Abstract

The purpose of this study was to produce a fish smoking device for hot smoking and cold smoking methods. This study used 3 types of fish, namely paha fish (Leptobrama sp.), stingray (Dasyatis sp.), and tilapia fish (Oreochromis mossambicus), and the fuel used as fuel for smoking is coconut shell. The data measured included smoking room temperature data, fish weight before and after smoking. The data obtained were analyzed descriptively. The results showed that smoking fish using hot smoking and cold smoking methods with specifications, length 50 cm, width 50 cm, overall height 83 cm. This tool consists of three main components, namely, a fumigation chamber which is combined with a hot smoking biomass combustion chamber, a cold smoking biomass combustion chamber and a connecting pipe. The performance test of the tool was carried out by calculating the weight loss of fish during hot smoking and cold smoking. The smoking time used for hot smoking is 2 hours (temperature 50 – 75℃) and cold smoking 4 hours (30 – 45 ℃). The results showed that the highest percentage of weight loss during hot smoking occurred in stingrays on the second shelf, which was 29.25%, while the highest percentage of weight loss during cold smoking occurred in stingrays on the first shelf, which was 23.79%. The weight loss of fish in both hot and cold smoking is strongly influenced by the smoking time, the distance between the smoking rack and the heat source and the type of fish. Keywords : cold, heat, shrinkage, smoking, weight

Abstract

One of the impacts of the spread of covid 19 for the community is the decline in the economic life of the people affected by covid 19. Efforts to revive the economy of the community is done by providing training to the community to produce processed food products that have economic value. One of the most popular processed food products today is banana stem chips. Banana stem chips are processed from the midrib of banana stems, which so far have not been widely used by the community as food. Merauke is an area with an abundance of banana plant diversity, one of which is in Sermayam Village. The PKK women's group in Sermayam Village is one of the community groups that are both targets and partners in this service activity. Partners involved in this service activity are PKK women in Sermayam Village. This training activity aims to increase knowledge and skills to process processed food products from materials available in the local area. With this activity partner members are given training to process banana stems into banana stem chips so that they become more economically valuable. Partners are also given training to package attractive products so that their processed products can be accepted by the market. Seeing the enthusiasm of partners in this activity, partners are expected to increase their productivity so that they are more empowered and independent.

Abstract

The purpose of this study is to provide a solution about the limitations of capital in the construction of kumbung house to open a business of oyster mushrooms in the region of Merauke in creating a suitable microclimate for the growth of oyster mushrooms. The study was conducted by building a kumbung house and oyster mushroom cultivation activities in it. The variables observed in this study include temperature, humidity and oyster mushroom production. The result of this research is sago leaves can be made solution for the construction of kumbung house with relatively cheap cost with cost Rp. 1.947.000, the microclimate created inside the kumbung house that is the temperature in the range of 23ºC - 29.2ºC and RH in the range of 88% - 99%.

Abstract

ABSTRACT The aim of this research is design a machine for corn sheller which the results canbe used as raw material for animal feed, especially poultry. The results of thedesign the corn shellerusing a power drive motor AC electric one phase 3/4 Hp. The main components of the engine used are frames, hoppers, crushing chambers,filters, output lines, shafts and bearings. Based on the results of the machine worktest, the engine capacity is 13.13 kg / hour with the results of the analysis ofgranules held by mesh 10 is 70.56%, retained by mesh 18 is 13.20% and passmesh sieve is 16.24%. The material used in this study was dry corn grains with amoisture content of 10.5%. The resulting particle grain size is 2 mm, 1 mm and inthe form granules smooth, the granules are already very good for poultry feed rawmaterials. The results of the economic analysis of the machine designed wereobtained that the cost needed to break 1 kg of dry corn grains was Rp. 2361.
