp1,37 sehingga keuntungan yang diperoleh sebesar Rp0,37, sedangkan setiap Rp1 biaya yang dikeluarkan untuk memproduksi kunyit putih akan memberikan penerimaan sebesar Rp1,50 dengan keuntungan Rp0,50. Hasil analisis nilai tambah menunjukkan bahwa produk kopi laos memberikan nilai tambah sebesar Rp86.650/kg dimana setiap Rp100 nilai produk kopi laos mengandung nilai tambah sebesar Rp51,99. Nilai tambah produk kunyit putih adalah Rp134.800/kg dimana setiap Rp100 nilai produk kunyit putih mengandung nilai tambah sebesar Rp67,40.Kata kunci: kopi laos, kopi kunyit putih, nilai tambah Abstract The trend of back to nature change the consumption pattern in society became health and nutrient contents consumption. This situation makes herbal drink consumption increase. Fresh ingredients need to process as instant products to expand herbal drink shelf life. This study aims to analyze the business based on total cost, revenue, profit, and value added of processed products of rhizome plants as herbal drinks. This research examined galangal and white turmeric coffee. Business analysis methods used include cost analysis, revenue, profit and R / C ratio. Hayami method used as value-added analysis. The results show that the business of galangal and white turmeric processing is profitable. Every 1 IDR cost incurred to produce galangal coffee will give an income of 1.37 IDR so that the profit earned is 0.37 IDR, whereas every 1 IDR cost incurred to produce white turmeric will provide acceptance of 1.50 IDR with benefit 0.50 IDR. Added value analysis shows that galangal coffee products provide added-value of 86.650 IDR/kg where each 100 IDR value of galangal coffee products contains added-value of 51.99 IDR. The added benefit of white turmeric products is 134.800 IDR/kg where each 100 IDR value of white turmeric products includes added value of 67.40 IDR.Keywords: galangan coffee, white turmeric coffe, added value

Abstract

 AbstrakLimbah tandan kosong kelapa sawit (TKKS) dapat dimanfaatkan secara optimal. Kandungan yang cukup besar dari TKKS adalah hemiselulosa. Hemiselulosa dapat dihidrolisis menjadi xilosa, dan xilosa dapat difermentasi menjadi xilitol. Tujuan dari penelitian ini adalah mengetahui pengaruh konsentrasi sel khamir awal dan pH medium pada proses fermentasi xilitol dari hidrolisat TKKS. Metode penelitian yang digunakan adalah metode eksperimental dan dianalisis secara deskriptif terhadap variasi konsentrasi sel khamir awal dan pH. Analisis dilakukan dalam 9 perlakuan dengan 2 kali ulangan. Hasil penelitian menunjukkan bahwa xilitol hanya terbentuk pada perlakuan pH 5 dengan konsentrasi sel awal 108 sel/mL pada jam ke 24 dan ke 96. Pada jam ke 24 dihasilkan xilitol sebesar 0,047 g/L dan perolehan xilitol terhadap xilosa 0,045 g/g. Pada jam ke 96 sebesar 0,138 g/L dan perolehan xilitol terhadap xilosa 0,094 g/g.Kata kunci: konsentrasi sel, pH, tandan kosong kelapa sawit, xilitol AbstractWaste of oil palm empty fruit bunches (OPEFB) can utilize optimally. The essential content of OPEFB was hemicellulose. Hemicellulose can be hydrolyzed into xylose, and the xylose fermented into xylitol. The purpose of this study is to determine the effect of yeast initial cell concentration and medium pH on xylitol fermentation process from OPEFB hydrolysate. The research method used was an experimental method and analyzed descriptively to the variation of yeast initial cell concentration and pH. The analysis was performed in 9 treatments with two replications. The results showed that xylitol was only formed at the treatment with pH 5 and an initial cell concentration of 108 cells/mL. At 24 hours xylitol was produced by 0.0474 g/L, and xylitol result to the xylose was 0.454 g/g. At 96 hours xylitol was produced 0.1381 g/L and xylitol yield to the xylose was 0.0938 g/g.Keywords: cell concentrations, pH, oil palm empty fruit bunches, xylitol

Abstract

AbstrakDesa Pandanrejo, Kota Batu merupakan desa dengan produk utama stroberi. Salah satu produk yang dihasilkan oleh penduduk sekitar adalah sari buah stroberi dan murbei. Sari buah ini diproduksi oleh 2 kelompok tani yaitu Kelompok Tani Wanita Melati Putri dan home industry Arrohmah milik Bapak Sugiono. Proses pembuatan sari buah masih menggunakan peralatan manual sehingga pekerja sari buah mengeluhkan sakit pada tubuh bagian atas. Kuesioner Nordic Body Map menunjukkan pekerja mengalami nyeri/sakit pada bagian leher atas (90%), bahu (85%), lengan atas (70%), lengan bawah (75%), kaki (65%), mengalami sakit yang sangat pada punggung (70%) serta pergelangan tangan (55%). Metode REBA (Rapid Entire Body Assessment) dan OWAS (Ovako Working posture Analysis System) digunakan untuk menganalisis postur tubuh pekerja. Analisis REBA menunjukkan postur tubuh yang memiliki skor 10 (risiko tinggi dan membutuhkan perbaikan segera) adalah postur tubuh menuang hasil rebusan, penyaringan, pengemasan. Metode OWAS menunjukkan kategori skor 3 (perbaikan perlu dilakukan secepat dan/atau sesegera mungkin) pada postur tubuh menuang hasil rebusan dan penyaringan. Alat penyaring sari buah didesain guna memperkecil risiko sakit pada otot serta meningkatkan hasil produksi.Kata kunci: Ovako Working posture Analysis System, Rapid Entire Body Assessment, petani, sari buah, Nordic Body Map AbstractPandanrejo Village at Batu City is a village with strawberries as their main products. One of the products produced by the local people is strawberries and mulberry juice. This juice is produced by 2 farmer groups called Kelompok Tani Wanita Melati Putri and Arrohmah home industry owned by Mr. Sugiono. The process of making fruit juice is still using manual equipment so that juice workers complain of pain in their upper body. The Nordic Body Map questionnaire showed that the workers had pain/ache on the upper neck (90%), shoulders (85%), upper arm (70%), forearm (75%), legs (65%), severe back pain (70%) and wrist (55%). The REBA (Rapid Entire Body Assessment) and OWAS (Ovako Working posture Analysis System) methods are used to analyze the worker's posture. REBA analysis showed posture that had a score of 10 (high risk and need immediate improvement) was the posture of pouring stew, filtering, packaging. The OWAS method shows the score category 3 (improvement needs to be done as soon as possible) on posture pouring stew and filtering.
