Keberadaan Escherichia coli pada Makanan di Kantin Sekolah Dasar

Abstract

Abstrak Latar belakang: Kasus keracunan pangan bisa ditandai dengan diare. Pada tahun 2017, jajanan 12(24,53%) dan lembaga pendidikan 15(28,30%) menjadi penyebab dan lokasi tertinggi kedua keracunan. Kasus diare di Kota Semarang tahun 2014-2017 mengalami fluktuasi. Tahun 2014 sebanyak 38.134 kasus (IR 25/1000 penduduk) hingga tahun 2017 sebanyak 38.766 kasus (IR 26/1000 penduduk). Studi pendahuluan menyatakan minuman adalah jenis jajanan yang paling banyak tercemar E.coli. Tujuan penelitian: Mengetahui faktor yang berhubungan dengan keberadaan E.coli pada minuman di kantin. Metode: Jenis penelitian analitik, rancangan cross sectional, besar sampel 86 sampel. Teknik pengambilan sampel sekolah menggunakan stratified random sampling dan sampel minuman menggunakan purposive sampling. Teknik pengambilan data dengan wawancara, observasi, dan uji laboratorium. Data dianalisis dengan uji chi-square dengan software SPSS. Hasil: Ada hubungan antara kondisi fasilitas sanitasi (p=0,034) dan higiene penjamah (p=0,040) dengan keberadaan E.coli pada minuman. Tidak ada hubungan antara jenis air (p=0,543) dan penerapan kebijakan sekolah (p=0,962) dengan keberadaan E.coli pada minuman. Simpulan: Faktor yang berhubungan dengan keberadaan E.coli pada minuman adalah kondisi fasilitas sanitasi dan higiene penjamah.   Abstract Background: Food poisoning can be characterized by diarrhea. In 2017, snacks 12(24.53%) and educational institutions 15(28.30%) were the second cause and location of food poisoning. Case of diarrhea in Semarang City in 2014-2017 was fluctuative. In 2014 there were 38,134 cases (IR 25/1000) untill 2017 there were 38,766 cases (IR 26/1000). A preliminary study stated, the drink was the most polluted of E.coli. Objective: To find the factors related to the presence of E.coli in drinks in canteen. Method: Analytic research type, cross-sectional design with 86 samples, sampling technique used stratified random sampling and purposive sampling. Data collection by interviewing, observing, and laboratory testing. Data analyzed with chi-square test using SPSS. Results: There are relationship between the condition of sanitation facilities (p=0.034) and handler hygiene (p=0.040), but there are no relationship between the type of water (p=0.543) and the implementation of school policies (p=0.962) with the presence of E. coli in drinks. Conclusion: Factors related to the presence of E.coli in drinks are condition of sanitation facility and handler hygiene.
