Abstract

Abstrak: Kekayaan kuliner Indonesia tidak lepas dari pengaruh bangsa asing seperti Eropa. Keadaan sosial-budaya masyarakat Indonesia dalam kurun waktu 1901-1942 merupakan gambaran nyata yang dapat menunjukkan adanya proses akulturasi terse-but. Proses hegemoni budaya Eropa dapat dilihat melalui pengenalan berbagai bahan pangan, peralatan memasak, dan juga instansi-instansi pemerintah seperti sekolah ru-mah tangga yang banyak menawarkan standar Eropa. Perkedel (frikedelen), semur (smoor), dan aneka minuman dingin (es) merupakan beberapa contoh makanan yang mendapat sentuhan dari budaya Eropa.Abstract: the rich of Indonesian culinary is related with the influence of foreigners like European society. The socio-cultural condition of Indonesian society in the peri-od of 1901-1942 showed that there was an acculturation. The process of European cultural hegemony could be seen by the introduction of foodstuffs and cooking utensils, and the governmental institutions such as the school of household which was offering European standard. Perkedel, semur, and many kinds of ice are some examples that were affected by the touch of European culture.
