Abstract

Foodborne disease merupakan penyakit akibat makanan yang terpapar oleh bahaya kimia, fisik, maupun mikrobiologis pangan. Pada tahun 2010 diperkirakan terdapat lebih dari 500 juta pasien terkena foodborne disease dan menyebabkan kematian pada lebih dari 1 juta pasien di dunia, dan lebih dari 30% terjadi pada anak-anak. Risiko tinggi penularan foodborne disease pada anak-anak terutama terjadi di lingkungan tertutup seperti tempat penitipan anak dan sekolah. Gejala yang dialami anak-anak jika terkena foodborne disease berupa mual, muntah, demam, dan diare. Hal-hal tersebut akan mengganggu kegiatan belajar siswa di sekolah. Jika tidak ditindak lanjuti, foodborne disease bisa mengakibatkan gangguan pada organ dan juga metabolisme tubuh anak, bahkan bisa menyebabkan kematian. Diare di Kabupaten Magelang merupakan salah satu dari 10 kasus penyakit terbanyak di Kabupaten Magelang pada tahun 2019-2021 (BPS, 2021). Edukasi keamanan pangan ini diharapkan dapat meningkatkan pemahaman anak-anak dalam keamanan pangan, sehingga mampu memilih makanan yang higienis, sehingga tidak mengganggu kesehatan. Kegiatan ini dilaksanakan di MI Maarif Gunungpring Muntilan, Kabupaten Magelang, dengan peserta sebanyak 479 siswa kelas 1 sampai dengan kelas 6. Pelaksanaan edukasi ini terbukti efektif dalam meningkatkan pemahaman siswa mengenai keamanan pangan, terlihat dari peningkatan nilai rata-rata pre-test dan post-test yang signifikan sebelum dan sesudah edukasi (Sig. 2 tailed = 0,000).

Abstract

This study aimed to evaluate S. platensis powder dietary supplementation on the growth performance and color quality of polar blue cichlids. This study used a completely randomized design experimental method with four different dietary supplementation doses of S. platensis powder, namely 10 g/kg diet (A), 20 g/kg diet (B), 30 g/kg diet (C), and 0 g/kg diet (K). These treatments were replicated four times. The polar blue cichlids as fish samples had 4.07 ± 0.12 cm and 2.15 ± 0.22 g. Diets (38% protein) were produced by coating the commercial feed with S. platensis powder in appropriate dosage. Feeding was performed until apparent satiation twice a day for 45 days. All parameters, including growth performance (feed intake, weight gain, length gain, specific growth rate, feed conversion ratio, survival rate) and color quality (total grid percentage and total chromatophores), were analyzed using an analysis of variance and the Duncan's multiple range test was applied to obtain the best treatment in growth performance and color quality. The dietary supplementation of S. platensis powder had no significant effect on the growth performance of polar blue cichlids. However, this treatment provides a higher total grid percentage of blue color and total chromatophores in the fish. The best treatment on color quality was found in a 30 g/kg diet dose of S. platensis powder. Therefore, 30 g/kg dose of S. platensis powder is effective to improve the color quality of polar blue cichlids, although providing no significant effect on the growth of the fish.

Abstract

Holiday celebrations carried out by Muslims include Eid al-Fitr, and the second is Eid al-Adha, or what people call the Eid al-Sacrifice holiday. Eid al-Adha has provisions that have been determined according to Islamic law. These provisions include being Muslim, financially capable, resourceful, and mature. People who are said to have abilities are people who are sufficient in terms of assets, both for themselves and their families. Sacrificial meat is a food product that has the potential for danger both biologically, physically, and chemically, which occurs when the sacrificial animal is slaughtered. Therefore, it is necessary to implement cleanliness and sanitation during the process of handling and processing sacrificial meat for the sacrificial animal slaughter committee at the Al-Ikhsan Mosque and the Sanden community in South Kramat, Magelang City.

Abstract

Fermentation of Lactic Acid Bacteria (LAB) Pediococcus pentosaceus can improve the quality of food and its shelf life. Using commercial LAB specific media, de Man Rogosa and Sharpe (MRS) for growth on industrial scale application is not efficient. Tapioca wastewater (TW) still contains some of the nutrients needed for the growth of P. pentosaceus, but needs the enrichment of carbon sources (5% of glucose) and nitrogen sources (ammonium sulfate). This study aimed to use tapioca industrial wastewater with the addition of glucose and ammonium sulfate as an alternative growth media for lactic acid bacteria P. pentosaceus E.1222. The results showed that glucose and nitrogen had no significant effect on the number of bacterial colonies. The highest substrate efficiency was tapioca wastewater (86.81%), MRS broth (53.73%), and TW with 5% of glucose and 1% of ammonium sulfate (43.53%) respectively. Maximum growth rate (μmaks) was found in TW with 5% of glucose and 1% of ammonium sulfate (0,52 hours-1). Increasing the starter volume until 1000 mL in TW with 5% of glucose and 1% of ammonium sulfate showed a slight decrease in the log number of bacteria from 8,836 (50 mL), 8,401 (500 mL), to 8,063 (1000 mL).
