Abstract

The purpose of this research is to: 1). knowing the interaction of sugar and agar concentration on the quality of pumpkin pudding product. 2). Knowing the right concentration in mixing sugar and agar for pumpkin pudding. 3). Determine the effect of sugar concentration on the product quality of pumpkin pudding. 4). Determine which treatment has the best effect on the quality of pumpkin pudding products. The implementation of this research was carried out by the experimental method with two treatments using a completely randomized design, the results of which were analyzed to determine the levels of vitamin C, total sugar and organoleptic tests (color, taste and texture).The results of this study are as follows: 1). Interaction The treatment of sugar and agar concentrations on the pumpkin pudding product produced is very good and is needed to be developed, 2). The right concentration in mixing sugar and agar is the addition of 100 grams of sugar concentration and 30 grams of agar (G2A3), 3). The effect of sugar concentration and agar on the making of pumpkin pudding shows a very significant effect.

Abstract

Penelitian ini bertujuan untuk :1).Mempelajari pengaruh penambahan tempe terhadap kerupuk tempe yang dihasilkan.2). Mengetahui konsentrasi tempe yang tepat dalam pembuatan kerupuk tempe.. Pelaksanaan Penelitian ini dilakukan dengan metode eksperimen. Perlakuan yang diterapkan adalah penambahan tempe dengan konsentrasi yang berbeda, yaitu : 30% (A1), 40% (A2), 50% (A3) dan 60%. Hasil penelitian menunjukkan bahwa kerupuk tempe yang dihasilkan memenuhi syarat mutu yang ditetapkan dalam SII 0272-90. Perlakuan penambahan Konsentrasi tempe berpengaruh sangat nyata terhadap kadar air , kadar protein,rasa dan kerenyahan kerupuk tempe, namun tidak berpengaruh terhadap warna . Kesimpulan dalam penelitian ini adalah : 1)Penambahan tempe berpengaruh terhadap kadar air ,kadar protein,rasa dan kerenyahan kerupuk tempe, tetapi tidak berpengaruh terhadap warna. 2). Kadar air kerupuk tempe yang dihasilkan berkisar anatara 2, 38% – 3,38 % dan kadar protein berkisar 25,54% – 27,89% memenuhi syarat mutu yang ditetapkan dalam SII 0272-90. 3). Berdasarkan hasil penilaian panelis perlakuan penambahan 50 % yang paling disukai panelis yaitu warna 4,7 (sangat suka), rasa 4,58 (sangat suka) dan kerenyahan 4,5 (sangat suka).

Abstract

Efforts to use the right cultivation system are one of the intensification programs. The right cultivation system does not only concern the use of superior varieties, but also the selection of the right planting system. The direct seed planting system and the transplanting system are alternative planting systems introduced to farmers to increase production. These two planting systems have differences in terms of technical aspects and also the use of production factors so that specific studies related to both need to be carried out in order to find the most appropriate, effective and efficient planting system in increasing production and farm income. The purpose of this study was to analyze the differences in income and to conduct a difference test on the income of the tabela and tapin systems in Pomontoro Village, Mataoleo District, Bombana Regency. The results showed that the income of the tabela and tapin systems had significant differences based on the results of the difference test using SPSS. Key-words: income, tabela, tapin
