Jurnal Pariwisata Terapan (JPT) is a biannual, peer-reviewed, open access academic journal dedicated to studies in applied tourism science in Indonesia. JPT invites authors in the field of applied tourism to submit manuscripts written in English or Bahasa Indonesia. The objective of JPT is delivering comprehensive knowledge on applied tourism science in Indonesia. JPT invites manuscript in three main topics, but not limited to an application of tourism science in hospitality industry, tourism businesses, and destination development in Indonesia. We encourage different perspectives on tourism science application to broader views in the field of tourism and contribute to tourism science development in Indonesia.

Abstract

The purpose of the research is to explain about the profile of food and beverage department in Amaris Hotel Diponegoro Jogja. In addition, the services provided by F & B department will also be discussed along with the challenges faced by the staff in F & B department. The methods used in this research consist of field study and library study. The field study was done in the form of direct observation and some interviews. Besides, the library study was also conducted to gaininformation from books, e-book, internet sources, and the handout obtained from Amaris Hotel Diponegoro Jogja including information on its human resources and the food and beverage department databases.Based on the finding obtained from the research, Amaris Hotel Diponegoro Jogja offers the basic standard facilities to the guests, namely bed and breakfast. The breakfast service was handled by the food and beverage department. In addition to the breakfast service, the food and beverage department also serves welcome drink service, meeting and banquet service, table service, and room service. The research also obtains several challenges faced by the staff in the food and beverage department, such as the time management, the communication among the kitchen staffs and the guests. To solve the challenges respectively, some ways were applied by the F & B staff, such as sharing jobs, holding intensive briefings, and also paying attention to the guests’ requests and giving service to the guests according to their requests.

Abstract

This article discusses the mapping of specific cuisines as culinary tourism potential in Surakarta. The general objective is to present a culinary-mapping of specific culinary products where the information can be used by stakeholders such as goverment, culinary business, travel industries, including tourists. The implementation of the study has specific objectives: (1) identify the specific culinary potentials in Surakarta, (2) create a culinary tourism map in Surakarta City. This research applies descriptive-qualitative research methods in the effort of apprising the information of unique/specific culinary tourism in Surakarta. Data collection techniques wae conducted through participatory observation, in-depth interviews and literature studies. The data collection through observation and interviews were conducted in government agencies, travel industries and culinary tourism businesses around Surakarta. The literature study included all concepts and theories related to culinary tourism especially culinary references in Surakarta. The results obtained from this study indicate that the potential of culinary tourism in Surakarta is very diverse with each peculiar identity. In connection with a variety of culinary potential is then presented on the Surakarta culinary map which helps stakeholders in developing Surakarta’s culinary tourism.

Abstract

Hyatt Regency Yogyakarta has strategies to increase the number of visitors to the hotel. One of the strategies made by Hyatt Regency Yogyakarta regular event “Ramayana Night Market" which is held every Saturday night.  The purposes of this research are to know the buffet menu and the layout of buffet in regular event “Ramayana Night Market” at Kemangi Bistro Hyatt Regency Yogyakarta. This research used observation, interview, and documentation techniques to collect the data. The results showed that the menu in regular event “Ramayana Night Market” are presented on the long table buffet and ranged from appetizer, main course, and dessert. Regular event “Ramayana Night Market” serve traditional food as concept. The layout of the buffet at regular event “Ramayana Night Market” is made to grouping the menu based on the type (appetizer, main course, and dessert) to make it easy for the customers to take the food from the buffet.

Abstract

This study is aimed at identifying the representation of local foods and beverages in English textbooks used in Indonesia. Based on the current curriculum, character building should be promoted as one of the learning goals. This effort is to maintain and strengthen students’ cultural roots and identity in this globalized world. The integration of local culture in the textbooks will help to provide exposures of both cultures and facilitate cultural dissemination of both local and global values. The result of content analysis on 36 English textbooks used in elementary schools to senior high schools in Indonesia shows how the spoken and written texts accommodate the promotion of Indonesian local cultures, particularly the local culinary. The texts mention the names of several local foods and beverages from Indonesia, such as nasi goreng, bakmi, soto, gudeg, rica-rica, klepon, and es palu butung. Based on the questionnaire results, the representation of local culinary in the textbooks can promote local identity, disseminate culture, and promote local tourism. However, the integration is still considered insufficient to disseminate the culture and promote local identity because the books have not accommodated all cultural elements in Indonesia.

Abstract

The growth of the hotel business in Yogyakarta is currently increasing up. Based on data from the Association of Indonesian Hotels and Restaurants, the total of new hotels to be built in Yogyakarta reaches 110 hotels. With reference to these growth figures, hospitality management is currently not only focused on providing accommodation, but also going further to selling other hotel products, such as food and beverages. This research took a case study about the product innovation of Neo + Awana Hotel Yogyakarta, with a developing event called "Fun Food Barbeque". The method used is descriptive qualitative with primary data collection using participant observation and interviews. The results shows that the first implementation of the Barbeque Fun Food event is not optimal, because guests are not interested in western food and also the menu has many things to offer. With the changing innovation of barbecue products into fusion food with a menu that is a blend of Indonesian food with western food, the Fun Food Barbeque event becomes more interesting.

Abstract

The article entitled “The Advantage of Tofu Culinary Tourism in Korea” is a qualitative descriptive research framework that analysed on the types of tofu in Korea based on its philosophical and tourism value. In Korea, the soy-based tofu is cooked and combined into some foods of high nutritional value, distinctive, unique, and modern. These foods are the main attraction in the world of Korean tourism that should be enjoyed. The data in this article were collected and analysed through literature study from various sources of information. The results of this study indicate that in principle tofu in Korea and Indonesia do not have significant differences, but in Korea, they can serve the tofu in the form of distinctive foods that characterizes their local wisdom.

Abstract

For most Indonesian citizen, Russia is one of the most famous country in the world. It is referred as big, far, and associated with communism. In the matter of tourism point of view Russia is always considered as one of the most attractive destination with the unique and thematic touristic atmosphere around it’s corner. But it is a fact that traveling to Russia is not easy for many tourist, specially Indonesian passport holder. There is still a confusion regarding to how to manage a travel plan, itinerary design, visa application, accommodation and other basic traveling needs. This paper gives information to any Indonesian passport holders who willing to proceed their aim to travel to Russia. It describes a process to design an itinerary of traveling to the one of Russia’s amazing tourism destination, Moscow. The methods using in this research are involving field observation and literature studies. The result shows that Moscow, as the main Russia’s tourist destination proved as the city consists with many attractions, accessibilities, a lot of amenities and supporting atmosphere for the backpacker tourist.

Abstract

Currently, Indonesia is increasing the role of Tourism as a contributing State Foreign Exchange. Batam is the 3rd contributors Foreign Tourists in Indonesia after Bali and Jakarta. This study aims to analyze and describe the potential of Batam City Tourism in order to capture Foreign Tourist so that it can contribute as much as 3.47% of the total foreign exchange of Indonesia. Its function is to be able to apply other regions in Indonesia. The focus of the analysis is Attraction Destination, Destination Facility, Accessibility, Imagery, and Price. By using descriptive qualitative analysis and interview for data retrieval. The result of the research indicates that the Destination is less attractive for foreign tourists in Batam because they interested in Destination that offer complete facilities and easiness of the accessibility. In addition, the Batam’s image are safe, comfortable, and the prices are relatively cheaper because Rupiah value compare than other currencies.

Abstract

In recent years, several cities in Indonesia have been rife with the business tour to China. The purpose of this business tour is to survey and analyze wholesale market and factories in China. The cheap goods from China is the main reason for the beginners and mid-sized businesman, online and offline begin to try to follow this tour. The number of enthusiasts makes more and more individual or tour agent who offer services for tour business assistance to China. This is a new opportunity for tour and travel business in Indonesia. The purpose of this study is to know the trend of tourism business or business tour in Indonesia today.

Abstract

Yogyakarta is the one of the biggest tourist destination in Indonesia. Domestic and Foreigner tourist come to this city every year in big number. Yogyakarta has so many tourist destinations, for example: Keraon Yogyakarta, Sambisari Temple, Taman Pintar, Malioboro, etc. Because of that, Yogyakarta need travel agents to makes every tourist easier enjoy their trip, and the number of travel agents in Yogyakarta has growth every year. Tourist who come to Yogyakarta is not only normal people, but also people with disability, they also have same chance to do tourism activity and travel agents should accommodate it. The purpose of the research is to know how far the travel agents in Special Region of Yogyakarta can create tour package for people with disabilities. The research also explained about how many local tourists and international tourists who come to Yogyakarta every year. From that data, we know how many markets for tour package in Yogyakarta. The methods used in the research is qualitative method. The writers collected the data by interview, literature study, and observation. The subject of the interview is people with disability, government, and the management of the tourism destination. The writers also compare the result from the interview with the fact in the field. From the result of the research the writers can conclude tour package that has been offered by travel agents in Yogyakarta is not friendly for people with disabilities.
