Abstract

Food sanitation is very important, especially in public places that closely related to theservices to the people. Hospital is one of the common places that provide public healthservices one of which is the food service to support the healing process , it is necessary toplace the food processing activities are in Nutrition installation Hospital . One thing to note isthat handlers food, because the behavior of food handlers play a role in protect the health ofpeople with diseases caused by food contamination. This study aims to transform anddescribe the knowledge, attitudes, and personal hygiene of food handlers according to age,education and past Installation work in the department of Prof. Nutrition BLU Dr.RD KandouManado. This research is a descriptive study designed based cross-sectional approach. ThePopulation in this study amounted to 25 people which is then used as the total sample.Instrument in this Study using questionnaires. Data were processed and analyzeddescriptively with tables percentage. Results of this study indicate that for the knowledgehandlers food according to age, education and years of service in the department BLUNutrition Installation Prof. Dr. RD Kandou Manado for both categories of 16 %, just 64 % andless 20 %. For food handlers behavior according to age, education and pastInstallation work in the department of Nutrition BLU Prof. Dr. RD Kandou Manado tocategory 16 % good, 60 % fairly, less 24 % . For personal hygiene handlers foods accordingto age, education and years of service in the department BLU Nutrition Installation Prof. Dr.RD Kandou Manado for both categories of 60 %, 16 % less enough 24 % Conclusions ingeneral knowledge and behavior of food handlers in Nutrition installation BLU Prof Dr Dr RDKandou Manado good enough and for personal hygiene or personal hygiene of foodhandlers is fair.

Abstract

Mothers who consumed dietary restrictions due to cultural taboo food intake leads tolow nutrient substances . This situation is often exacerbated by the lack of goodmaternal nutrition knowledge so that mothers are willing to follow the restrictions thatexist . This study aimed to determine the effect of nutrition education on nutritionknowledge and practices of puerperal women in the East Regional Health CenterLikupang .This research is quasi-experimental study ( quasi Experimental ) to designone group pre and post test design . The research was conducted in June- July 2012. Number of samples 96 . Collecting data using questionnaires and 24 hours foodrecall and food frequency form . Data processing with SPSS version 16 . Dataanalysis using t - test . The results showed that the significant effect of nutritioncounseling on nutrition knowledge and practices of puerperal women ( P<0.05 ) .Energy intake postpartum women who received counseling did not significantly ( p>0:05 ) . Postpartum maternal protein intake is very significant influence ( p< 0.05), .No conclusions on the influence of nutrition counseling nutrition knowledge andpractice of postpartum mothers . Intake of nutrients and energy it does not influencethe effect of nutritional counseling on nutrient intake of protein .

Abstract

Nutritional adequacy are needed by every individual since the fetus is still inthe womb, babies, children, adolescence, adulthood, to old age. Mother orexpectant mother is vulnerable group because it requires adequate nutritionshould be maintained nutritional status and health in order to give birth tohealthy babies. Poor nutrition is one of the most common nutritional disorderthat occurs during pregnancy that lead to iron deficiency anemia. Many ofthese mothers provide little iron to the fetus is needed for normal ironmetabolism, then they become iron deficiency anemia and hemoglobinlevels fell below the mother 11gr% during the third trimester. Consumption ofMoringa leaves (Moringa oleifera) is one alternative to tackling malnutrition inIndonesia. The results of modern scientific research proving that Moringaleaves are one source of plant-based foods rich in nutrients. The content ofnutrients in the leaves of Moringa is 7 times the vitamin C in oranges, 4times the vitamin A in carrots, 4 times the calcium in milk, 3 times thepotassium in bananas, 3 times the iron in spinach and 2 times the proteinfound in yogurt or protein inside an egg. This study aims to determine theincrease in hemoglobin levels in pregnant women who suffer from anemiaafter using moringa leaf powder. The design of the study is a quasiexperimental that are one group pretest-posttest design. The population ispregnant trimester II-III; Samples are pregnant trimester II-III with anemiaand total sample of 35 people. Moringa leaf powder Dosage: 2 x 2 capsulesorally daily (Moringa leaf powder contains 500 mg / capsule) was given for30 days. Examination using Hemometer Sahli.The results of the comparativehypothesis testing with Wilcoxon test between Hemoglobin levels before andafter treatment values obtained significancy 0.000 (p < 0.05), so it can beconcluded that there were significant differences between the Hemoglobinlevels before treatment and after treatment. It was concluded thatsupplementation with powdered moringa leaves (Moringa oleifera) canimprove hemoglobin levels in pregnant women suffering from anemia.

Abstract

Iron deficiency anemia (Fe) in pregnant women is still a health problem in Indonesia , basedon research data frequency in pregnant women is relatively high at 63.5 % . Data on theprevalence of anemia Amurang PHC 4.2 % of pregnant women suffer from anemia, 4.2 %where mothers who received iron tablets (Fe 1) 353 pregnant women (100 %) and tablets ofiron (Fe 3) 350 pregnant women (99, 1) but there are still women who suffer from anemia , thisindicates that there are pregnant women who suffer from anemia , this shows that there arestill women who do not take tablets of iron (Fe) and on a regular basis although it has beengiven away for free at Health Center, for various reasons among other things rancid smell ,nausea and vomiting that pregnant women have the possibility of risk of anemia . The purposeof this study to determine the relationship of knowledge attitudes and behaviors about takingaction Fe tablet with anemia in pregnant women in sub-district health centers AmurangAmurang southern Minahasa regency . Research methods research design used was analyticobservational study with cross sectional design study conducted on 36 pregnant women whohave gestational age above 28 weeks (Trimenter III), which checks in Amurang health center.The result is that there is no relationship between the knowledge of the use of tablets of iron(Fe) and the incidence of anemia in pregnant women in which the value of p = 0.106 > 0.05,there is a significant association between the use of tablet action of iron (Fe) and the incidenceof anemia in pregnant women where p value = 0.04 < 0.05. In preventing anemia andpenanggulang then pregnant women need to learn more about the benefits of a tablet of iron(Fe) in pregnancy which can affect further the benefits of tablets of iron (Fe) in pregnancy canaffect the health of the mother and unborn baby with an active role of the midwife / healthworkers available at the health center Amurang

Abstract

Complementary feeding ( MP - ASI ) should be given to babies over 6 months of agebecause the digestive system is relatively perfect and in accordance with the needs andthe digestibility of the baby . Health Center West in Bitung Bitung , data showed that thereare still mothers who give supplementary food for infants aged less than 6 months on thegrounds of lack of milk production and the baby crying , so they provide extra food to meetthe needs of the baby . The general objective of this study is to determine the relationshipbetween maternal knowledge by providing complementary feeding . The specific objectiveis to describe the characteristics of the mother , knowing the knowledge of giving MP - ASI, knowing provision of complementary feeding and determine the relationship betweenknowledge by providing complementary feeding . This type of research is a cross sectionalanalytic approach . Population is all the mothers who have infants aged 0-12 months in theWest Bitung Bitung City Health Center 300 people . Sampling as much as 20 % of the totalpopulation and the number of samples obtained by 60 respondents based on purposivesampling . Independent variables and the dependent variable is knowledge is giving MP –ASI. Data analysis using univariate and bivariate frequency distributions using Chi - squaretest . The results showed the majority of respondents aged between 20-35 years (71.7 %),education completed high school / equivalent ( 48.3 % ) , work as housewives ( 75.0 % )knowledge of the provision of MP - ASI partially large ( 56.7 % ) were good , most of therespondents ( 63.3 % ) did not provide complementary feeding in infants and there is asignificant relationship between knowledge of the provision of complementary feeding ( p <0,05 )

Abstract

Diabetes mellitus ( DM ) is a disease in which the body can not produce insulin ( a hormoneregulating blood glucose ) . Therefore, it would lead to increased blood sugar whenexamined . Food plays a role in the increase in blood glucose levels . Despite the fibrousfoods that contain carbohydrates , but still takes time to go through the digestive system , soit has a low glycemic index . Red rice good for diabetics because it has a lower glycemicindex than white rice . Utilization of animal experiments carried out to rule the diagnosis inthe event of food poisoning , it can be selected Wistar rats as test animals . This study aimsto determine the effectiveness of red yeast rice in lowering blood glucose levels in Wistarrats given glucose load . There is a significant result in the group treated with ethanol extractof red rice 500mg/kg and 1000mg/kg bb bb the results are within the normal range .Although the treatment with 100mg/kg body weight of rats , the results are not up to therange of blood glucose levels in the range of normal mice . This is caused by theconcentration of ethanol extract of red rice is low . This study also shows that there aredifferences in blood glucose levels significantly in each treatment group and at the time oftreatment with the vulnerable period of the 30th minute to minute 120 . Anti- diabetic effectsproduced by drug glibenclamide can be used as positive controls with normal results .Conclusion The ethanol extract of red yeast rice is effective against falling glucose levelsWistar rats were given based on the concentration of glucose load and scan times .

Abstract

Chicken meat is poultry meat has high nutritional value. Meat chickens are easily damagedby physical impact or microbial activity, requiring precise handling that chicken can bestored longer. Ensuring the quality and safety of chicken meat plays an important role forthe safety and health of consumers. Chain of technical, operational and management affectthe quality of meat produced. Microbiological contaminants is one cause of reduced qualityof chicken meat even be unsafe for consumption. Microbial contamination or spoilagepathogens causing protein degradation is the breakdown of proteins into simpler moleculessuch as amino acids that causes cells to become damaged or rotten meat.Research carried on in the laboratory of Food Microbiology Department of Nutritionpolytechnic Kemenkes Manado, June to September 2012. Design research is anexperimental laboratory with organoleptic and microbiological tests.The results showed that lettuce effective solution to inhibit microbial growth in chicken meatspoilage or damage. However, in contrast to organoleptic tests where the results indicatethe presence of irregularities in terms of aroma, color and texture. It can be concluded thatan effective solution to a long fermentation lettuce shelf life, but are less effectivepreservative used as an alternative in terms of color, flavor and texture of chicken meat. Asa suggestion this research can still be continued in other foodstuffs that require alternativenatural preservative.

Abstract

Diarrhea is still a public health problem in developing countries such as Indonesia ,because they often arise in the form of Extraordinary Events ( KLB ) , andaccompanied by high mortality , especially in eastern Indonesia . Clinically cause ofdiarrhea can be grouped into several broad categories , namely due to infection ,malabsorption , allergies , poisoning , immunodeficiency and other causes , but oftenfound in field or clinical is diarrhea caused by infection and poisoning. The cause of thediarrhea is strongly influenced by various factors such as nutritional status, habits orbehaviors , environmental sanitation and so on .This study aims to determine the energy and protein intake , nutritional status ofchildren aged 1-5 years who have acute diarrhea in the department of Prof. BLU . Dr. .R.D. Kandou Manado . Samples were taken by 15 patients .This research is a descriptive observational cross-sectional design in which the intakeof energy, protein and nutritional status were measured at the same time . Thepopulation in this study were all children aged 1-5 years of diarrhea , which wastreated in the department of Prof. IRINA E . Dr. . R.D. Kandou Manado . Samples weretaken by means of sampling acidental .The results showed that the study subjects had a mean age of 18.3 months , thenutritional status based on the value of z scores is normal with a mean intake thatdoes not meet the standard requirements In conclusion, the results of Pearsoncorrelation analysis showed that there is a very bermakana anatara nutritional statuswith an average intake of macro nutrients ( p < 0.01 ) , but there is no relationshipbetween nutritional status with an average days of hospitalization ( p > 0.05 ) .

Abstract

Breast milk is the best food for babies, and complementary foods or solid foods is atransition from breast milk food given during a short period ie 4-6 months of age , becauseof the growing baby need energy and nutrients that exceed the amount obtained from ASI.This study aimed to determine differences in weight gain infants given solid foods at theage of 3-5 months in the Work Area Health Center Tompasobaru South MinahasaRegency. This type of study is a prospective observational cohort design .The timing ofthe months of December 2012 through March 2013. The subjects were families withbabies aged 3-5 months with a sample of 57 infants. Data were collected using aquestionnaire that was available and the data weight gain obtained by using the directweighing steelyard. Processing and data analysis using t-test. The results showed anaverage weight loss in the group that first month of breastfeeding eskluisif 6.0 kg , 6.77 kgof the second month , third month of 7.21 kg. Group given solid foods first month weight5.68 kg , 6.27 kg of the second month, third month of 6.75 kg . In the first month there wasno significant difference in body weight ( p> 0.05 ) . In both there is a significant differencein body weight ( p< 0.05 ) . In the third month there was no significant difference in bodyweight ( p< 0.05 ) . Average weight gain the first month exclusively breastfed 0.66 kg ,4.44 kg of the second month . Group who received solid foods first month of 0.59 kg , 0.48kg of the second month . Conclusion there is no difference in significant weight gain ininfants who were exclusively breastfed babies who received solid foods in infants aged 3-5months in Regional Health Center Tompasobaru

Abstract

Infectious diseases are still a major disease in many developing countries, includingIndonesia. Infectious diseases in Indonesia that affects many infants are AcuteRespiratory Infection (ARI). In the Indonesian case acute respiratory tract infection (ARI )station is the first cause of infant deaths in each year . In addition ISPA also often be onthe list of 10 most diseases in hospitals . Factors that influence the occurrence of ARI ininfants include: nutritional status, age, breastfeeding, vitamin A supplementation irregular,incomplete immunization, air population, density of housing, socio-economic andeducational levels. Research purposes to determine what factors are associated with theincidence of ARI in the Puskesmas Paniki Bawah Mapanget District .This research uses a form of observational analytic study with descriptive statisticaltechniques. Data analysis was done by descriptive statistics and frequency distributiontables and narrated as well as statistical analysis. To examine the relationship betweenvariables Chi - Square test and Fisher 's Exact test alternative to using the softwareprogram for Social Statistics Programme Sciense (SPSS). Results of this study showedthat exclusive breastfeeding factors have a relationship with the incidence of respiratorydisease in young children, it is because the immune milk given by not properly fulfilled soeasily toddlers up to disease. For other factors that are not observed a significantrelationship between the independent variables and the dependent variable. Given it isexpected that the government and local health officials to improve the coverage ofexclusive breastfeeding to provide information about the benefits of exclusivebreastfeeding for the child so that the mother can understand and provide exclusivebreast milk for her child.
