Abstract

Inulin is one of many functional food components that becomes a trend nowadays. Inulin can be found in the stems and roots/tubers of plants. Yellow sweet potato (Ipomea batatas L.) is a widespread species of sweet potato with abundant availabilty in Indonesia, where it is exploited only as a source of carbohydrate. From the previous study, it was stated that sweet potato can be used as an alternative resource of inulin besides dahlia and Dioscorea spp. tubers. This study aimed at extracting and isolating inulin from aqueous extract of yellow sweet potato with 3 different ratio (1:1, 1:2, 1:3) and 3 different time (6, 12, 18 hours) to determine its effect on the yield of inulin. After preparation of extracts, crude inulin was precipitated in 96% ethanol. The free reducing sugar from sweet potato flour was tested using Dinitrosalisylic Acid Method (DNS). After precipitation, inulin powder was obtained by an overnight drying process using oven at 60ºC and characterized by color, solubility, water absorption, moisture content and ash content. Its inulin structure was analyzed and confirmed by Fourier Transformed Infrared (FT-IR) spectroscopy. The results showed that different ethanol ratio and precipitating time has effect on the yield of inulin. The highest yield of inulin were 8.80% obtained from solvent ratio 1:3 with 18 hours of precipitating time. It can be concluded that yield of inulin were affected by solvent ratio, precipitating time and degree of polymerization (DP). Higher solvent ratio and precipitating time could obtain higher yield of inulin.

Abstract

Strawberry merupakan salah satu buah hortikulura yang mudah rusak (perisable), sehingga memiliki umur simpan yang pendek. Kerusakan strawberry disebabkan karena pembusukan akibat pengaruh mekanis maupun mikrobioogi. Penurunan kualitas buah dapat ditandai dengan penurunan susut bobot, kelayuan, penurunan firmness, dan penurunan nilai gizi. Pengawetan strawberry segar sangat diperlukan untuk mempertahankan karakteristik pada strawberry. Salah satu cara mengurangi kerusakan dengan metode pelapisan (coating). Pada penelitian ini dilakukan usaha untuk memperpanjang umur simpan strawberry dengan menggunakan VCO. Penelitian ini dilakukan untuk mengetahui karakteristik fisik, kimia, mikrobiologi dan metode pengaplikasian VCO yang efektif untuk memperpanjang umur simpan strawberry. Rancangan penelitian yang digunakan adalah Rancangan Acak Lengkap (RAL) dengan satu faktor yaitu metode pengaplikasian VCO (kontrol, dipping, dan spraying). Data karakteristik dianalisis secara statistik menggunakan one way ANOVA. Jika data menunjukkan hasl beda nyata antar perlakuan maka dilanjutkan uji DMRT pada α = 0,05. Hasil penelitian menunjukan bahwa VCO dapat mempertahankan susut bobot, warna, firmness, kadar air, TPT, Vitamin C, pH, TAT dan menurunkan total mikroba strawberry selama penyimpanan. Metode pengaplikasian Virgin Coconut Oil (VCO) dipping dan spraying efektif dalam menghambat pertumbuhan mikroba pada strawberry selama 12 hari penyimpanan.

Abstract

The sausage is processed products that is very popular among the community. Type of sausages in the market are beef sausage and chicken sausage.Sausages that can be also made from catfish which has good nutritional value as well as a new product which is appreciated by the public. The purposes of the study was to obtain the best sausage formulations of dumbo catfish and bamboo shoot using the SNI quality standards. The research was conducted experimentally using completely randomized design (CRD) with five treatments and four repetitions, followed by DNMRT test at 5% level. The treatment in this study were LDR1 (ratio catfish 95and bamboo shoots 5) LDR2 (ratio catfish 90 and bamboo shoots 10) LDR3 (ratio catfish 85 and bamboo shoots 15) LDR4 (ratio catfish 80 and bamboo shoots 20) and LDR5 (ratio catfish 75 and bamboo shoots 25). Parameters observed were the moisture, ash, fat, protein, carbohydrates, crude fiber contants and sensory evaluation. Results of the analysis of variance showed the addition of catfish and bamboo shoot significanlyaffectedall parameters. The results of the study found that the best treatment was LDR4 with a value of 62,68% moisture content, 1,65%ash, 4,15% fat,13,48% protein, 18,04% carbohydrates and fiber content 2,49% and an overall assessment of sensory preferred by panellists.  Keywords :sausage, catfish, bamboo shoots.

Abstract

Wunut Village is located in Tulung Sub-District, Klaten Regency which has the horticultural potential such as tomato and chili. But the huge potential has not been able to lift the economy of the village community. Therefore the community devotion team of Department of Food Science and Technology, Faculty of Agriculture, Sebelas Maret University chose Wunut Village as the target village. The problems faced by farming communities in Wunut Village are (1) production of chili and tomatoes are abundant, but the selling price is relatively low; (2) the large number of poor people; (3) lack of knowledge and community insight about entrepreneurship in the field of food; (4) interest in entrepreneurship is still lacking in society; And (5) the difficulty of marketing the resulting product. The solutions offered by the community devotion team are through training activities and the introduction of tomato processing technology into “torakur”; Training and introduction of production process technology of shredded pepper; Entrepreneurship training and food industry management; Information technology-based marketing training and direct selling strategies. In order to support these activities, aids were also provided to improve the quality of the chakra and the resulting chili pepper. Equipment provided in the form of cabinet dryer, dry mill, and packer sealer. The result of this activity in the form of introduction of tomato processing technology into “torakur”, and processing of chili into shredded chili has been done well, with products that can be accepted by society and have a big prospect to be developed.Keywords:entreprenuership, quality, torakur, shredded chili, Wunut Village

Abstract

Sanggrahan Village, Grogol District, Sukoharjo Regency is one of the areas that has many home-based processed food industries. Madu mongso is one of the processed food products in this village. Madu mongso is a snack food made from fermented glutinous rice and addition of sugar and coconut milk. Madu mongso is similar to dodol. Problems faced by madu mongso partners are not yet diversifying raw materials, production capacity is still small, packaging not yet appropriate, not yet have p-irt. The solution offered to the local mongso honey processing industry is through the production process of mongso honey introduction technology made from tubers and fruits (cassava, carrots, soursop) in an effort to diversify the products; The introduction of appropriate technology for the processing of honey mongso in the form of mixing machine; The introduction of various technologies of packaging materials; Home industry food permit (p-irt); And IT-based marketing training and direct selling strategies. Abstract

Home industry of krupuk Karak in the subdistrict Mojolaban Sukoharjo district is currently growing with the number of many industries. Most of these industries still use borax as the developer material of batter dough. STPP is an alternative substance of borax replacement. STPP education as a substitute for borax should be done to eliminate the use of borax in food. Home industry in Sukoharjo district is still using manual labor for the production process of cracker karak. Appropriate technology can be provided to save time and production costs. The process of soaking batter dough has been the most time-consuming and energy-consuming process. Mincer as a meat grinder can be used to crush the dough.

Abstract

Tegal Arum Village is one of the presto milkfish processing areas in Surakarta. One of the household industries that has been running for a long time with this business is Mr. Darpo's milkfish presto owned by the name IRT "AR Putra Maju Jaya". This business has been initiated since 2015, with production capacity reaching four quintals every day. Fresh milkfish used are imported from Gresik. This IRT has 4 employees who work 6 days a week. The high number of presto milkfish processors in Surakarta results in increasingly fierce business competition. This causes IRT to experience difficulties in expanding the marketing area so that income is stagnant and does not increase. The main problem found in the IRT milkfish presto "AR Putra Maju Jaya" Mr. Darpo is the still low standard of sanitation and hygiene processing, the equipment used is still limited and simple so that the production and storage capacity is minimal, there is no good packaging so the product is less attractive and easily damaged. The solution to these problems is to improve the presto milkfish processing by applying sanitation and hygiene standards by rearranging the production space, helping equipment made of stainless steel, improving product packaging with packaging variations and packaging design as well as adequate raw materials and product storage. The effort is expected to be able to improve the quality of AR Putra Maju Jaya's milkfish presto so that it can increase production capacity and marketing areas.

Abstract

Tracer study which has been done by Department of Food Science andTechnology showed that only 62,5% of graduates have related job to the major, whilefrom 62,5% that have, only 10% become businessman/entrepreneur. This matternecessarily become a shared duty of the study program to escalate studententrepreneurial spirit since early on. Step that had been taken by the study program inorder to evoke student entrepreneurial spirit has not given maximum result becausestudents could not apply their sciene of entrepreneurship in a business unit practicedirectly. Therefore, Department of Food Science and Technology is commited to evokeand escalate student entrepreneurial spirit by forming a production unit named “OmahTelo”. This program is directed to obtain reveneu generating for the research group inparticular, Department of Food Science and Technology in general and also buildtechnopreneurship sprit in HIMAGHITA. In its first year, this program has beensuccessfully build up a productive business unit “Omah Telo” with chips and sweetpotato flour as the main products, also tela-tela, sweet potato stick, ice cream andschotel as the additional products. The entrepreneurship talkshow, food industrymanagement, and also marketing techniques have established the technopreneurshipspirit of the students. Abstract

Desa Ngajarjo, Kecamatan Ngargoyoso, Kabupaten Karanganyar merupakan salah satu daerah sentra perkebunan jambu biji. Produksi jambu biji yang melimpah belum diimbangi dengan pengolahan produk olahan jambu biji, sehingga penjualan jambu biji masih dalam bentuk segar. Dalam rangka peningkatan nilai ekonomis dan peningkatan upaya diversifikasi maka dilakukan penyuluhan terkait olahan jambu biji oleh GAMALOGISTA yang bekerja sama dengan dosen Program Studi Ilmu dan Teknologi Pangan Universitas Sebelas Maret. Penyuluhan dilakukan dengan pemberian materi tentang penangan pasca panen, pengolahan produk serta untuk penjualan produk olahan jambu biji. Penyuluhan tersebut diharapkan menjadi dasar untuk kegiatan selanjutnya yaitu praktek pengolahan jambu biji menjadi aneka olahan.
