Abstract

Bulu Ulaweng Village is a mountain village that is overgrown with palm trees. There are 20 household heads who work as sugar palm farmers. Where the average community processes 4-5 palm trees for production, so that in a day they will produce as much as 560 L of palm juice. Until now, the remaining sap for making shell sugar and ballo drinks has not been solved. Utilization of the remaining juice into vinegar is a form of counseling by the community service team at the University of Muhammadiyah Bone. The existence of this innovation can be a solution for partners' problems regarding the utilization of the remaining palm sap and has a high selling value. This counseling was attended by 7 people consisting of Women community of PKK Bulu Ulaweng Village. The activities carried out were in the form of an introduction to the purpose of holding training dissemination through community service activities, exposure to tools and materials and the stages of making natural vinegar from ballo. So that the community will be able to implement it independently as the end result of this counseling.

Abstract

Problematika yang merundung masyarakat di Desa Bulu Ulaweng disebabkan oleh minimnya keterampilan dan pengetahuan yang dimiliki, sehingga masyarakat Desa Bulu Ulaweng tidak dapat mengolah keterampilan sumber daya alam yang ada didaerahnya salah satunya adalah pohon aren yang dapat menghasilkan cairan nira. Hasil produksi aren yang banyak diusahakan oleh masyarakat adalah nira yang hanya diolah untuk menghasilkan gula batok dan minuman ballo. Sedangkan minuman ballo sering disalahgunakan oleh beberapa warga masyarakat. Hadirnya program ini akan menyentuh langsung mitra dalam bentuk penyuluhan, pelatihan dan pendampingan. Pentingnya pengabdian ini untuk memberikan pemahaman dan solusi kepada mitra khususnya kepada kelompok Ibu PKK Desa Bulu Ulaweng terkait dengan pengolahan sisa nira aren yang difermentasikan menjadi vinegar alami yang bermutu, bernilai ekonomis serta aman bagi kesehatan konsumen. Pada akhirnya akan mampu memberikan peningkatan pengetahuan dan keterampilan Ibu PKK Desa Bulu Ulaweng.

Abstract

The problem of quantity of peanut shell waste is still the main problem that has an impact on the pile of peanut shell waste in large quantities. As a peanut cultivation center, this is a critical issue in Bulu Ulaweng Village. The community reduces piles of peanut waste by burning or disposing it in the river. This method will undoubtedly cause air and water pollution, impacting environmental ecosystems, especially rivers. So, this community service is planned with the PKK Women's Group in Bulu Ulaweng Village, Patimpeng District, Bone Regency, South Sulawesi Province. The goal is to deal with the problem of waste peanut shells and improve the knowledge and skills of the partners. The method of implementing the activity includes counseling using Tudang Sipulung. The training is carried out offline (product manufacturing, packaging, and labeling) and provides solutions to the problems encountered. The community service activities' results show that partners can process peanut shell waste into organic fertilizer. The resulting product can be a superior product for Bulu Ulaweng Village. It can be an example for neighboring villages and other areas with the same problem of reducing peanut shell waste. Bulu Ulaweng Village cannot only overcome the accumulation of peanut shell waste problem but other villages too. Therefore, this activity aligns with the government's program to create healthy and prosperous villages as a form of sustainable development goals proclaimed by the government through villages.

Abstract

Abstract So far, the use of coconut plants has only revolved around the pulp, husks and shells, while the coconut water (cocos nucifera) produced has not been used at all. In fact, old coconut water can be used as raw material for making soy sauce. The public is not yet aware of the activity of making soy sauce using coconut water due to the lack of knowledge and skills (capacity building) of partners regarding the use of coconut water. Through this service program, the Bulu Ulaweng Village Women's Farmers Group received comprehensive training and guidance in processing coconut water into sweet soy sauce. With in-depth training, partners are able to understand the entire process of producing soy sauce from coconut water, including processing, storing and marketing the product. Apart from that, converting old coconut water which is often thrown away into raw material for soy sauce is an environmentally friendly step while creating added value from natural resources that have previously been wasted. This service program was carried out to overcome partners' problems in processing coconut water into sweet soy sauce while improving the skills of partners, namely the Bulu Ulaweng Village Women's Farmers Group, in carrying out product differentiation. The results obtained in processing coconut water are more efficient and partners are able to make sweet soy sauce as a differentiated product. Abstrak Pemanfaatan tanaman kelapa selama ini hanya berkisar pada daging buah, sabut, dan batoknya saja, sementara air kelapa (cocos nucifera) yang dihasilkan tidak dimanfaatkan sama sekali. Padahal, air kelapa tua dapat dimanfaatkan sebagai bahan baku pembuatan kecap. Penggiatan pembuatan kecap yang memanfaatkan air kelapa belum diketahui oleh masyarakat disebabkan kurangnya pengetahuan dan keterampilan (capacity building) mitra akan pemanfaatan dari air kelapa tersebut. Melalui program pengabdian ini, Kelompok Wanita Tani Desa Bulu Ulaweng mendapatkan pelatihan dan bimbingan yang komprehensif dalam mengolah air kelapa menjadi kecap manis. Dengan pelatihan yang mendalam, mitra mampu memahami seluruh proses produksi kecap dari air kelapa, termasuk pengolahan, penyimpanan, dan pemasaran produk. Selain itu, mengubah air kelapa tua yang sering dibuang menjadi bahan baku kecap adalah langkah yang ramah lingkungan sekaligus menciptakan nilai tambah dari sumber daya alam yang selama ini terbuang begitu saja. Program pengabdian ini dilaksanakan untuk mengatasi permasalahan mitra dalam mengolah air kelapa menjadi kecap manis sekaligus meningkatkan keterampilan mitra yaitu Kelompok Wanita Tani Desa Bulu Ulaweng dalam melakukan diferensiasi produk. Hasil yang diperoleh dalam pengolahan air kelapa yaitu lebih efisien serta mitra mampu melakukan pembuatan kecap manis sebagai produk diferensiasi.
