Abstract

The method was steam distillation and water and steam distillation, whereas the duration was, 4,5,6,7 and 8 hours. It was found out that the highest yield (5,85%) was obtained from 6 hours steam distillation. The analysis of the oil showed that steam distillation method gave lower acid number, but water and steam distillation for 4 hours resulted in highest cineolcontent.

Abstract

Research on the levels of awareness and responsibility of small scale food industry to produce a qualifying and safe food has been conducted .this research was conducted by carrying out a survey, an interview , plant visit and distribute a questionnaire to the managers/owners of small scale of small scale food industries at six region ,ie jakarta,bogor tangerang,bekasi(jabotabek),bandung (west java) and padang ,bukit tinngi (west sumatera)A random sampling of food products samples that was taken from small scale food industry at traditional market or at the businesses operation was also conducted to identify the food product were safety regulion the results showed that generally ,after the indonesian government decree the food safety regulations,i.e food act no. 7 decree in 1996; lebeling government no. 69 in 1999 on cosumer protection act no. 8 decree in 1999 ; the of food hygiene practices and 36.31% implementation labeling goverment regulation no. 69 decree in 1999.

Abstract

A study on the production of Aloe Vera (Aloe Vera Linn) powder using spray dryer has been conducted. The fillers used were arabic gum 1%, CMC 1%and Carragenan 1%. Analysis done on the Aloe powder are moisture content, acidity (pH), amino acids, particle spread and viscosity. The moisture content and pH of Alue powder filled with arabic gum and CMC met the requirement of CTFA code TN. 001. It moisture content were 6.40 - 7,23%, while the pH 4-5. Aloe powder with carragen did not meet the above requirement. However the amino acid content in powder using carragen filler was almost the same as those of Aloe gel. Its particle size was also finer and therefore it is more soluble in water.

Abstract

Kapol and kapolaga are the local name in indonesia for cardamom.Although their botanical name has already clear for each species,nevertheless there were stil some confusions in regional name.Some people call it kapol for kapolaga on in turn kapolaga was called  kapol. An attempt tom distinguish which is which a GLC analysis on their essential oils were determined.From the result it distinctly can be recognised due to their GLC finger print didi not match each other so their composition were not the same. Kapol oil was totally different from kapolaga oil since its main component was 1,8-cineol,while kapolaga oil contained 1,8-cineol,terpinil acetate and geralsacetate at its main component.According to perseglove (1981)the first was belong to ammomum cardamomum and the latter was belong to Elletaria cardamomum.Since the letter type was more popular and reqodnised in international market,the first type was called as false cardamon. This is no fair since every type of cardamun had their own application and market.The result of this study willbe used as data to support the international standartd organitation (ISO) proposal.

Abstract

Fannel (Foeniculum Vulgare Mill) has been well known by indonesia people. Fannel seeds have strong pleasant odour because of essential oil. The major essential oil constituents of fannel were anethole and limonene, with more than 80% of the total oil. The other chemical consituents were- pinene, myrcene, y-terpinene, fenchone, estragole and fenchyl acetate. To increase the use of fannel oil, anethole consituent can be converted to its derivations by oxydation, acetylation, reduction, esterification and alcylation processes. Fennel seeds are used as a flavoring for goods and beverages and the essential oil from seed and plant has flavoring, cosmetic and pharmacuetical uses. The tendency in consumming medicine from natural plant material source, cause in the increasing use fennel as medicine raw material, especially the simplified usage which was used in traditional medicine.

Abstract

A study on the effect of distillation time and physico-chemical properties of while pepper waste had been done.The particle sizes were ground pepper and whole pepper,and the distllation method waswater and steam distillation for 2,4,6,8, and 10 hours.The yield of pepper oil of whole pepper were 1.56, 1.84, 2.77, and 2.97% respectively.For the ground pepper the yield were 2.50, 2.77, 2.81, 2.88, and 3.24%.The main components of the oil were alpha-pinene,beta-pinene,limonene and beta-caryophyllene.The physico-chemical test showed that the oil was suited the requirement of EOA(Essential Oil Assosiation Of America)

Abstract

A study to find the best condition in producing preserved salak (snake fruit) has been conduced. The variables used are type of salak and duration of soaking in brine.The result showed that 3 days soaking in 10% brine for Cibodas type gave a good preserved salak. The product was well accepted by the panelists. The analysis on the best preserved salak gave the following result: moisture content 11.99%, sucrose 42.20%, vitamin C 2.18 mg/100 g whiteness 44.50% and firmness 2.15 mm/g.
