Abstract

Madura island is still facing challenges in development, including development related to food security. Food security has a strong linkage with poverty. Unavailability of food in suffi cient quantity and quality is a major cause of  household food security problems. The objective of this study was to determine the level of  household food security and  coping strategy in  isolated island. This study was an observational research with descriptive and cross-sectional design, using a mixed method approach which combines qualitative and quantitative approach. The study was taken in Gili Labak island of Sumenep, M adura. The sample was all households live in Gili Labak island as much as 36 household. Household food security data was assessed using United States Household Food Security Modul (USHFSSM) instrument, while c oping strategy data was assessed using Reduced Coping Strategy Index (RCSI) instrument. The results of this study showed that most households were food insecure and make several efforts of  coping strategy for survival. The most common c oping strategy done by the household is borrowing food from neighbors. The study recommends there should be centers of seeds alternative crops other than rice as well as the intervention of the food aid before the arrival of the wave season, provision of water reservoir and food storage barns.

Abstract

Chicken, soy tempeh, and Isolated Soy Protein (ISP) can be processed into sausages that can be alternative for highprotein snack. Red Yeast Rice is a natural food colorant added to that the sausage to make more interest. This research was aimed to determine the substitution effect of tempeh and addition of Isolated Soy Protein (ISP) to the organoleptic quality, protein value of chicken sausages. The type of research was pure experimental with completely randomized design. There was 3 types of formula, 1 control formula F0 (chicken) and 2 formula modifi cations F1 (50 g chicken, 50g tempeh, 15 g ISP, and 3 g of red yeast rice), F2 (100 g tempeh, 25 g ISP, 5 g red yeast rice ) with three replications. The organoleptic quality was determined by 35 untrained panelists. The results of organoleptic tests showed that F2 (color, taste, texture) was most preferred formulations. The highest protein content per 100 g sausage was F2 (17.4 g) compared with F0 (14.6 g). There were signifi cant differences between F0 to F1, F2 on fl avors (p = 0.000) and color (p = 0.000). The best formula rated by the composition, organoleptic test, and the protein content was F2.

Abstract

Teenagers swimming athlete has higher nutrient requirement than most teenagers with the same age to support  their growth and their sport activity. Swimming athletes are required to have good body composition for maximum performance. The aim of this research was to measure macronutrient consumption, percent body fat, and aerobic endurance of teenager swimming athlete. This research was an observational descriptive using cross-sectional study design with 23 swimming athletes who have minimum age of 10 years and having minimum one regency-stagecompetition attended. The data collected by interviewer, include characteristics, food consumption by 2x24 hours food recall, body fat percentage by Bioelectrical Impedance Analysis, and aerobic endurance by Critical Swim Speed Test. The result showed that energy intake was 2394.8 ± 780 kcal in male athlete and 2125.9 ± 336.6 kcal in female athlete,protein consumption was 108.4 ± 38.5 gram in male athlete and 85.1 ± 23.9 gram in female athlete. Body fat was 17.8 ± 6.7% in male athlete and 24.1 ± 7.3% in female athlete and critical swim speed was 1.05 ± 0.17 m/s in male athlete and 1.06 ± 0.12 m/s in female athlete. It is concluded that energy intake and protein consumption had fulfi lled standard of swimmers need. Body fat level was higher than swimmers standard. The mean of CSS was 1,05 ± 0,15 m/s. Therefore, athlete should maintain their diet and increase their exercise.Keywords: aerobic endurance, swimming athlete, energy intake, protein intake, body fat

Abstract

Women in reproductive age is a group that are more susceptible to anemia. Anemia is caused by a deficiency of various nutrients in the body which existence affects each other and it can lower the immune system then increased risk of morbidity. The aim of this study was to analyze the relationship between intake of iron, vitamin A, vitamin B2, vitamin B6, vitamin C, folic acid, and zinc with hemoglobin level among women in reproductive age. This cross sectional study was conducted in 9 subdistricts in Probolinggo and subjects were 71 people selected by simple random sampling using secondary research data in 2014. Micronutrients intake data obtained by 24 hours recall method then compared to RDA. Hemoglobin level measured by Hemocue. Data was analyzed using the Pearson correlation test. The result showed the average of hemoglobin level was 12.01 ± 1,24 g/dl and anemia prevalence was 42.25%. Statistical analysis showed that vitamin A intake is correlated to hemoglobin level (p = 0.015; r = 0.287). Further analysis is done by dividing respondents into two groups, anemic and not anemic to analyze the difference of the average of micronutrients intake. The sufficient level of vitamin A and vitamin B6 were adequate (≥ 77% RDA), but only vitamin A that significantly associate to hemoglobin level. Keywords: micronutrient intake, hemoglobin level, Women in reproductive age

Abstract

Dissatisfaction with body shape are common among young women. Therefore, they always trying to get their ideal body shape. One of the effort to get ideal body shape is applying vegetarian diet. This study aimed to analyze the association between  body image and body mass index ( BMI) and waist to hip ratio (WHR) among   young women vegetarian. The study was a cross sectional with quantitative approach among 32   young women vegetarian in Surabaya. The  body image perception was obtained using a questionnaire. The nutritional status was obtained from weight and height measurement, and WHR was obtained by measuring waist and hip circumference. This study showed that as many as 23 respondents (71.9%) had a positive perception of  body image, as many as 22 respondents (68.7%) had WHR <0.8 cm, and a total of 19 respondents (59.3%) had a normal  BMI. There was an association between  body image and  BMI (p=0.014), but there was no association between b ody image and WHR (p=0.653). This study conclude that b ody image is associated to  BMI but not WHR

Abstract

The are many causes of nutritional problems, including lack of food intake, illness, caring pattern and many other causes, one of the problems that often happen is the children had not weighed regularly. Iodine is one of the nutrients associated with the growth of children. On the other hand, children who are suffering from malnutrition usually also hasVitamin A defi ciency as a result of their lack of nutrient intake. The purpose of this study was to analyze the relationship between the frequency of weighting, the use of iodized salt, and Vitamin A supplementation with underweight among children under fi ve in East Java Province. This study was secondary data analysis from Monitoring of Nutritional Status (MNS) in East Java, 2016. The sample of this study were 10.440 households with children under fi ve. 18.5% children under fi ve in East Java were underweight, 2% overweight, and 79.5% were normal. Distribution of frequency were performed as univariate statistical analysis and the relationship between variables were analyzed by chi-square test. The odd ratio were analyze by logistic regression. There was signifi cant correlation between blue-colored vitamin A supplementation (p < 0.001;OR = 0.638;95%CI:0.580-0.78w2) with underweight. However, there was no correlationbetween weighing frequency (p = 0,729) and the use of iodized salt (p = 0,620) with underweight. The conclusion of this study highlight that there was correlation between Vitamin A supplementation with underweight in East Java.

Abstract

The use of purple sweet potato fl our and soy protein isolates to be processed into protein biscuit has a good potential to be an appropriate supplementary food for chronic energy deficiency (CED) pregnant woman compared to biscuits commercialized on market. This research aimed to investigate the acceptance and protein content of biscuits that had been substituted with purple sweet potato fl our and soy protein isolates. This research was true experimental design with completely randomized design (RAL) with 6 repetitions. There was 3 formulas which were 1 control formula (F0) and 2 modified formulas (F1, F2). The total of purple sweet potato fl our substitution on F1 was 170 g and F2 was 90 g, meanwhile the total of soy protein isolate substitution on F1 was 30 g and F2 was 10 g. The data was analyzed by applying descriptive analyses which was tested by Kruskal Wallis and Mann Whitney to find the effect among formulas. The result of this research showed that generally the assessment of biscuit was well accepted by pregnant woman and the highest average of acceptance was F2 formula. The assessment of the highest acceptance for color and aroma characteristic was F2. The assessment of color, aroma, and taste among formulas had no significant impact (α<0.05), meanwhile on texture characteristic there was significant effect (α>0.05). The best formula (F2) has a good acceptance and posses protein content of 11.9 g per 100 g that can fulfill the need of 10% protein for pregnant woman so it can be used as supplementary food for pregnant woman.

Abstract

Breadfruit is staple food of carbohydrate source alternative, while the mung beans is source of vegetable protein that potential to be processed as fl akes for supplementary feeding of schoolchild. This research aims to determine the effect of breadfruit and mung beans substitution toward the acceptance and protein content, as well as determine the best formula to produce a quality fl akes. Type of research is true experimental design with completely randomized design with 3 times replicating. Untrained panelists were used 34 2nd elementary school students. Product acceptance was tested using statistical analysis Chi square (α ≤ 0.005). The result of product acceptance test shown the most preferred panelist is fl akes F1 (breadfruit 50g, mung beans 50 g, and tapioca fl our 50 g) which have mean value of the highest rank in the aroma characteristic (87.00), texture (95.00) and taste (89.50), while the color values meanrank (77.5) under the color of the basic formula (83.5). F1 has 9.8 g protein content per serving. Statistical analysis of acceptance differences using chi square test on the assessment of the color, aroma, texture and fl avor showed signifi cant differences (α ≤ 0.05) on each characteristic between F0 to F2, F0 to F3, F1 with F2 and F1 to F3, whereas there wasno signifi cant difference (α ≥ 0.05) for the acceptance of color, aroma, texture and fl avor fl akes F0 to F1 and F2 to F3. The best composition, acceptability, and nutritional value was found in F1 (breadfruit 50 g, mung beans 50 g, and tapioca fl our 50 g) and can be used as alternative of supplementary feeding for school students.Keywords: Breadfruit, acceptance, fl akes, mung beans, protein

Abstract

Moringa leaves and soybean sprouts is local plant in Indonesia. Moringa leaves and soybeans sprouts have high enough of nutrient content but still less to utilization. Moringa leaves are rich in iron and soybeans sprouts as an alternative food material who source of vegetable protein can be substituted to cookies for supplementary food recovery in the rehabilitation phase. The purpose of this study was to analyze the effect of ubstitution of Moringa leaf powder and flour soybean sprouts against acceptance, the levels of protein, and iron cookies. Type of research was true experimental design with completely randomized design at 2 times replicating. Untrained panelists were used 30 mother ofchildren aged 1-3 years. Product acceptance was tested using statistical analysis Kruskal Wallis (α≤0,05). The result of product acceptance test was the most preferred panelist is cookies F1 (150g wheat flour, flour 10g Moringa leaves and soybean sprouts flour 40g) have modus 3 (like) and protein content 9g and iron content 3,21mg per serving size (100g cookies). Statistical analysis showed significant difference to the characteristic colour (p=0,000), odour (p=0,000), texture (p=0,000) and flavor (p=0,000).

Abstract

Menarche is first menstruation that an indicator of teenage girlsenter puberty phase. Nowadays the age of menarche has decreasedin tothe younger. The purpose of this study was to analyze the relation between nutritional status and body fat percentage with menarche age. This research used cross sectional design with sample size of 37 female students who had experienced menstruation and selected using simple random sampling. Data were collected by anthropometric measurements to assess nutritional status, body fat percentage using Bioelectrical Impedance Analysis (BIA). Data were analyzed by Spearman correlation test. The results showed that more than half of respondents had normal nutritional status (51.4%) and healthy body fat percentage. There was a correlation between nutritional status (p=0.029, r= -0.360) and body fat percentage (p =0.048, r=-0.328) with age of menarche among teenage girls at the Muhammadiyah GKB 1 Gresik Elementary School. The conclusion of this study was higher nutritional status (score of z-score) and fat percentage will decrease the age of menarche. Research suggestion is to normalize nutritional status and percent body fat. By maintaining consumption pattern and increase physical activity, such as cycling, swimming, and others.
