Abstract

Burger meat is currently in great demand by the community as one of the food sources of protein. But this burger meat can be contaminated by bacteria, one of which is Escherichia coli. The presence of Escherichia coli in water or food is also considered to have a high correlation with the discovery of disease seeds (pathogens) in food. A study was conducted to identify the bacteria Escherichia coli in burger meat sold in fast food restaurants in Makassar. This research was conducted with several bacteria identification test and also biokima test. Sampling technique is random sampling, with 2 samples from different places. From the results of the tests that have been done, in 2 samples of burger meat, all showed positive results of the presence of bacteria, where the results of biochemical tests showed characteristics of Escherichia coli, so it can be concluded that the two samples of burger meat sold in fast food restaurants in Makassar The presence of Escherichia coli bacteria.

Abstract

Moringa oleifera fruit seeds contain bioactive compounds rhamonsyloxyl-benzyl-isothiocyanate, which are able to adopt and neutralize particles of mud and metals contained in water into consumable clean water, and meet established quality standards. Many people don't know that Moringa seeds can be a safer alternative water purifier. The purpose of this study was to determine the effectiveness of Moringa seeds to decrease iron (Fe) levels in dug well water with quantitative methods on UV-Vis spectrophotometers. This type of research is an experimental laboratory that was conducted in August 2017. The population used was all dug well water in Buhung Bundang Village, Bontotiro District, Bulukumba Regency. The sample used was one of the dug well water taken by using purposive sampling technique. The results of the study show that from the samples examined the average value of the percentage of degradation produced is by immersion time from 0-45 minutes as much as 45.66%, from 45-60 minutes as much as 72.12% (an increase of 26.46%) , from 60-75 minutes as much as 87.88% (an increase of 15.76%). However, the most effective time for Fe (II) ion degradation process is 60 minutes with an average degradation yield of 72.12% with an increase in degraded Fe ions of 26.46% from the results of the average immersion for 15 minutes with the addition of 5 Moringa seeds.

Abstract

This study aims to determine the effect of administration of Moringa leaf boiled water to decrease blood glucose levels in people with diabetes mellitus. The type of research used is laboratory observation research, which aims to determine the effect of administration of Moringa leaf decoction to decrease blood glucose levels in patients with Diabetes Mellitus (DM). This research was conducted at Nusa Mappala Gowa Housing in September 2017. The sample in this study was a DM patient. Sampling was done by purposive sampling technique with the criteria of patients with diabetes mellitus aged> 40 years, glucose levels> 200 mg / dl, sex P / L, not in the handling of doctors, not taking herbal and generic drugs. The results showed that in September, it could be concluded that administration of Moringa leaves boiled water could reduce blood glucose levels in patients with diabetes mellitus (DM). From giving Moringa leaves boiled water for 4 days, the decrease in blood glucose levels was seen in the administration of Moringa leaf boiled water on the 4th day of the study. Abstract

This research was motivated by the process along with the grated coconut development times are also becoming more sophisticated. The emergence of various kinds of machines with a variety of different brands and types help people to do the grater which only requires a relatively short time. Given the lack of information about the technology pemarutan coconut hygiene and sanitation equipment used and the washing process coconut less attention in Makassar Hartaco market that can cause various diseases, one of which is diarrhea. Of 5 samples tested research using selective medium (Endo Agar). Medium differentiation (KIA), Medium biochemical (IMVIC), and medium confectionery, result/ data as much as 5 samples are negative which means there are Escherichia coli in the rest of the grated coconut. Abstract

Soil Transmitted Helminths are intestinal nematodes which in their life cycle require soil for the ripening process. Worm problems associated with this worm infection are still commonly found. The rate of contamination of Soil Transmitted Helminths in vegetables is also still quite high. The process of processing and washing raw vegetables is not ready to eat, making it easier to transmit worm eggs to humans. Cucumber is one suitable substrate because it is often used as fresh vegetables. The purpose of this study is to determine the presence or absence of Soil Transmitted Helminths eggs in cucumber vegetables at food stalls in Jalan Abdul Kadir, Makassar City and the benefits of this research as information for the public about eggs Soil Transmitted Helminths that have an impact on the health problems of the human body. The type of research conducted is descriptive laboratory observation, which is to carry out laboratory tests to identify the Soil Transmitted Helminths eggs in cucumber vegetables at a food stall in Jalan Abdul Kadir, Makassar City. From the analysis of 10 samples of Cucumber vegetables, it shows that in the sample code (A), (B), (C), (D), (E), (F), (G), (H), (I), and (J), negative. So it can be concluded that there is no contamination of Soil Transmitted Helminths eggs in 10 samples of cucumber vegetables that have been studied. Suggestions to the public to remain careful in choosing or processing cucumbers which will be used as vegetables.

Abstract

Albumin is the highest plasma protein in the amount of around 60% and has various functions that are very important for health, namely the formation of new cell tissue, accelerating the recovery of damaged body tissue and maintaining fluid balance in blood vessels with fluid in the interstitial cavity within the limits normal. At an advanced age, albumin levels do not increase if there is an increase in the patient's history, and also heredity. This type of research is a descriptive laboratory observation, which is to determine the description of blood albumin levels in the elderly. The purpose of this study was to determine the description of blood albumin levels in old age. Based on statistical analysis and the average value known to the results of examination of blood albumin levels in old age using a 5010 photometer an average value of 4.15 g / dl. This value indicates that the average patient over 60 years has normal albumin levels. It can be concluded that blood albumin levels in the elderly as many as 20 samples obtained results in 100% normal albumin levels. The suggestions from this study provide knowledge to the public about albumin examination, and further research is carried out with a larger sample quantity to get a more accurate examination of albumin levels.

Abstract

Jamu is a term for traditional medicine from the Java region. Jamu is also known as medical medicine, herbal medicine, herbiology, and herblore. The benefits of herbal medicine itself, depending on the type of herbs used for treatment. Herbal medicine is made from natural ingredients, in the form of parts of plants such as rhizomes (roots), leaves and bark, fruit. There is also use of materials from animal bodies, such as goat bile or crocodile tangkur. Herbal medicine usually tastes bitter so it is necessary to add honey as a sweetener so that the taste is more tolerable to the drinker. Methanil Yellow is a synthetic dye used in the textile industry. Misuse of Methanil Yellow includes noodles, crackers, and other snacks that have a striking yellow color. Methanil Yellow dye is very dangerous if inhaled, in contact with the skin, in contact with the eyes, and swallowed. Methanil Yellow is a synthetic dye that is prohibited for food products because it contains heavy metal residues which are very harmful to health. The results of the Methanil Yellow research on the traditional herbal medicine showed that the herbs that had been tested did not contain Methanil Yellow or were negative. By looking at the results of research that has been carried out on the 5 samples studied, it can be seen that the five samples are NEGATIVE.

Abstract

ABSTRAKAntioksidan adalah suatu sistem pertahanan dalam tubuh yang berguna untuk menangkal kerusakan sel tubuh yang disebabkan oleh radikal bebas. Berbagai kajian mengenai tanaman Graptophyllum pictum (L.) Griff dalam hal antioksidan, maka dalam penelitian ini akan dikembangkan pengujiannya sebagai antioksidan pada bagian batang dari tanaman Graptophyllum pictum (L.) Griff ini. Penelitian ini bertujuan untuk mengetahui dan menentukan ada tidaknya aktivitas antioksidan pada ekstrak batang tanaman daun Ungu (Graptophylum pictum (L.) Griff) Kabupaten Takalar dengan menggunakan pereaksi DPPH secara Spektrofotometri Visibel. Ekstrak batang tanaman daun Ungu dibuat dengan seri konsentrasi 50, 75, 100, 125 dan 150 ppm sedangkan vitamin C sebagai pembanding dibuat dengan konsentrasi 2, 4, 6, 8, dan 10 ppm. Tiap seri konsentrasi ditambahkan DPPH 40 ppm dan diinkubasi selama 30 menit, lalu diukur absorbansinya menggunakan pektrofotometri Visibel pada panjang gelombang 516.30 nm. Nilai IC50 yang diperoleh dari ekstrak batang tanaman daun Ungu sebesar 198,186 ppm sedangkan nilai IC50 vitamin C sebesar 2,819 ppm. Hasil penelitian menunjukkan bahwa ekstrak batang tanaman ungu (Graptophyllum pictum (L.) Griff) kabupaten Takalar memiliki aktivitas antioksidan lemah yang berada pada kisaran IC50 antara 151-200 ppm. Kata kunci : Antioksidan; Graptophylum pictum (L.) Griff; DPPH;  Spektrofotometri Visibel; IC50.ABSTRACTAntioxidants are a defense system in the body that is useful to ward off damage to body cells caused by free radicals. Various studies regarding the Graptophyllum pictum (L.) Griff plant in terms of antioxidants, so in this study will be developed as an antioxidant test on the stem of this Graptophyllum pictum (L.) Griff plant. This study aims to determine and determine the presence or absence of antioxidant activity in the stem extract of the purple leaf plant (Graptophylum pictum (L.) Griff) Takalar Regency using DPPH reagent by Visible Spectrophotometry. Purple leaf plant stem extracts were made with concentrations of 50, 75, 100, 125 and 150 ppm while vitamin C as a comparison was made with concentrations of 2, 4, 6, 8, and 10 ppm. Each concentration series was added with 40 ppm DPPH and incubated for 30 minutes, then the absorbance was measured using Visible Spectrophotometry at a wavelength of 516.30 nm. The IC50 value obtained from the stem extract of the Purple leaf plant was 198.186 ppm while the IC50 value for vitamin C was 2.819 ppm. The results showed that the stem extract of the purple plant (Graptophyllum pictum (L.) Griff) Takalar Regency had weak antioxidant activity in the IC50 range of 151-200 ppm.Keywords: Antioxidants; Graptophylum pictum (L.) Griff; DPPH;Visible Spectrophotometry; IC50.

Abstract

Mikroba (fungi atau bakteri) endofit yang terdapat di dalam tanaman tidak menimbulkan kerusakan yang tampak, dan mampu memproduksi metabolit sekunder sesuai dengan tanaman inangnya.Fungi endofit secara in vitro memproduksi metabolit aktif yang dapat berfungsi sebagai antibakteri, herbisida dan juga pestisida alami. Salah satu tanaman yang telah diteliti sebelumnya terdapat fungi endofit di dalamnya adalah tanaman langsat (Lansium domesticum) (Fety, 2015). Batang tanaman langsat mengandung senyawa flavonoid, saponin, tannin, dan triterpenoid yang diduga sebagai senyawa antibakteri. Tujuan penelitian yaitu untuk mengisolasi fungi endofit kulit batang langsat penghasil antibakteri terhadap Staphylococcus aureus dan Escherichia coli. Penelitian ini menggunakan metode isolasi dan difusi agar (Kirby Bauer). Hasil yang diperoleh terdapat 2 isolat fungi endofit; isolat I yaitu Rhizopus sp. dan isolat II yaitu Aspergillus sp. Uji potensi antibakteri isolat I dan isolat II terhadap Staphylococcus aureus dan Escherichia coli masing-masing memiliki diameter zona hambat rata-rata 15,67 mm; 11,67 mm, dan 17,76 mm; 21,93 mm. Berdasarkan hasil penelitian, maka kedua isolat fungi endofit pada kulit batang langsat berpotensi sebagai antibakteri terhadap Staphylococcus aureus dan Escherichia coli.

Abstract

Masyarakat Indonesia sejak awal pandemi Corona Virus Disease 2019 (Covid-19), Januari 2020, tidak memiliki prediksi akan mengalami kondisi ketidakstabilan sosial, ekonomi juga politik. Pada tanggal 30 April 2020, pemerintah Indonesia Peraturan Menteri Kesehatan Republik Indonesia Nomor 9 Tahun 2020 menerapkan Pembatasan Sosial Berskala Besar (PSBB) adalah kegiatan-kegiatan tertentu penduduk di suatu wilayah yang sedemikian rupa untuk mencegah kemungkinan penyebaran Covid -I9. Kebijakan pemerintah Indonesia yang mewajibkan masyarakat vaksin, menerima, yakni patuh, ragu-ragu dan menolak.Penelitian deskriptif kualitatif ini, menggunakan sumber-sumber data yang berasal dari jurnal ilmiah, literatur digital, website berita, situs web resmi, media sosial Facebook, wawancara pada sumber yang dipilih berdasarkan profesi dan usia tertentu, untuk memperoleh kesimpulan sikap masyarakat pada kewajiban melaksanakan vaksin di Kota Makassar. Hasil yang diperoleh masyarakat memutuskan untuk menjalani vaksin Covid-19, karena kewajiban, kesadaran akan informasi yang akurat dan tekanan, karena wajib vaksin sebagai prasarat untuk pengurusan perizinan di kantor pemerintah, bahkan untuk pembelian tiket penerbangan.
