Abstract

Cube chili has potential to be commercialized.   However, packaging of the product has not yet been prepared well for commercialized purpose. Therefore, it’s necessary to do a research about product packaging.  This research aims to obtain the best secondary packaging for cube chili, determine the level of consumer preference towards the packaging and get the information about the added value of packaged cube chilli. Selection of the best secondary packaging for cube chili according assessment from 5 experts with Analytical Hierarchy Process (AHP) method, distributing hedonic test questionnaires to 25 customers for the selection of the preferred packaging, analyzed with Kruskal Wallis method and determination of the added value packaging with Hayami method. Secondary packagings that have been used are  plastic box polistirene (PS) with thickness of 0.167 mm, folding box carton (FC) with thickness of 0.5 mm and  plastic box polistirene (PS) with thickness of 1 mm. Result of this research  showed that the best secondary packaging  according to expert assessment is PS box 1 mm (0,468).  The packaging of cube chili that most preferred by consumers is FC-box 0.5 mm (4,44). The highest added value is owned by the cube chili that packed with PS boxes 0.167 mm (51.89%)

Abstract

The research objective is to examine the best materials of primary packaging for beledang fish crackers and measure its value added. The packaging used in the research are plastic PP (Polypropylene) with a thickness of 0.09 mm, rigid LDPE (Low Density Polyethylene) plastic with a thickness of 0.36 mm, OPP multilayer (Oriented Polypropylene) with a thickness of 0.06 mm, aluminum foil packaging with a thickness of 0.04 mm and plastic vacuum with a thickness of 0.02 mm. Respondents in the study were experts respondents consist of one academic person in food packaging subject, one practitioners in food industry (owners of the fish industry beledang chips) and three person of BPPOM practitioners in Bengkulu. The results showed that rigid LDPE plastic is considered to be the best packaging. The value-added on beledang fish crackers for using rigid LDPE plastic is 51504.48 USD / kg or increase of 49.05%.

Abstract

Purpose of this research was to determine a capability of MSL-sand in reducing contaminants out of the liquid waste of CPO; to determine optimal rate of flow and; to determine the efficiency of MSL-sand in reducing oil-fat, BOD, COD and pH of liquid waste of CPO.  The research was done by flowing liquid waste through an MSL-sand with a rate of flow were0.3 L/hour, 0.6 L/hour, 0.9 L/hour, and 1.2 L/hour; each of treatment was repeated three times. Result of the research showed that with rate of flow of 0.3 L/hour, 0.6 L/hour, 0.9 L/hour, and 1.2 L/hour, the MSL-sand was capable of reducing oil-fat from 471.6 mg/L to 21.30 mg/L, 33.40 mg/L, 43.47 mg/L, and 55.30 mg/L respectively;BOD from 412 mg/Lto 6.73 mg/L,19.27 mg/L,33.10 mg/L, and46.93 mg/L respectively;COD from 1237 mg/L to  31.33 mg/L, 61.67 mg/L, 98.33 mg/L, and135.00 mg/L respectively;and pH from 9.00to 6.72,6.88,7.21 and7.36 respectively.  The optimal rate of flow to reduce liquid waste contaminant was 0.3 L/jam (class III) and 0.4 L/jam (class IV). Efficiency of the MSL-sand with the rate of flow of 0.3 L/jam,0.6 L/jam,0.9 L/jam, dan 1.2 L/jam in reducing oil-fat was 95.48 %, 92.92 %, 90.78 %, and88.27 % out of 471.6 mg/L; COD was  97.47 %, 95.01 %,92.05 %, and89.06 % out of 1237 mg/L; and BOD was98.37 %, 95.32 %, 91.97 %, and88.61 %out of 412 mg/L. Reduce of contaminant out of the liquid waste of CPO proved that MSL-sand was capable of reducing oil-fat, COD and BOD and also neutralize the pH.

Abstract

The purpose of this study was to evaluate the quality of smoked catfish are traded on the Panorama Market Bengkulu City seen from the total of microorganisms during storage at room temperature. This study uses a combination of exploratory sequential model (combining qualitative and quantitative research methods, respectively). Samples were taken from merchants of smoked catfish in the Panorama Market Bengkulu City. Storage of samples carried out for 21 days. Analysis of total plate count (TPC) was conducted in the Laboratory Protection UNIB. Quality parameters used refer to SNI 2725.1: 2009 on quality requirements of smoked fish. Determination of total plate count was performed according to SNI 01-2332.3-2006. Each sample testing was done 2 replications. ALT test results show an increasing number of microbes during storage. ALT value on day 0 of storage in the range of 8.2 x 104 colonies/g - 1.4 x 106 colonies/g, whereas on day 21 ranged from 2.0 x 106 colonies/g - 3.9 x 106 colonies/g. The high value of ALT is caused by the processing, packaging, transportation, storage conditions, as well as the manner of presentation for sale on the market. Microorganism contamination will increase with increasing chain length distribution.

Abstract

Noni (Morinda Citrifolia) is a herb which has effect to cure cancer, high blood pressure, etc. Makes the smell and the taste of noni less delicious because there are a number of organic acid like caproic acid and caprilic acid in noni. Therefore it needs an alternative product such as pressed candy. Correct process of extraction and addition of binding agents can produce the pressed candy with the physical, chemical and organoleptic characteristic that are expected. The objective of  this research wash to know the optimum ratio of noni compared with ethanol so it can produce dry extrac of noni fruit with vitamin C and high activity antioxidant and also to know the influence of binding agents type in the making of noni pressed candy. This research use the Randomized Block Design (RBD), where at antecedent research consisted of 3 (three) levels which is ratio of noni fruit compared by ethanol (1:1, 1:2, 1:3) and best treatment used for the main research. Main research consisted of 3 (three) levels that was influence of binding agents type (maltodextrin 5%, gelatin 1,5% and gom arab 1%). Then its continued with the BNT test at ? = 0,05 (differing reality). Test of organoleptic done by hedonic score test. Best treatment uses multiple attribute method. The result of research show that the best treatment from dry filtrate of  noni fruit was with the ratio of noni fruit compared by ethanol = 1:3. Best treatment of noni fruit pressed candy is with the gelatin addition 1,5 %.

Abstract

Coccus bactria is the cell of bacteria formed ball or ellip in 0,5 – 1µm diameter. Fermented durian is the fermented food prepared from spontaneous fermentation of durian (Durio zibethinus)with or without salt by wild bacteria. The sources of data in this study was laboratory analysis. Productions center of fermented durian, traditional markets were sampled for the experiment. Sampels were collected weekly in a month. Samples were analyzed microbiologically to determine and identify bacteria infermented durian. There were two species of coccus bacteria involved in fermented durian namely Pediococcus acidilacticiand Leuconostoc mesentroides. Abstract

The purpose of this study was to determine the acceptability of society to pulpy RGL  orange juice and value-added products of pulpy RGL orange juice. The research design used was completely randomized design (CRD) factorial with two treatments which were extraction methods (A) and the addition of dyes (B). Results of research showed that orange processing into pulpy RGL orange juice by the addition of dyes and using a press and extractor were not significantly different in organoleptic. Processing pulpy RGL orange juice from 50 kg of raw material could  produce 127 liters juice and can increase the value-added orange RGL 16,300,-/kg with ratio 64 %.

Abstract

Teripang banyak diminati sebagai makanan kesehatan juga mengandung bahan aktif antibakteri, antifungi, antikoagulan, sebagai penghasil protease dan arginine kinase.Dengan banyaknya kandungan yang terdapat pada produk olahan teripang serta manfaat yang didapatkan perlu dilakukan survei pasar dalam bentuk identifikasi pelaku dan produk terhadap produk olahan teripang. tujuan dari penelitian ini adalah mengidentifikasi tingkat kepentingan pelaku yang terlibat dalam sistem agroindustri.Menentukan bentuk produk obat luka dengan bahan baku teripang yang layakdipasarkan. Tahapan penelitian ini adalah (1) Identifikasi ini dilakukan dengan cara pengisian kuisioner dan teknik wawancara terhadap nara sumber yang berkompeten dalam sistem agroindutri, dalam hal ini sistem agroindustri teripang seperti Dinas Kelautan, Dinas Kesehatan, Perguruan Tinggi dan lain-lain.(2) Mengidentifikasi produk-produk antiseptik dan obat luar berbasis teripang.(3)Pemilihan bentuk produk berdasarkan metode MPE (Metode Perbandingan Eksponensial. Metode Perbandingan Eksponensial (MPE) merupakan salah satu metode untuk menentukan urutan prioritas alternatif keputusan dengan kriteria majemuk. Alternatif keputusan yang ada dalam penelitian ini adalah produk antiseptik berbasis teripang dalam bentuk cair, balsem dan salep. Sedangkan kriteria majemuk dalam memilih kriteria variasi produk antiseptik berbasis teripang adalah ketersedian bahan baku, jumlah produksi, proses potensi pasar, jumlah produksi, kompotitor, penguasaan teknologi, kebutuhan tenaga kerja, dan nilai tambah produk.Pelaku agroindustri yang berperan penting yaitu konsumen, BPOM, produsen dan nelayan. Produk dengan bentuk salep lebih di sukai oleh para pelaku agroindustri ini. Berdasarkan perhitungan dengan menggunakan Metode Perbandingan Eksponensial (MPE) didapatkan nilai kriteria tertinggi untuk jenis produk salep 5.828.935, balsem dengan nilai kriteria 5.542.406 dan bentuk cair dengan nilai kriteria 5.085.508.

Abstract

Most of farmers especially in Rejang Lebong, Bengkulu, cultivaterobusta coffee.Through the preliminary observations there have been obtained bad post harvest handling, as the fruit cherries mixed green, yellow, and red; that reduced quality of coffee beans from smallholder plantations. To improve yields and product, good attention to farmers harvest, harvesting the coffee berries have a decent harvest to be able to compare the different characteristics of the coffee fruit.This research using Chi-square analysis to calculate significant difference or not in the process harvesting different ways, and using ANOVA analysis and LSD (Least Significant Difference) to calculate the real difference or not significantly different in mass density, spersitas fruit fresh coffee and coffee beans. Based on the Chi-square analysis obtained differences in the percentages of different crops on fresh fruits (red, yellow, green) with a different way of harvest. Based on the analysis of ANOVA and LSD test obtained density difference, spersitas there are distinct differences between coffee red, yellow and green

Abstract

One of the most popular seafood in the world is shrimp, including cooked shrimp. Boiled shrimp is a value added product with high protein content, specific taste, ready to eat, and have an interested colour for consumers. Boiled shrimp must be protected from quality deterioration during storage. The research was carried out to study the effect of carrageenan coating to inhibit the quality deterioration of boiled shrimp based on organoleptic evaluation during refrigeration storage (4-6oC). Peeled undevined (PUD) vannamei (Litopenaeus vannamei) with size 60-70 was used as object. The boiled shrimps treated with two treatmens, which were coated and uncoated boiled shrimps. Application of coating carrageenan on boiled shrimp indicate that coating application could extend its shelf life, proved by higher organoeptic value than uncoated product, based on organoleptic evaluation for frozen boiling shrimp (SNI 01-2346-2006).
