Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh suplementasi enzim xilanase dan fitase terhadap produksi karkas ayam broiler. Materi yang digunakan adalah 60 ekor DOC strain CP 707. Rancangan penelitian adalah acak lengkap dengan 4 perlakuan 3 ulangan. Perlakuan yang diamati adalah R0: Ransum mengandung 30% tepung ubi kayu, R1: Tepung ubi kayu 30% + xilanase, R2: Tepung ubi kayu 30% + fitase, R3: Tepung ubi kayu 30% + xilanase + fitase. Variabel yang diukur adalah bobot karkas, persentase karkas, persentase potongan primal karkas dan lemak abdominal. Penambahan enzim xilanase dapat memperbaiki bobot karkas, persentase karkas dan persentase dada dan tidak berpengaruh pada persentase (paha, sayap, dan lemak abdominal), penambahan enzim fitase dapat memperbaiki bobot karkas, persentase karkas, persentase dada dan paha tetapi tidak berpengaruh terhadap persentase sayap dan lemak abdominal, kombinasi antara xilanase + fitase dapat memperbaiki bobot karkas, persentase karkas, persentase dada dan paha tetapi tidak  pengaruh pada persentase sayap dan lemak abdominal. Disarankan suplementasi enzim xilanase dan fitase perlu dilakukan pada ransum berbasis ubi kayu untuk menaikkan bobot karkas ayam broiler. Kata kunci : ubi kayu, ayam broiler, enzim xilanase dan fitase The objective of the research was to investigate the effect of enzyme xylanase and phytase supplementation on broiler carcass. This research used 60 DOC broiler strain CP 707. The design of the research was Completely Randomized Design  with 4 treatments and 3 replicates. The 4 treatments were: 1) R0 commercial diet as control, 2) R1 = Diet based on 30% cassava meal + xylanase, 3) R2 = Diet based on cassava meal 30% + phytase, 4) Diet based on 30% cassva meal + xylanase + phytaase. Variables measured were : carcass weight, carcass percentage, percentage of primal cuts and abdominal fat percentage. Xylanase supplementation could improve carcass weight, carcass percentage, and breast percentage, but xylanase did not have significant effect on thigh percentage, wing percentace and abdominal fat percentage. Phytase supplementation could improve carcass weight, carcass percentage, breast and thigh percentage but it did not have any significant effect on wing percentage and abdominal fat percentage.  Combination of xylanase and phytase supplementation an be applied on diet based on 30% cassava diet to improve performans of carcass broiler.
