Abstract

Abstrak - Tujuan penelitian untuk menilai kesesuaian penerapan GMP dan SSOP pada proses produksi tuna loin CO beku tujuan ekspor pada Unit Pengolahan Ikan CV XXX Kupang. Penelitian dilaksanakan pada tahun September – Nopember 2017 di Kota Kupang. Metode yang digunakan adalah kualitatif,kuantitatif, deskriptif komparatif. Data hasil penilaian kesesuaian berdasarkan penerapan Peraturan Menteri Perindustrian Republik Indonesia No. 75/M-IND/PER/7/2010 dan Peraturan Menteri kelautan dan perikanan RI PER.19/MEN/2010 .tentang Pengendalian Sistem Jaminan Mutu dan Keamanan Hasil Perikanan. Penilaian terhadap kesesuaian penerapan GMP dari 117 item, terdapat 87 item yang sesuai dan 30 item tidak sesuai memperoleh tingkat persentasi kesesuaian berkisar antara 0-100%. Tingkat kesesuaian penerapan peralatan produksi, bahan baku, produk akhir, pelabelan dan pemeliharaan 100%, fasilitas sanitasi 78%, bangunan 75%, karyawan 72%, penyimpanan 71%, lokasi dan lingkungan 57%, kemasan 50%, laboratorium 0%.. Penilaian terhadap kesesuaian penerapan SSOP dari 19 item yang sesuai dan 9 item tidak sesuai memperoleh tingkat persentasi kesesuaian berkisar antara 0-100%. Tingkat kesesuaian penerapan perlindungan bahan pangan cemaran (alduteran) 100%, pencegahan kontaminasi silang 80%, kebersihan permukaan yang kontak dengan bahan pangan 75%, pencegahan hama 75%, fasilitas sanitasi 66.67%, keamanan air 60%, pelabelan, penggunaan bahan toksin dan penyimpanan yang tepat 50%, kontrol kesehatan pegawai 0.00%. Kesesuaian penerapan GMP adalah 74 % dan penerapan SSOP adalah 66 % . Kata Kunci : GMP, SSOP, Kesesuaian, Kontaminasi, Sanitasi. Abstract - Objectives from research about application compatibility of Good Manufacturing Pracrices (GMP) and System Sanitation Operational Procedures (SSOP) at prcessing production frozen tuna loin CO for export market, at Fish Processing Unit CV.XXX Kupang. The researching will done at 2017 September until November . Methode using descriptive quantitativ and qualitative with valuation with modification from application compatibility built upon regulation from IndustryMinister Of Indosesian Republic No.75/IND/PER/7/2010 and Minister of Maritime affairs and Fisheries PER.19/MEN/2010 about System Quality Assurance and Food Security ishery Product .Valuation toward compatibility application GMP from 117 item, from those 87 item is appropriate , 30 item not appropriate with fluctuation persentation is 0-100% . Level compatibility application production equipment, raw material, end product , labeling, and maintanance as sequent 100 %, sanitation of fasiliies 78%, building 75%,employee 72%, storaging 71%, location and environment 57%, packaging 50%, laboratory 0%. Evaluation toward compatibility application of SSOP from 28 item, from those 19 item as appropriate and 9 item is not appropriate , with persentetion level 0-100%. Level compatibility application of protection food material contamination 100%, prevention of cross contamination as 80%, hygienic surface contact with food material 75%, prevention pest control 75%, sanitation facilities 66,67%, safety water 60%, labelling, using toxic material and exact storaging 50%, control employee healthy 0%. All of compatibility GMP as 74% and SSOP as 66 % . Keywords : GMP, SSOP, Compatibility, Contamination, Sanitation
