Abstract

The high need for animal protein in Indonesia has not been met optimally. Tempeh, as a source of vegetable protein, has great potential but is less popular with some groups because of its monotonous taste. Temitel, a mixture of tempeh and eggs, is presented as an alternative processed protein source which is expected to increase protein consumption in the community. This research aims to analyze the organoleptics of Temitel as a basis for developing tempeh-based functional food products. This study used a completely randomized design (CRD) with three treatments (tempeh:egg proportions) and three replications. Organoleptic parameters observed include color, aroma, texture and taste. Data were analyzed using the ANOVA test and Duncan's advanced test. The results showed that the proportion of tempe:egg had a significant effect on the organoleptic parameters of Temitel. Temitel with a higher proportion of tempeh has a darker color, stronger tempeh aroma and taste, and a denser texture. Temitel with a higher proportion of eggs has a brighter color, stronger egg aroma and taste, and a softer texture. Temitel is an alternative processed protein source that has great potential for development. The tempeh:egg proportion can be adjusted to produce Temitel with organoleptic characteristics that suit consumer preferences. Temitel is expected to increase protein consumption in society, especially among those who don't like tempeh.

Abstract

An overview of environmental and socio-cultural sanitation is very interesting to explore. Environmental sanitation and the social culture of coastal communities in fishing villages are inseparable aspects of their daily lives. This study aimed to understand the description of environmental sanitation and socio-culture of the coastal community of fishing village, Medan Belawan District, Indonesia, in order to create sustainable and equitable solutions for them. This study is a descriptive observational study. A total of 100 informants were included in this study. Data analysis was carried out univariately to present environmental sanitation and socio-cultural data. Waste processing in the environment is still very bad, where garbage is generally just piled up, and no waste management efforts are carried out. The community also does not have healthy latrines, which shows that sanitation conditions are still not a good report. The majority report also does not have refrigerators as food storage, and the community, in general, has not implemented a clean and healthy lifestyle. The source of clean water and processed drinking water treatment also still show things that are not good. Water sources and processing that are not optimal make the majority of people experience skin problems. The overview of environmental sanitation and the socio-culture of coastal communities in fishing villages shows how important it is to increase efforts to keep the environment clean and maintain cultural values in their daily lives.

Abstract

Masa perkuliahan adalah periode transisi penting yang ditandai oleh perubahan fisik, mental, dan sosial yang signifikan. Mahasiswa sering kali mengabaikan pola makan sehat, termasuk konsumsi buah yang cukup, yang berdampak negatif pada kesehatan mereka. Konsumsi buah yang cukup penting untuk meningkatkan sistem kekebalan tubuh, menjaga kesehatan pencernaan, menurunkan risiko penyakit kronis, meningkatkan energi, menjaga kesehatan kulit dan rambut, serta meningkatkan fungsi kognitif dan mood. Slogan “Isi Piringku” yang diluncurkan oleh Kementerian Kesehatan Republik Indonesia pada tahun 2014 memberikan panduan proporsi ideal makanan dalam satu piring makan, termasuk buah. Namun, berdasarkan data Rapat Persiapan Riset Kesehatan Nasional (RISKESNAS) tahun 2018, hanya 13,3% penduduk Indonesia yang mengonsumsi buah dan sayur sesuai anjuran, dan di kalangan mahasiswa, persentasenya lebih rendah. Penelitian ini menggunakan desain cross-sectional dengan sampel 52 mahasiswa FKM UINSU tahun 2024 untuk mengukur pengetahuan mereka tentang slogan “Isi Piringku” dalam aspek konsumsi buah. Data dikumpulkan melalui kuesioner online dan dianalisis menggunakan statistik deskriptif. Hasil menunjukkan bahwa tingkat pengetahuan mahasiswa tentang “Isi Piringku” bervariasi, dengan mayoritas memiliki pengetahuan kurang (65,7%) dan tidak ada yang memiliki pengetahuan sangat bagus. Faktor-faktor seperti kurangnya edukasi, akses informasi, dan kebiasaan makan mempengaruhi tingkat pengetahuan ini. Penelitian ini menyoroti pentingnya sosialisasi dan edukasi yang lebih efektif untuk meningkatkan pemahaman mahasiswa tentang konsumsi buah sesuai panduan “Isi Piringku”.
