Abstract

Abstract. Telang Flower (Clitoria ternatea L) has several benefits, especially as a medicinal plant, containing secondary metabolite compounds that can potentially be antioxidant, antibacterial, antiparasitic and anticidal, antidiabetic, and anti-cancer. Eagles are known to contain compounds that act as natural antioxidants that contain phenolic and flavonoid group compounds. Therefore, this study aims to determine the characterization of simplisia and extract of telang flowers as well as total flavonoid levels in extracts and kombucha of telang flowers using the AlCl3 method.Specific characterization carried out includes organoleptic tests and determination of soluble water and ethanol levels, while non-specific characterization carried out includes determination of moisture content, filtration loss, determination of total ash content and acid insoluble ash content. Determination of total flavonoid levels was carried out by the AlCl3 method using a UV-Vis spectrophotometer and quercetin as a comparison. From the results of the study showed that the simplisia of telang flowers has the characteristics was blue color, fine powder shape, characteristic smell, and bitter taste. As for the results of greenish-brown telang flower extract, thick shape, characteristic smell, and bitter taste. In the water soluble-extract test, the results were 38.615%, ethanol soluble extract content was 31.80%, water content was 10%, drying loss was 18.580%, total ash content was 5.298%, and acid insoluble ash content was 0.588%. The total flavonoid content in the striped flower extract was 7.2188 mgQE/mg extract and in the telang flower kombucha amounted to 197 mgQE/mL Kombucha. Bunga Telang (Clitoria ternatea L) memiliki beberapa manfaat terutama sebagai tanaman obat, mengandung senyawa metabolit sekunder yang dapat berpotensi sebagai antioksidan, antibakteri, antiparasit dan antisida, antidiabetes, dan anti-kanker. Bunga telang diketahui mengandung senyawa yang berperan sebagai antioksidan alami yang mengandung senyawa golongan fenolik dan flavonoid. Maka dari itu penelitian ini bertujuan untuk mengetahui karakterisasi dari simplisia dan ekstrak bunga telang serta kadar flavonoid total pada ekstrak dan kombucha bunga telang menggunakan metode AlCl3. Karakterisasi spesifik yang dilakukan meliputi uji organoleptik dan penetapan kadar sari larut dalam air dan etanol, sedangkan karakterisasi non-spesifik yang dilakukan meliputi penetapan kadar air, susut pengeeringan, penetapan kadar abu total dan kadar abu tak larut asam. Penetapan kadar flavonoid total dilakukan dengan metode AlCl3 menggunakan spektrofotometer UV-Vis dan kuersetin sebagai pembanding. Dari hasil penelitian menunjukkan simplisia bunga telang memiliki karakteristik warna biru, bentuk serbuk halus, bau khas, dan berasa pahit. Adapun untuk hasil ekstrak bunga telang berwarna coklat kehijauan, bentuk kental, bau khas, dan rasa pahit. Pada uji kadar sari larut air didapatkan hasil sebesar 38,615%, kadar sari larut etanol sebesar 31,80%, kadar air sebesar 10%, susut pengeringan sebesar 18,580%, kadar abu total sebesar 5,298%, dan kadar abu tak larut asam sebesar 0,588%. Adapun kadar flavonoid total dalam ekstrak bunga telang adalah sebesar 7,2188 mgQE/mg Ekstrak dan pada kombucha bunga telang sebesar 197 mgQE/mL Kombucha.
