Abstract

Abstrak. Proses produksi tahu menghasilkan hasil samping berupa limbah cair maupun limbah padat yang disebut dengan ampas tahu. Ampas tahu umumnya hanya dibuang begitu saja, sehingga menimbulkan pencemaran lingkungan di sekitarnya. Permasalahan tersebut mulai diatasi dengan memanfaatkan ampas tahu sebagai hidrolisat protein karena kandungan proteinnya yang cukup tinggi. Hidrolisat protein berguna pada berbagai industri pangan salah satunya sebagai garam glutamat. Asam glutamat yang terbentuk dari proses hidrolisis dengan menggunakan enzim bromelin direaksikan dengan NaOH untuk membentuk garam glutamat. Asam glutamat yang terbentuk memiliki kadar sebesar 522,94 ppm pada konsentrasi enzim 50% dan menunjukkan puncak yang sama dengan asam glutamat standar. Hasil identifikasi asam glutamat menunjukkan puncak yang sama pada panjang gelombang 570 nm dan KLT pada Rf 0,33. Sintesis garam glutamat diperoleh suatu serbuk berwarna putih dengan pH 9,1 dan titik leleh 285 oC. Kata Kunci : Ampas tahu, enzim bromelin, KLT, garam glutamat Abstract. The process production of tofu result waste in the form of liquid and solid called tofu dregs. Tofu dregs is generally just thrown away, so that cause pollution of the surrounding environment. These problems began to be overcome by use tofu dregs as a protein hydrolyzate because of its high protein content. Hydrolysate protein is useful in various food industries, one of which is glutamate salt. Glutamic acid formed from the hydrolysis process use the bromelin enzyme is reacted with NaOH to form glutamate salts. Glutamic acid formed has a concentration of 522.94 ppm at 50% enzyme concentration and shows the same peak as standard glutamic acid. The results of identification of glutamic acid showed the same peak at a wavelength of 570 nm and TLC at Rf 0.33. The synthesis of glutamate salt was obtained by a white powder with a pH of 9.1 and a melting point of 285 oC. Keywords : Tofu dregs, bromelin enzymes, TLC, glutamate salt
