Abstract

Latar Belakang: Di Indonesia, kemiskinan dan kelaparan masih menjadi permasalahan kemanusiaan serta merupakan salah satu penyebab masalah undernutrition. Kondisi kemiskinan menyebabkan orang tidak dapat memenuhi kebutuhan dasar untuk mempertahankan hidup. Kebutuhan dasar yang harus dipenuhi salah satunya adalah kebutuhan akan pangan. Pangan sangat erat kaitannya dengan kehidupan bangsa. Ketahanan pangan menyatakan situasi pangan yang cukup dari segi kuantitas, kualitas, aman, beragam dan bergizi. Faktanya saat ini masih ada kelompok masyarakat yang merasakan kerawanan pangan, seperti golongan rumah tangga miskin karena ketimpangan pendapatan. Saat masa pandemi COVID-19 rumah tangga miskin semakin mengalami keterbatasan untuk memenuhi kebutuhan pangan, karena lonjakan harga pangan dan pemutusan hubungan kerja yang menghambat akses ekonomi untuk membeli pangan cukup dan beragam, sehingga mereka harus melakukan beberapa strategi salah satunya adalah food coping strategies.Tujuan: Tujuan dari penelitian ini adalah untuk menganalisis hubungan antara food coping strategies dan ketahanan pangan rumah tangga miskin di Kota Salatiga pada masa pandemi COVID-19.Metode: Metode kuantitatif dengan menggunakan desain Cross Sectional Study yang dilaksanakan di Kelurahan Gendongan, Kutowinangun Lor, Sidorejo Lor dan Blotongan, Kota Salatiga yang dilaksanakan pada bulan Oktober 2020 hingga Februari 2021. Total sampel 65 yang dihitung dengan menggunakan teknik simple random sampling. Kriteria inklusi adalah rumah tangga miskin yang merupakan penduduk asli menetap, memiliki anak bersekolah, pendapataan dibawah UMK Kota Salatiga. Pengukuran status ketahanan pangan rumah tangga menggunakan kuisioner US-HFSSM dan food coping strategies menggunakan kuisioner RCSI. Analisis data menggunakan uji korelasi rank spearman dengan α=0,05.Hasil: Mayoritas (74%) rumah tangga miskin rawan pangan dengan derajat kelaparan sedang. Lima puluh lima persen rumah tangga miskin memiliki skor RCSI sedang. Bentuk coping yang sering dilakukan adalah dengan membatasi konsumsi makan pada orang dewasa (31%). Faktor sosiodemografi yang berhubungan dengan perilaku food coping strategies adalah pendidikan kepala keluarga, jumlah anggota keluarga, pendapatan dan pengeluaran. Hasil uji korelasi menunjukan adanya hubungan signifikan antara food coping strategies dengan ketahanan pangan rumah tangga (Sig. 0,002).Kesimpulan: Penurunan pendapatan dan lonjakan harga pangan dampak pandemi COVID-19 mendorong rumah tangga melakukan coping strategies untuk mengatasi kerawanan pangan. Terdapat hubungan nyata yang signifikan dan arah hubungan negatif antara food coping strategies dan ketahanan pangan rumah tangga miskin di Kelurahan Gendongan, Kutowinangun Lor, Sidorejo Lor dan Blotongan, Kota Salatiga.

Abstract

Latar Belakang: Keluarga nelayan di Puger Wetan kabupan Jember berisiko mengalami kerawanan pangan karena pendapatan yang fluktuatif sehingga kesulitan untuk mengakses pangan. Untuk memenuhi kebutuhan pangan dan gizinya nelayan di Puger Wetan Kabupaten Jember berupaya melakukan food coping strategy agar terhindar dari kekurangan pangan.Tujuan: Penelitian ini bertujuan untuk mendeskripsikan kerawanan pangan dan menganalisis proses food coping strategyyang dilakukan oleh keluarga nelayan di Desa Puger Wetan Kabupaten Jember.Metode: Penelitian ini menggunakan teknik observasi, in-depth interview dan dokumentasi untuk mengeskplore food coping strategy oleh 20 keluarga nelayan yang terdiri dari keluarga nelayan pandhéga, nelayan perorangan, dan nelayan juragan di Dusun Krajan dan Mandaran, Puger Wetan pada bulan Juli 2019-Februari 2020. Penelitian ini fokus membahas tiga pilar kerawanan pangan rumah tangga secara mendalam, yakni non-availability of food, lack of food access dan improper utilization of food sebagai prediktor food coping strategy. Informasi yang dianalisis menggunakan analisis tematik yang kemudian disajikan dalam bentuk narasi dan bagan.Hasil: Non-avalibaility of food dan lack of economy access menjadi dasar keluarga keluarga nelayan di Puger Wetan melakukan food coping strategy skala 1 hingga tingkat parah skala 3 selama musim  laéb  dan  musim  sedikit  ikan.  Tujuh upaya coping prioritas terdiri dari upaya mencari pekerjaan sampingan, menjual aset rumah tangga, migrasi, menerima makanan dari orang terdekat, mengubah prioritas pembelian pangan, mengurangi frekuensi makan dan menjalani hari tanpa makan. Seluruh upaya coping tersebut dimaksudkan oleh keluarga nelayan untuk tetap memperoleh pangan selama periode rawan pangan.Kesimpulan: Hasil penelitian menunjukkan dibutuhkannya penguatan akses ekonomi dengan cara sistem permodalan nelayan dan kebijakan yang membebaskan pedagang asing untuk membeli ikan lokal demi pengayaan referensi harga ikan yang adil.

Abstract

Latar Belakang: Diet ketogenik merupakan diet tinggi lemak, rendah karbohidrat, dan cukup protein. Diet ini sudah lama digunakan sebagai terapi pada pasien epilepsi refrakter, namun belum banyak studi mengenai efek jangka panjang diet ini.Tujuan: Penelitian ini dilakukan untuk menganalisis pengaruh diet ketogenik terhadap ketebalan dan elastisitas arteri karotis penderita epilepsi.Ulasan: Pencarian literatur dilakukan melalui search engine berupa Pubmed, ScienceDirect, dan Google Scholar. Empat artikel penelitian memenuhi kriteria inklusi, kemudian dilakukan tinjauan sistematis menggunakan diagram alir PRISMA dan JBI critical appraisal. Keempat penelitian terpilih melibatkan pasien epilepsi refrakter dari kelompok usia anak dan dewasa muda (13 bulan - 31 tahun) yang diintervensi dengan pemberian terapi diet ketogenik selama minimal 6 bulan. Elastisitas arteri karotis menurun secara signifikan pada pemberian diet ketogenik selama 12 bulan (p<0,001). Namun, penurunan elastisitas arteri karotis tidak diikuti dengan adanya perubahan yang signifikan pada ketebalan dinding arteri karotis, yang dinilai menggunakan carotid intima media thickness (CIMT). Sebagian besar studi menemukan adanya peningkatan risiko kardiovaskular oleh karena adanya peningkatan profil lipid dan kekakuan arteri karotis.Kesimpulan: Secara kesimpulan, diet ketogenik mempengaruhi elastisitas arteri karotis tanpa mengubah ketebalannya. Diet ketogenik juga meningkatkan kadar lipid secara reversible dan diduga dapat meningkatkan risiko kardiovaskular pada pasien epilepsi refrakter.

Abstract

Latar Belakang: Stunting pada balita merupakan masalah gizi yang masih banyak terjadi di Kabupaten Jember dengan prevalensi sebesar 37,94% pada tahun 2021. Masalah ini dapat ditanggulangi dengan diversifikasi pengolahan pangan berbahan dasar ikan tongkol (Euthynnus affinis) yang jumlahnya melimpah di Kabupaten Jember. Bakso ikan tongkol diberi perlakuan pengenyal dan diperkaya dengan tepung ikan teri (Stolephorus spp) yang kaya akan mineral mikro yang berpotensi meningkatkan imunitas balita stunting. Tujuan: Menganalisis pengaruh tepung ikan teri dan pengenyal terhadap kadar mineral mikro bakso ikan tongkol. Metode: Penelitian menggunakan pre dan post test dengan rancangan acak kelompok. Rancangan percobaan yang digunakan adalah rancangan acak kelompok faktorial 3x3 dengan 3 kali ulangan. Perlakuan meliputi penambahan tepung ikan teri (0%, 18% dan 35%), dan pengenyal (tanpa pengenyal, karagenan, dan sodium tripolyphosphate (STTP)). Sampel terdiri dari kelompok perlakuan berjumlah 24 dan kelompok kontrol berjumlah 3. Mineral mikro yang diukur adalah besi, yodium dan selenium. Data dianalisis dengan Two-way Variance of Analysis (ANOVA).Hasil: Bakso ikan tongkol tanpa perlakuan menunjukkan kadar besi 31,72 ± 0,05 mg/100 g, yodium 2,31 ± 0,03 µg/100 g dan selenium 1,69 ± 0,20 µg/100 g.Kesimpulan: Penambahan tepung ikan teri atau pengenyal atau interaksi keduanya berpengaruh signifikan terhadap peningkatan kadar mineral mikro bakso ikan tongkol.

Abstract

ABSTRACTBackgrounds: White oyster mushroom (Pleurotus ostreatus) is widely cultivated by Indonesian people due to its delicious and nutritious taste. Pleurotus ostreatus contains 18 amino acids that make up the body and antioxidants, including phenolic compounds and ergothioneine. Ergothioneine as a strong antioxidant is an amino acid derived from histidine which has sulfur groups such as cysteine and methionine. The increase in histidine indicates the activity of ergothioneine.Objectives: This study aims to determine the amino acid content of histidine as a predictor of ergothioneine amino acid in the drying and frying process of white oyster mushrooms.Methods: The extraction method used in this study was maceration with 90% ethanol for drying samples and 70% ethanol for frying samples analyzed using High Performance Liquid Chromatography (HPLC).Results: The results showed that the histidine content increased with the longer drying time, and decreased with the longer frying time. Drying with a variation of 2 days, 3 days, and 5 days were 674788,802 mg/L; 615302.747 mg/L; and 1946113,494 g / L respectively. Frying with a variation of 2 minutes, 3 minutes, and 5 minutes were 500435,148 mg / L; 232428,391 mg/L; and 0.000 mg / L. On the other hand, the methionine content decreased with the longer drying time, and increased with the longer frying time. Drying with a variation of 2 days, 3 days, and 5 days in a row were 6673,283mg/L; 6671,920 mg/L; and 1876,358 mg / L. Frying with a variation of 2 minutes, 3 minutes, and 5 minutes were 2296,698 mg / L; 1243,911 mg/L; and 34764.534 mg/L.Conclusions: the study concludes that the content of histidine as the highest ergothioneine predictor is at drying for 5 days and frying for 2 days.

Abstract

Background: Insulin resistance is a condition in which insulin cannot take up glucose, increasing blood glucose. Elderly people are more exposed to insulin resistance, requiring dietary interventions that extend longevity. Trehalose, a naturally occurring sugar, showed potentially reduce insulin resistance which can be measured using the HOMA-IR (Homeostatis Model Assessment-Insulin Resistance) index. Objectives: This study aimed to assess HOMA-IR levels as a parameter of insulin resistance in old rats after giving trehalose sugar. Methods: Experimental research with 28 male Wistar rats (Rattus novergicus) was separated into 4 groups, the control group of young rats (Group A), the control group of old rats (Group B), a group of old rats that were given 2% Trehalose solution (Group C), and a group of old rats that given 2% sucrose solution (Group D) that observed for 8 weeks. Results: The results showed differences in HOMA-IR levels (p<0.001) between old and young subjects. The intervention in Group C was optimal in reducing levels of HOMA-IR (p<0.001) by 18.2% compared with the old control, while Group D increased levels of HOMA-IR by 14.3% (p<0.001) compared with the old control. The age of the subjects with HOMA-IR level is positively correlated (p<0.001; r=0.721) and the weight of subjects with the HOMA-IR level is also positively correlated (p<0.001; r=0.698), indicating that the older and the greater weight of subject resulting in the bigger of HOMA-IR value. Conclusion: Trehalose is effective in reducing HOMA-IR levels as a parameter of insulin resistance in old rats.

Abstract

Background: The right to food is one of the human rights that must be protected and fulfilled. Inequality in priorities on food and nutrition security development causes a sharp distinction among provinces regarding food security achievement. Currently, methods for evaluating the right to food at the provincial level are not yet available. Objectives: This study aims to analyze the right to food at the provincial level in Indonesia with a food system approach (food availability, food accessibility, and food utilization) using structural, process, and outcome indicators. Methods: This study was a cross-sectional study using secondary data from 34 provinces in Indonesia. The data consist of regulations, programs, and the government's performance achievements. There were five data analysis stages: identification, selection, assessment indicators, provincial rankings provision, and the characteristics based on cluster analysis. Results: Based on the evaluation of 36 selected indicators of the right to food, only three provinces were included in the high category, twenty-five provinces in the medium category, and six provinces in the low category. Central Java had the highest level of the right to food, while West Papua had the lowest level. Non-hierarchical clustering with K-Means methods was further applied to analyze the right to food and later divided into five clusters. The first until the third cluster was categorized as medium level, while the fourth and fifth clusters were categorized as low. Conclusions: The right to food in western part of Indonesia had better than the eastern region. The availability of regulations and program implementations with adequate budget support will affect the government's performance in fulfilling the right to food.

Abstract

Background: Body dissatisfaction is more common in adolescents and its prevalence is increasing in developed and developing countries. These situation is associated with unhealthy dieting behaviors. Purpose: This study aimed to evaluate the relationship between thinness expectations, body satisfaction, and eating attitudes and behaviors in interpersonal interaction.Method: This study was conducted on 372 university students. The survey form was prepared using the Google Surveys Program. In the questionnaire form, there are sociodemographic characteristics, anthropometric measurements, Interpersonal Outcome Expectancies for Thinness (IOET), Nutritional Changes Process Scale (NCPS), and Body Shape Questionnaire (BSQ).Result: There was no statistically significant difference in the mean total scores of the IOET, BSQ, and NCPS scales according to gender (p > 0.05). According to the NCPS scale sub-dimensions, it was determined that the means scores of dramatic relief and social liberation were higher in females than males (p < 0.05). However, the mean scores of reinforcement management, stimulus control, interpersonal control systems, and substance abuse were lower in females than males (p < 0.05). In addition, when the distribution of thinness was examined in the relationships with family, other family members, teachers, friends, colleagues, and foreigners according to gender, it was determined that there was no statistically significant difference (p > 0.05). The findings show that there were moderate and strong positive correlations between the total score of BSQ and NCPS, and IOET total scores, respectively (p < 0.05).Conclusion: According to the study results, body shape is important in interpersonal relationships among university students and body dissatisfaction may be related to eating behaviors.
