Abstract

Starch is an inert polysaccharide and often used as a filler, disintegrant, and binder in the manufacture of tablet preparations. One of the starch-producing plants is cocoyam (Xanthosoma sagittifolium). Cocoyam tends to only be used as a side dish so further research is needed on the starch produced by cocoyam. The physical properties of the starch produced are affected by the drying temperature of the starch. In this study, starch drying was carried out using a drying cabinet. The purpose of this study was to determine the effect of drying temperature on the physical characteristics of cocoyam starch. Evaluation tests were carried out to determine the physical characteristics of starch, namely starch identification tests, organoleptic tests, microscopic tests, moisture content tests, and pH tests. The results showed that the drying temperature had an effect on the moisture content and pH, but had no effect on the identification of amylum, organoleptic, and microscopic amylum.
